雪梨無花果湯抗乾燥
✈️ 香港人習慣喝湯養生,移民後怎樣煲湯?人在異鄉煲湯材料可能不易買,其實只要留意食材屬性,尋常食材亦能煲碗靚湯,有助強身防病!💪🏻
如果住在比較乾燥的地區,特別容易出現皮膚乾燥、喉嚨乾癢、眼乾唇燥、痰涎帶血絲、流鼻血等症狀,心情也會煩躁不安,因為空氣由鼻子吸入後首先到達肺部,所以想紓緩乾燥症狀宜潤燥養肺,適量進食具潤肺生津、養陰潤燥功效的食材,例如雪梨、雪耳、花旗參、百合、芝麻、蜂蜜、枇杷、無花果等。食材簡單易買的蘋果雪梨無花果湯具有滋陰潤肺作用,無花果選擇曬乾或新鮮都皆可以,同樣有潤肺功效。
無花果 — 性平,有潤肺健脾開胃、潤腸通便、清熱解毒、催乳功效,滋陰潤燥作用很適合秋天食用,對老年、孕婦、小兒便秘有明顯療效。
蘋果雪梨無花果湯
功效:滋陰潤肺,紓緩天氣乾燥引起的皮膚乾、喉嚨乾、眼乾等症狀。
材料:蘋果1個、雪梨2個、粟米1根、乾百合15克、新鮮無花果3枚、花旗參15克
做法:
1. 所有材料洗淨,蘋果、雪梨去皮去芯切大塊,粟米去衣去鬚切段;無花果切半備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

✈️ Hong Kong citizens are used to drinking soup to maintain our health, but how do we make soup when we have immigrated to another country? It might not be easy to get our hands on the ingredients, but as long as we pay attention to the nature of the ingredients, we will still be able to make healthy and tasty soups! 💪🏻
Those who stay in dryer areas might develop skin dryness, dry and itchy throat, and dry eyes and lips, have blood-streaked sputum, and develop a bloody nose. At the same time, these individuals might also experience frustration.
When we breathe, the air enters the lungs first. In order to relieve symptoms related to dryness, we should moisten the lungs by consuming ingredients such as snow pear, snow fungus, American ginseng, lily, sesame seeds, honey, loquat, and fig.
We can use simple ingredients such as apple, snow pear, and fig to make soup that can nourish the yin and moisten the lungs. As for fig, either dried or fresh fruit is fine, as both have lung-moistening properties.
Fig - mild in nature. It has the effect of moistening the lungs and strengthening the spleen, stimulating appetite, loosening the bowels to relieve constipation, clearing heat and detoxifying. Fig can help to promote breast milk production. Its effect on nourishing yin and relieving dryness are very suitable to consume during autumn. It has an obvious effect on constipation of the elderly, pregnant women and children.
Apple and snow pear soup with fig
Effects: Nourishes yin and lungs, relieves dry skin, dry throat, dry eyes and other symptoms caused by dry weather.
Ingredients: 1 apple, 2 snow pears, 1 corn, 15g dried lily bulb, 3 fresh fig, 15g American ginseng
Preparation:
1. Rinse all ingredients thoroughly. Peel and seed the apple and snow pear and cut into large chunks. Peel corn and cut into pieces. Cut the fig into half.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

1.枸杞紅棗蛋湯 補氣養血抗衰老

堅果杏仁 vs 南北杏
植物奶選擇眾多,杏仁奶是熱門選擇之一,如想自製杏仁奶,購買杏仁時要認清是哪一種杏仁,我們常吃到的杏仁有三種:南杏、北杏及堅果杏仁,製作杏仁奶最常用為啡色皮的堅果杏仁 (almond),又名巴旦杏,是扁桃或巴旦杏的種子,顆粒較大,屬性平和,有潤肺及潤腸功效,多作為堅果零食或食材之用。
而中式甜品的杏仁茶、杏仁豆腐、杏仁霜,則以南杏 (sweet almond) 及北杏 (bitter almond) 製成,南杏及北杏取自杏 (apricot) 果樹的種子,所以又叫 apricot kernel。南杏性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用;而北杏主要為入藥用途,有袪痰止咳、平喘及潤腸的功效,治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。北杏帶有小毒,必須經過處理及烹煮才能食用。如煲湯時使用南北杏,比例至少為一比一。
堅果杏仁 — 又名巴旦杏,是扁桃或巴旦杏的種子,比南北杏較大得多。屬性平和,有潤肺及潤腸的功效,多作為堅果零食或食材之用。
南杏 — 產於南方,又稱甜杏仁,杏仁茶多用南杏。外觀上較北杏大。性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用。感冒未清者、容易反覆腹瀉者都不適合飲用。
北杏 — 盛產於北方,又稱苦杏仁,主要為入藥用途。味苦,有少毒。有袪痰止咳、平喘及潤腸的功效;治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。因帶有少許毒性,切忌服用生或未經處理的北杏。

Almond vs sweet/bitter almond
There are many different types of plant based milk, and almond milk is one of them. If we wish to make our own almond milk, make sure we understand the different types of almonds.
There are three common types of almonds: sweet almond, bitter almond, and almond. Almond, which has a coffee-colored skin, is commonly used in making almond milk. This kind of almond, also known as badam in Persian, is the seed of Amygdalus communis. It is larger and mild in nature. It can also moisten the lungs and the intestines. People would use it in cooking or consume it as a snack.
On the other hand, sweet almond and bitter almond are the main ingredients used to make Chinese almond tea, almond tofu, and almond powder. These two almonds came from the apricot tree, hence they are also called apricot kernels. Sweet almonds are mild in nature, can moisten the lungs and intestines. Hence, it is suitable for individuals with weak lungs qi to consume.
Bitter almond is used as Chinese Medicine, as it can clear phlegm, relieve cough and asthma, and moisten the intestines. Hence, individuals would consume them to relieve cough, asthma, and constipation. Bitter almonds are slightly poisonous, hence, they must be processed and cooked properly beforehand. When making soup with both sweet and bitter almonds, make sure the two ingredients have an equal ratio.
Almonds - also known as baadaam, and they are much larger than sweet and bitter almonds. They are mild in nature, and can moisten the lungs and bowels. Typically almonds are eaten as snacks or used as a cooking ingredient.
Sweet almonds - produced in the south and usually used in almond tea. They look larger than bitter almonds. They are mild in nature and can moisten the lungs and bowels, and relieve constipation. They are especially suitable for those with weak lung qi. They are not suitable for those recovering from a cold or flu, or those prone to diarrhea.
Bitter almonds - produced in the north and mainly used medicinally. They taste bitter and naturally contain small amounts of toxins. They can relieve phlegm, cough and wheezing as well as moisten the bowels. They are effective to treat external coughs and help to relieve constipation as well. Due to the toxins, do not eat them raw or unprocessed.

韭菜花炒蛋,蠔油炒韭菜花
材料:
韭菜花2札
雞蛋2隻
紅椒少量(可以不用)
處理:
1. 韭菜花,從尾段切去1吋半不要,切3吋一段,清水洗乾淨,擎乾水。
2. 雞蛋,打在碗內。
3. 紅椒,洗淨,切絲。
烹調:
1. 大火在鑊中煲滾1鑊水。
2. 加入油半湯匙。
3. 放韭菜花,滾起,擎乾水。
4. 韭菜花炒蛋:
a. 大火在鑊中燒熱油1湯匙。
b. 打勻雞蛋,倒入鑊中,煎成蛋餅,用鑊鏟切成小塊,推向鑊邊,放碗內。
c. 放一半韭菜落鑊,加入鹽1/4茶匙及糖1/4茶匙,炒勻。
d. 雞蛋及紅椒回鑊,炒勻。
e. 完成,上碟,可享用。
5. 蠔油炒韭菜花:
a. 大火在鑊中燒熱油半茶匙。
b. 放韭菜花落鑊,轉慢火。
c. 加入蠔油半湯匙,炒勻。
d. 完成,上碟,可享用。
Scrambled eggs with leek flower, srir frying leek flower with oyster sauce
Ingredients:
Leek flower 2 bunches
Eggs 2 Nos.
Red bell pepper little (optional)
Preparation:
1. Leek flower, cut 1.5" off from its end. Cut 3" in lengths. Rinse thoroughly. Drain.
2. Eggs, break in a bowl.
3. Bell pepper, rinse and shred.
Steps:
1. Heat up a wok of water at high flame.
2. Add in oil 0.5 tbsp.
3. Put leek flower. Boils up. Drain.
4. Scrambled eggs with leek flower:
a. Heat up oil 1 tbsp at high flame in wok.
b. Beat eggs well. Pour syrup in wok. Fry into pancake. Cut it into small pieces with spatula. Push to the edge of wok. Put in a bowl.
c. Put half of leeks into wok. Add in salt 0.25 tsp and sugar 0.25 tsp, fry well.
d. Put eggs and bell pepper in wok. Fry well.
e. Complete. Put on plate. Serve.
5. Stir frying leek flower with oyster sauce:
a. Heat up oil 0.5 tsp at high flame in wok.
b. Put leeks into wok. Turn to low flame.
c. Add in oyster sauce 0.5 tbsp, fry well.
d. Complete. Put on plate. Serve.

材料:
白豆角12兩
茄子2條
素食蠔油
處理:
1. 豆角,切兩端,切3吋1段,清水沖洗乾淨,擎乾水。
2. 茄子,清水洗淨。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放豆角爆香。
3. 加入清水100毫升,冚蓋,焗1分鐘。
4. 預備醬汁:
a. 生粉半茶匙
b. 糖半茶匙
c. 素食蠔油1湯匙
d. 水100毫升
攪勻。
5. 茄子,切去頂部,切細條。
6. 加入茄子在鑊內。
7. 加入醬汁,炒勻。
8. 冚蓋,煮2分鐘。
9. 完成,上碟,可享用。

Vegetarian oyster sauce
Pteparation:
1. Long bean, cut both ends, cut in 3" per length. Rinse thoroughly. Drain.
2. Eggplant, rinse with tap water.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Fry long bean well.
3. Add water 100ml. Cover up the wok and cook for a minute.
4. Prepare sauce:
a. Tapioca starch 0.5 tsp
b. Sugar 0.5 tsp
c. Vegetarian oyster sauce 1 tbsp
d. Water 100ml
Mix well.
5. Eggplant, cut its root, get it shredded.
6. Put eggplant in wok.
7. Put the sauce, fry well.
8. Cover up the wok. Cook for 2 minutes.
9. Complete. Put on plate. Serve.

秋分易影響肺部咳唔停 醫師推介潤肺糖水紓緩乾燥不適兼通便
