生菜蝦鬆 minced shrimp with lettuce
材料:
蝦仁250公克
荸薺5顆
蒜頭3顆
薑1小段
蔥2根
紅辣椒1根
美生菜1顆
油條1條
Ingredients:
250 grams peeled shrimp
5 pieces water chestnut
3 cloves of garlic
1 small ginger root
2 green onion roots
1 red hot chili peppers
1 head of iceberg lettuce
1 deep fried breadstick
醃料:
香油1小匙
米酒1大匙
蛋白1顆
太白粉1大匙
鹽少許
白胡椒粉少許
Marinade:
1 teaspoon sesame oil
1 tablespoon rice wine
1 egg white
1 tablespoon cornstarch
A pinch of salt
Small amount of White pepper
調味料:
辣豆瓣1小匙
白胡椒粉少許
香油1大匙
水3大匙
Seasoning:
1 teaspoon of spicy bean sauce
Small amount of white pepper
1 tablespoon sesame oil
3 tablespoons of water
作法:
1.將蝦仁洗淨切小丁,加入醃料醃漬約10分鐘備用。
2.將油條回烤至酥脆,切碎備用。
3.荸薺去皮;蒜頭、辣椒、薑、蔥都切成碎狀備用。
4.用剪刀將美生菜剪成像碗的容器狀,放入冰水中冰鎮一下,再濾乾水分備用。
5.取一炒鍋,倒入1大匙沙拉油,加入醃漬好的蝦仁以中火炒香,再加入作法3的所有材料爆香,續加入所有調味料翻炒均勻,最後略勾薄欠即可。
6.起鍋前加入切好的油條碎,再盛入生菜葉上面享用。
Preparation Instructions:
1. Wash the shrimp and chop into little pieces. Add to the marinade and let marinate for about 10 minutes.
2. Chop up the deep fried breadstick into little pieces and set aside.
3. Peel the water chestnuts; garlic, chili, ginger, and onions are all cut into small pieces and set aside.
4. Cut the iceberg lettuce leaves with scissors to form bowls of lettuce and set into ice water to stay cool. Then drain the water and set aside.
5. Heat a frying pan, add 1 tablespoon salad oil, and add the marinated shrimp over medium heat and stir-fry, then add all 3 ingredients until it becomes fragrant. Continue to add in the seasonings and stir in well. Finally, pick up the pan and lightly toss it.
6. Turn off the heat before adding in the chopped fried breadstick pieces, then pour into the lettuce bowls and enjoy.
