<香滑奶茶>
英國人很喜歡喝茶也很常加牛奶到茶內
我本來較喜歡喝原味的茶
例如:鐵觀音茶、烏龍茶、綠茶、菊花茶、伯爵紅茶等等
不加牛奶不加糖
就喜歡那些茶葉獨有的香味
來到英國後開始試多一點其他的茶
首先是常見English Breakfast(英式早餐茶)
然後也有較喜歡的一款是在 M&S買的綠茶
還有另一款印度茶Assam Tea(屬於黑茶)也很不錯
喝著喝著慢慢也覺得加牛奶原來也不錯
因為香濃的茶加了牛奶增加了香滑的口感
也令本來熱烘烘的茶涼了一點
變成可以即時入口的溫度
不過茶和奶的比例每個人的口味也不一樣
但我覺得茶要泡得濃一點才不會給牛奶沖淡了口感
而且如果用茶包來泡
那些茶葉和茶包都會吸收了一點杯內的水
所以開始泡茶時水要預多一點
(我因為每天最多只喝一杯,所以都只用杯懶用茶壺)
但是如果想喝的是港式的奶茶
則要把牛奶換做淡奶(evapovated milk)
淡奶在各超市也可以買到
而茶同樣是要用濃茶較適合
我們用了Yorkshire Original Tea來泡茶
再加1-1.5茶匙的淡奶拌勻就完成了
我不愛甜
所以都不用加糖
拿起剛泡好的奶茶來聞一下
果然有一陣茶餐廳奶茶的味道
對於不太講究的我們來說已經很滿足了~
而最難處理的反倒是那罐淡奶
即使是細罐的淡奶也有一百多克
有說開了後要把它放在冰箱及只可以存放3天
要在3天內喝掉它可是一點也不容易
今天泡奶茶時正想開那淡奶時
忽然想起我上一次存放在冰箱的淡奶
那次我用了玻璃瓶來存放
想著之後再處理然後就把它忘記了
於是把它拿了出來
觀察完也沒有異樣
抱著勇於嘗試(不想浪費)的精神
我們就用了這淡奶來沖奶茶
味道一樣呢~且喝完後我們也沒有肚痛
還算不賴~哈~
(大家不要學習~)
暫時我覺得最容易消耗淡奶的方法就是把它用來做蛋撻~
不過還未做到令我滿意的蛋撻皮
找天有心情我要再試試看

材料:
芒果(細)2個
草莓2粒
乳酪80毫升
鮮奶180毫升
處理:
1. 芒果,1開2,用不鏽鋼羹起出果肉。
2. 草莓,洗淨,去椗,1開2。
程序:
1. 草莓及芒果肉,放入攪拌機內。
2. 加入乳酪1湯匙(約80毫升)。
3. 加入鮮奶180毫升。
4. 打勻。
5. 完成,可享用。
香蕉草莓乳酪奶昔
材料:
香蕉1隻
草莓2粒
乳酪80毫升
鮮奶180毫升
處理:
1. 草莓,洗淨,去椗,1開2。
2. 香蕉,去皮,切片。
程序:
1. 草莓及香蕉,放入攪拌機內。
2. 加入乳酪1湯匙(約80克毫升)。
3. 加入鮮奶180毫升。
4. 打勻。
5. 完成,可享用。
Fresh fruit yogurt
Mango and strawberry yogurt
Ingredients:
Mangoes (small) 2 Nos.
Strawberries 2 Nos.
Yogurt 80ml
Fresh milk 180ml
Preparation:
1. Mangoes, divide each mango into 2 shares, get the flesh with a stainless steel spoon.
2. Strawberries, get it rinsed. Remove anchors. Divide each strawberry into 2 shares.
Steps:
1. Flesh of strawberries and mangoes, put into blender.
2. Add in yogurt 1 tbsp (about 80ml).
3. Add in fresh milk 180ml.
4. Blend well.
5. Complete. Serve.
Banana and strawberry yogurt
Ingredients:
Banana 1 No.
Strawberries 2 Nos.
Yogurt 80ml
Fresh milk 180ml
Preparation:
1. Strawberries, get them rinsed and removed anchors. Divide each strawberry into 2 shares.
2. Banana, get it peeled and sliced.
Steps:
1. Flesh of strawberries and banana, put into blender.
2. Add in yogurt 1 tbsp (about 80ml).
3. Add in fresh milk 180ml.
4. Blend well.
5. Complete. Serve.

When I was a little child, my dad always took us to a fast food division of Chinese Restaurant to have the Deep Fried Chicken Leg. It was heavenly good that my saliva still running out when I am talking about this. The marination was far more complicated, time consuming and costly that nowadays no restaurant will do. however, the result was extremely good that it becomes priceless. It is exactly love at the FIRST BITE. That is the motivation I am so determined to rewrite and show it to you. It is so pity such such Cooking wisdom, knowledge and effort from our old respectable predecessors will be disappeared very soon.
I do believe I have the responsibility to inherit such knowledge to our youngsters and all the people over the world who love and enjoy food. Indeed, the recipe is not only about food, it also includes love, childhood and passion. Enjoy!
Ingredients:
3 chicken legs
1.5tbsp soy sauce
1.5tsp salt
2tbsp maggie's seasoning soysauce
2tsp five spice powder
1.5tsp white pepper powder
2 eggs
90g flour
90g cornflour

It is very interesting that we(Hong Kong people) always named a dish with a foreign country name. The Russian Beef dish indeed has no linkage with Russian at all. It is 100% old Hong Kong Style cuisine from 1950s.
It was made from beef slice, different bell pepper slice, cucumber pickles slices and rich brown sauce made from soy sauce , tomato paste and beef broth . I always love this dish when I was a little girl. This is one of my favourite including the baked pork rice and minced beef rice. I ordered them in turns when I visited the old Hong Kong style Western Cafe during my childhood. Nowadays, now many Hong Kong tea rooms still have this dish in their menu. Therefore, I would like to recreate this recipe to share with all of you. It is worth to preserve such recipes and also our food culture of Hong Kong.
Russian Beef with Rice (old Hong Kong Style)
1 onion
3 clove garlic
1 bell pepper
1/2 green bell pepper
2 pickled cucumber
1 sirloin steak
3-4tbsp flour
Seasoning:
1tbsp soy sauce
1/2tbsp sugar
1/2tbsp potato starch
1tbsp oil
2-3tbsp water
俄國牛柳絲飯 材料:
洋蔥 1個
蒜 3粒
紅甜椒 1個
青甜椒 ½個
酸青瓜 2條
西冷扒 1塊
麵粉 3-4湯匙
調味:
生抽 1湯匙
糖 ½湯匙
生粉 ½湯匙
油 1湯匙
水 2-3湯匙
牛肉湯粒 2粒
水 400毫升
