十元有四枝粟米,又買了鲮魚蓉,豆卜及黑毛豬肉碎,本想釀豆卜,最後改煮這一味,鄰舍幾位公公婆婆每人也有四塊嚐嚐,味美。👍👍😋😋

材料 ......
1.......鯪魚肉半斤
2.......半肥瘦黑毛豬肉免肉半斤
3.......粟米一條(別貪心放太多)
4.......日本櫻花蝦皮三湯匙左右
5.......雞蛋一隻
6.......麻油一茶匙
7.......生粉一湯匙半
8.......雞粉半茶匙
9.......糖半茶匙
10.....胡椒粉半茶匙
11.....美極鲜露一湯匙
12.....葱三棵,切粒
13.....油適量
14.....温水兩三湯匙
15.....芝麻適量
16.....芫荽少許
17.....泰式酸辣雞醬,日式胡麻醬或千島汁
步驟一.......將粟米洗乾淨,然後隔水蒸熟,
再用小刀將粟米削出碎粒
步驟二.......用器皿將鲮魚肉,免治豬肉,粟米粒
櫻花蝦,葱粒等先行盛起,再将雞蛋
打入,然後逐一加入六至十二項調
味料,再攪拌均匀,用手略撻實,然
後用保鲜封好,放入雪櫃略雪一兩小
時左右,取出時再全部拌匀一次備用
步驟三......用匙羹舀適量在手搓堆成小扁圓球先
放碟備用
烹調法......
1.......易潔鑊燒至微溫放下適量油淌匀,火勿太猛
2.......然後將已按成小圓球的鱼肉粟米球,
3.......逐粒由鑊邊開始均匀排入煎鍋,
4.......先定火略煎好第一面,切勿急於亂反,
5.......可手提搖晃煎鍋,使之均勻受熱,可輕壓下
6.......見己煎到呈焦金時,才小心反轉令一面,
7.......再以同樣手法將另一面鱼餅煎妥,
8.......兩面煎有八成熟後,可反覆將兩面略再煎烙
9.......使之兩面均勻受熱至熟,再灒兩湯匙温水
10.....上蓋煮半分鐘後熄火,餘温焗兩三分鐘後,
11.....逐一排放上碟, 灑上芝麻放芫荽裝飾完成
12.....可配生菜,泰式雞醬,胡麻醬或千島汁同食
備註.....
打了雞蛋去拌匀調味肉和鱼也較嫩香,拌匀後能起浆力。
分量比例可以因應個人需要調整
可用蝦膠,亦可加入蝦子,大地鱼粉

馬蹄:清熱生津,開胃消食
蓮藕:清熱解渴、養胃滋陰
馬蹄蓮藕煎肉餅
材料:免治豬肉300克、馬蹄5粒、蓮藕1小段、芫茜1小棵
調味料:鹽1/2茶匙、糖1/2茶匙、生抽1湯匙、生粉1茶匙
做法:
1. 所有材料洗淨,馬蹄去皮用刀背拍鬆及切碎;蓮藕去皮切碎;芫茜切碎備用。
2. 免治豬肉加入調味料攪拌,加入馬蹄、蓮藕及芫茜沿同一個方向攪拌至起膠,取適當份量搓成球狀,然後輕輕壓扁成小肉餅狀。
3. 燒熱油鍋,將小肉餅放入,用中小火煎至兩面金黃色及熟透即成。

Pan-fried Pork patty with Water chestnut and Lotus root
Ingredients: 300g minced pork, 5 water chestnut, 1 section of lotus root, 1 small bunch of cilantro
Seasoning: 1/2 teaspoon salt, 1/2 teaspoon sugar, 1 tablespoon light soy sauce, 1 teaspoon cornstarch
Preparations:
1. Rinse all ingredients. Peel the water chestnut, pat with the back of a knife and chop into small pieces. Peel the lotus root and chop into small pieces. Chop the coriander for later use.
2. Mix in seasoning with minced pork. Add water chestnut, lotus root and cilantro and stir in the same direction until sticky. Take an appropriate amount and knead it into a ball, then gently squash it into small patties.
3. Heat up the pan with oil, put the small patties in, fry over medium-low heat until both sides are golden brown and cooked. Serve.

鱔片肉丸粥
材料:
白鱔1段
白米半嘜
薑1舊(一半切絲,一半切碎)
免治豬肉300克
處理:
1. 白米,清水沖洗乾淨。
2. 大火在煲內煲滾1升水。
3. 水滾後,加入白米。
4. 再次滾起,轉慢火,大約煲15分鐘。
5. 白鱔,用粗鹽1茶匙乸2分鐘,搣去脂肪及內臟,清水沖洗乾淨,擎乾水,用廚紙索乾。
6. 小心切去魚骨,然後切粗條。
7. 豬肉調味:
a. 薑碎少許
b. 胡椒粉少許
c. 雞粉半茶匙
d. 生粉1茶匙
e. 糖半茶匙
f. 生抽半茶匙
g. 油1茶匙
撈勻。
8. 鱔,用少許鹽醃一醃。
烹調:
1. 粥已煲了15分鐘,轉大火。
2. 加入滾水調校至適合濃度。
3. 放豬肉丸落粥。
4. 如果覺得粥稠,可加入滾水。
5. 加入鱔。
6. 粥已滾起,轉慢火,冚蓋,煲2分鐘,加入薑絲,再滾起。
7. 完成,可享用。
Eel slices and meatball porridge
Ingredients:
Eel 1 pc
Plain rice half measure cup
Ginger 1 No. (Half is to be shredded and half is to be chpped)
Minced pork 300g
Preparation:
1. Plain rice, rinse with tap water.
2. Heat up water 1L at high flame in pot.
3. Put plain rice in pot after boils up.
4. Turn to low flame after it boils up again. Boil for 15 minutes.
5. Eel, season with cooking salt 1 tsp for 2 minutes, remove its fat and intestines. Rinse thoroughly and hang dry. Dry with kitchen towel.
6. Cut off its bones carefully. Then thickly slice.
7. Season the.pork:
a. Chopped ginger little
b. Pepper little
c. Chicken powder 0.5 tsp
d. Tapioca starch 1 tsp
e. Sugar 0.5 tsp
f. Light soya sauce 0.5 tsp
g. Oil 1 tsp
Mix well.
8. Eel, season with little salt.
Steps:
1. Porridge has been cooked for 15 minutes, turn to high flame.
2. Add boiled~up water into porridge to adjust to a suitable thickness.
3. Put meatball into porridge.
4. Add water into porridge if you feel it is too thick.
5. Put eel.
6. Porridge has been boiled up, turn to low flame. Cover up the pot and cook for 2 minutes. Put shredded ginger, wait for boiling up again.
7. Complete. Serve.

油鴨髀煲仔飯:
材料:
米1.5膠嘜
臘鴨髀1隻
免治豬肉120克
處理:
1. 煲1鑊滾水,放油鴨髀煲3分鐘,去除污漬及油漬。
2. 豬肉調味:
a. 胡椒粉少許
b. 生粉1茶匙
c. 生抽半茶匙
d. 雞汁1茶匙
e. 油1茶匙
撈勻,醃10分鐘。
3. 放米落煲仔,洗乾淨。
4. 加水落煲仔,大約高於米面1/4吋。
5. 油鴨脾已出水,清水沖洗乾淨。
6. 油鴨脾,切件。
烹調:
1. 放油鴨髀及免治豬肉落煲仔,中火煮滾。
2. 用毛巾封蓋煲邊,以保持煲內熱力。
3. 滾起後,熄火,焗10分鐘。
4. 預備煲仔飯豉油:
a. 油少許
b. 生抽1湯匙
c. 糖半茶匙
滾起,放在碟仔。
6. 飯已焗了10分鐘,開慢火,煲仔4邊,每邊燒1分鐘。
7. 全程時間大約15分鐘完成。可享用。
Cured duck's leg claypot rice:
Ingredients:
Plain rice 1.5 measure cup
Cured duck's leg 1 No.
Minced pork meat 120g
Preparation:
1. Boil up a wok of water, put cured duck's leg. Boil for 3 minutes to remove dirts on duck.
2. Season pork meat:
a. Pepper little
b. Tapioca starch 1 tsp
c. Light soya sauce 1/2 tsp
d. Chicken sauce 1 tsp
e. Oil 1 tsp
Mix well. Season for 10 minutes.
3. Put plain rice into pot, rinse thoroughly.
4. Add water into pot, it is about higher than the volume of plain rice for
1/4 inch.
5. Cured duck's leg has been soaked well in boiled water, rinse with tap water.
6. Cured duck's leg, cut into pieces.
Steps:
1. Put cured duck's leg and minced pork into pot. Heat up at medium flame.
2. Cover up the gap on the pot by a towel to keep the heat inside the pot.
3. Turn off fire after the pot has been boiled up. Leave it for 10 minutes.
4. Prepare the sauce for claypot rice:
a. Oil little
b. Light soya sauce 1 tbsp
c. Sugar 1/2 tsp
Boils well. Put on serving plate.
5. Rice has heated in pot for 10 minutes. Turn to low flame. Claypot rice, turn around the pot 4 times with 1 minute for each time.
6. It takes about 15 minutes to complete the whole process. Serve.

甜豉油
生抽 6tsp Soy Sauce
老抽 1tsp Dark Soy Sauce
砂糖 2tsp Sugar
水 2tsp Water
1.魷魚乾預先浸軟去骨切粒
2.馬蹄洗淨去皮切粒
3.蔥洗淨切成蔥花
4.免治豬肉加入豉油,紹興酒,胡椒粉,鹽,砂糖及麻油拌勻
5.分次加入水拌勻
6.加入粟粉拌勻
7.加入魷魚粒,馬蹄粒及蔥花拌勻
8.碟鋪上保鮮紙,豬肉搓圓壓扁分成9塊
9.肉餅放進氣炸鍋,以200℃ 10-12分鐘氣炸即成
10.砂糖,水,豉油及老抽拌勻,甜豉油完成
