適當地添加滋陰潤燥的食材如沙參、玉竹、麥冬、枸杞子等。
黃耳百合螺頭烏雞湯
功效:健脾潤肺,有助舒緩因為乾燥而出現的不適症狀。
材料:黃耳2塊、新鮮百合1個、蓮子40克、乾淮山20克、乾螺頭5塊、烏雞1隻、蜜棗2枚
做法:
1. 所有材料洗淨,烏雞氽水備用;百合剝開一片片,黃耳及乾螺頭浸泡至軟身備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Yellow fungus soup with lily bulb and black chicken
Effects: Strengthens the spleen and nourishes the lungs. Relieves symptoms caused by dryness.
Ingredients: 2 yellow fungus, 1 fresh lily bulb, 40g lotus seed, 20g dried Chinese yam, 5 dried couches, 1 black chicken, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Blanche black chicken and set aside. Peel lily bulb. Soak yellow fungus and dried couches until soft.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hour. Add salt to taste.

滋陰潤燥湯水小貼士:
適當地添加滋陰潤燥食材如雪耳、沙參、玉竹、百合、麥冬、乾螺頭等。
淮山沙參海玉竹青邊鮑湯
功效:滋陰補虛,補肝明目,紓緩因長期晚睡而引致的乾燥症狀。
材料:鮮淮山1根、沙參15克、海玉竹20克、急凍青邊鮑1隻、乾瑤柱6粒、枸杞子15克、生薑2片、紅腰豆30克、紅豆30克、腰果40克
做法:
1. 腰果白鍋炒香備用,其他材料洗淨,急凍青邊鮑解凍後刷洗乾淨,去腸頭;乾瑤柱浸水1小時;鮮淮山去皮切塊。
2. 鍋內加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。

Preparation:
1. Stir fry cashews without oil in wok until fragrant. Rinse all other ingredients. Defrost abalone and clean the abalone with a brush, cut and remove the tips of abalone. Soak dried scallops for 1 hour. Peel and cut fresh Chinese yam.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

【少油南乳炸雞翼】

👅材料:
雞翼 10隻
南乳 ¼ 磚
糖 2茶匙
紹興酒 少許
蒜(切片) 2瓣
生粉 適量
👅做法:
1️⃣大碗內加入南乳、糖、紹興酒、蒜片,放入雞翼拌勻,醃約半小時,備用
2️⃣氣炸鍋以200°C預熱5分鐘

野鴿 1隻
淮山 15克
陳皮 1片
紅棗 3粒

👅做法:
1️⃣野鴿、螺頭洗淨,汆水備用
2️⃣玉竹洗淨切片,陳皮浸泡後刮瓤,紅棗去核,藥材洗淨,備用

👅汁料:
糖 1茶匙
生粉 1湯匙
蠔油 2湯匙
生抽 2湯匙
麻油 2茶匙
水 5-6湯匙
👅做法:
1️⃣苦瓜洗淨切段,去除瓜瓤,備用
2️⃣冬菇浸軟後切成小粒,備用
3️⃣雞柳及蝦仁剁成茸,放入大碗中,加入蛋白,適量鹽及胡椒粉拌勻
4️⃣再加入適量生粉,以同一方向拌勻至起膠
5️⃣加入冬菇粒,拌勻
6️⃣苦瓜內環抺上生粉,釀入5️⃣
7️⃣中火煎至兩邊金黃色後,加入蔥白及紅椒絲
8️⃣將所有汁料拌勻,加入7️⃣中,並灒上紹興酒
9️⃣蓋上鑊蓋焗至醬汁稍收杰,最後加入蔥段兜勻即成
