滑閱照片,整理三級警戒前的一些用餐紀錄,不過一個月內的回顧,卻感覺久遠。時間的腳程沒有改變,只是心態上,越過了一個分水嶺。
我們要挺過疫情,再次回到餐廳吃飯。
#Ephernite(用餐日期:2021.04.16)
Vanessa主廚說,她用媽媽照顧家人的心情來做菜,難怪,每次去用餐,都感受到她呵護備至。那份呵護,不只是對客人,也是對食材,總是感謝她細心拿捏客人口味、盡心展現食材魅力。
這天,一道白蘆筍太好了,嫩嫩肥肥來自法國Landes產區、32+等級(3.2公分粗),和季末最尾的義大利阿爾巴冬季黑松露搭在一起,原有歐洲季節交替之美,卻是「破布子沙巴雍」光彩照人。沒錯,破布子!初嚐這沙巴雍醬,只覺特別鮮鹹,銳利清明,為白蘆筍賦予個性,和底下的巴薩米可醋也合。詢問那鮮鹹何來?沒想到,是破布子,Ephernite自己醃的,去年八月他們獲得一批新鮮貨澀,大費周章漬起來後,今年春天可以使用了。素材是台灣的,味道是法國的,不刻意強調「台灣味」,卻是台灣才做得出來的法國料理。
芳香萬壽菊到了Vanessa手中,百香果般的雅香更加脫俗,不論是老母雞湯那一抹清涼,或者燉牛舌旁的嫩綠醬汁,青草芬芳適得其所。鳳梨馬鞭草雪酪、東加豆馬斯卡彭冰糕、百香果凍、金棗,風味組合得既巧又妙。
#俺達的肉屋(用餐日期:2021.04.30)
終於終於,訪到了台中米其林一星「俺達的肉屋」老闆鍾佳憲(Sam)。他天生是當老闆的料,很知道自己要做什麼,對於肉類的知識也透徹專業。
這天,一道「塊燒牛舌」非常精彩。切面粉嫩如櫻,外殼焦脆薄透,牙齒輕觸,爽朗的震盪徘徊舌上,這厚厚的牛舌,是脆的,內裡彈、外殼輕,愈嚼愈香,濃腴奶味隨著油脂釋放流瀉。我好像吃了一塊奶油。
好吃的塊燒牛舌,必須從部位講究起:選用舌根油脂較多的部分。燒烤方法也很仔細:先上烤爐讓肉升溫,再包進鋁箔紙中,烤到理想的熟度,接著拿掉鋁箔紙,放回火上做最後加熱,炙出均勻的脆殼。
三種瘦肉:羽下、芯芯、栗子肉,各有風姿。

#Yuan元餐廳(用餐日期:2021.05.01)
同一趟台中小旅,我探訪了好久不見的蕭淳元(阿元)主廚。上一次用餐已是二年前,這一次,我感覺整份菜單更順暢和諧,概念也更清楚,尤其,新任副主廚謝頤霖有中菜、台菜根底,把元餐廳想表現的台灣味道做得更到位。
例如佛跳牆,是貨真價實的佛跳牆,用雞骨、豬骨、老母雞熬上湯,再用上湯煨花膠、鮑魚、魚皮、蹄筋等材料,再把湯料與上湯一起放入小盅裡蒸。蒸之前還有一關鍵:要製作「蔥燒」,將蒜頭與蔥炸到金黃色,是知名的辦桌師傅阿燦師做湯的秘訣。在元餐廳,阿元與頤霖把蔥燒打成泥,加入上湯裡,試出最喜歡的比例,再把調好味的上湯加入小盅裡蒸。
用伊比利豬做的「排骨酥」主菜,也是用真正的排骨酥醃料醃過,其中最重要的是「台南獅牌」的五香粉。「傳統的味道,必須用傳統的調味料才做得出來。」阿元與頤霖如此強調。另一道主菜「上湯龍蝦」,龍蝦烹得好,口感鮮彈,調和老母雞上湯、龍蝦上湯、茴香酒與花雕的醬汁,被粉絲吸飽飽,很有親切感。

在酒吧吃烤鵝,太狂。剛獲得亞洲50最佳酒吧第19名的ROOM by Le Kief,就這麼狂,最新的客座活動,請到大三元來站台,整隻烤鵝磅礴出場,滿室沸騰。
ROOM與大三元聯手,真是太好,酒吧實驗嶄新的調酒搭餐,老牌粵菜餐廳嘗試破格的呈現,一起進步,一起貼近這個時代。也赫然發現,中菜能否往前走,主事者的觀念與態度非常重要,大三元的二代老闆Charles站在一個很棒的位置上。
鮮黃牡丹紋的蓋碗,盛著雞湯與紅蟳肉,啜一口紹興、鮮奶油、威士忌的澄清調酒,奶香呼應鮮醇;未經改編的烤鵝,佐以莓果、粉紅胡椒伏特加、紅酒的辛香果甜,很有主菜的氛圍;炸鱈魚香絲,裹上避風塘蒜酥,太香太妙,滴進醬油的肖楠木琴酒與炭化番茄,好鮮好順;烏龍茶泡燒酎再蒸餾,調入芝麻糖漿,清涼氣泡中浮現炭焙烏龍的香氛,和班蘭葉千層糕的椰子調性太搭。

蘭餐廳想不到,新菜單剛推出,疫情就升溫。
這是一份好菜單,幾道菜充滿Nobu主廚的個人特色,簡潔、直接而味道飽滿。一道花枝,厚切而帶刀紋,掛住醬汁又不硬,原來是經過橄欖油油封,口感軟韌,搭配酸豆水與奶油炒過的甜豆仁、蠶豆、皇帝豆,充滿春末夏初風情;綠竹筍也好,以米湯煮熟,去殼後放入乾香菇高湯煨煮,大塊厚實,盡嚐筍子的肉感與淡甜,醬汁僅僅是越光米與昆布高湯的米湯,稠粘中躍現清新嗆香,是山葵,也是畫龍點睛。小鱗犬牙南極魚,肉細脂潤,抗衡得了層層疊疊的酸鮮:聖女番茄澄清湯、梅干與紅薑,昆布高湯煨過的冬瓜,輕盈又豐美。

#小鉢洋食_冬季菜單
很幸運的,在 #小鉢洋食 12月預約一開放時,「驚險」快手訂到位子,終於趕得及在它12月底消失前一嚐滋味。用驚險來形容實不為過,一來它是為期半年的期間限定開張,二來利用老市場裡僅三坪大小的空間,每場只能接待8位客人。

在這間隱身在鹽埕第一公有市場裡,我會說是「台洋風情混搭」的夜間食堂中,從夏季、秋季走到冬季,主廚Marc依據風土和節氣不斷地進行菜色創作,雖然前兩季沒吃過,但冬季菜單吃完,給人有種就像吃到經過美好熟成後的牛肉,口感豐郁且適切。

拿台灣當令的在地風土食材入西餐這件事(和中菜台菜西吃完全是不同概念),其實很早就開始陸續有廚師在做,百家百味裡,門派與路數各異,但對我來說,不管怎麼變化,最重要的就是,最後呈現的味道,要平衡。哪些味道要突顯,哪些可視作隱味,用以串連,都需要巧思,這部份Marc做了很棒的調度。而這季的菜單,七道菜,全都沒有菜名,他只列上每道使用的主要食材,雖然上菜時依然遵循主菜壓後的邏輯,但七道吃下來,每樣料理的強弱度相當,這是另一個面向的平衡,這細節也讓人欣賞。以下是我針對每樣菜,做的簡單記錄和分享:

#第一道菜:芋頭/天使紅蝦/腐皮
用了生吃等級天使紅蝦,蝦肉鮮甜緊實,預先擠出的蝦膏當成蘸料點綴濃郁大甲芋泥,用紅棗和脆黃瓜丁提味,腐皮先烘到香脆,再噴上蝦殼煉出的蝦油,把菜肉疊到尺寸適口的腐皮入口,滿嘴都是香與鮮。

#第二道菜:永隆牧場三品豬/花椒/蕗蕎
從南部黑白切中的粉腸擷取靈感,運用傳統法式豬頭凍做法來進行變形,一口咬下仍吃得到肉絲,比起台式小吃豬皮肉凍,更清爽,也較不膩口,用花椒、剝皮辣椒和雞肉高湯做出的美乃滋來調味是神來一筆,堆疊上拌了金桔油醋的甜脆水田芥,再噴上羅勒油,清爽和濃郁在味蕾穿插,而蕗蕎的脆和獨特辛氣,則像定錨,把所有味道給穩穩拉住。

#第三道菜:山壹虱目魚/龍鬚草/粉蔥
Marc說,他對高雄的印象就是高雄人愛吃煎虱目魚肚,他用了類似日式一夜干的方法來轉化虱目魚風味再香煎,但縮短煎的時間,因虱目魚不耐久煎,會像脆餅,反而壞了味道。魚湯是用煎到酥脆的魚骨去熬,鮮味裡帶有幽微的薑汁氣味,搭配清脆的龍鬚海草,和用粉蔥做的蔥油,蔥油遇熱感覺把魚肉的鮮更帶了出來,油裡還有台東原生土肉桂籽的氣味交疊,湯頭喝起來有種檸檬百里香的清新感。

#第四道菜:馥桂雞胗、雞心/茄萣烏魚子
馥桂雞來自南投武界,低密度的飼養環境,養出的雞肉甜美無腥味,法餐出身的Marc,這道卻帶有強烈炭烤元素,席間我問,跟他曾久居澳洲是否有關聯性,我也曾待在澳洲兩年,知道澳洲人熱愛BBQ文化。他笑著說,的確是,尤其是他當時曾在澳洲版Masterchef的希臘裔主廚George Calombaris門下工作,開始大量接觸直火料理,炭烤方式呈現,會讓食材的本質被更加突顯,並且帶上獨特香氣。多汁肥美的黑美人菇巴上濃郁的燻炭香氣後好好吃,而烤雞胗和雞心在淋上用茄萣烏魚子做的烏魚子醬後變得超級唰嘴,搭配的蔬菜是超嫩的芥藍苗,和帶點苦甜味的玉米苗。

#第五道菜:薏仁/栗子/帕瑪森乾酪
這道是用義式燉飯做法,但拿薏仁取代香米創作的純素料理。薏仁展現出彈口咬勁,沒想到用在燉飯上這麼搭,蔬菜高湯取代雞高湯,但刻意減少了cream和butter的量,用當令栗子搗泥去增加濃郁口感要的厚度,燉飯中常會出現的檸檬汁,Marc改用用酸奶取代,圓潤的氣味非常適合收尾,會呈現綠色是因為用了山茼蒿。

#第六道菜:櫻桃鴨腿/金棗/紅蘿蔔
採用法式傳統油封鴨腿做法,將宜蘭櫻桃鴨用鴨油燉到骨肉分離,疊上了珍珠洋蔥和過年意象強烈的蜜金棗,下方的紅蘿蔔泥中兌進了花雕酒,Marc連結的是兒時吃辦桌,桌上那道油潤封肉裡台式香料酒的香氣,只是用花雕取代了紹興,也讓這道菜瞬間沾染了更多台式風情。最上面是山蘿蔔葉。

#第七道菜:高雄139號米/黑糖/核桃
英式米布丁常是熱吃,Marc改做成冷吃的甜點,焦糖也改成黑糖。139號米口感Q黏,冷吃更好吃,很適合拿來做成米點心,他做的米布丁,質地滑軟,裡頭的葡萄乾,是用威士忌酒兌糖,需要酒煮一個晚上才能入味,再加上核桃,最後灑上的是奶酥,好喜歡,不會過份甜膩,卻也不會和黑糖衝突,以這收尾,好幸福啊!

The godfather of Taiwan racing, Jun San Chen, remarked: “The racing profession is, at times, a somewhat closed-off sport, but after meeting STARFiSH and their professional publicity team, they have exposed racing to a greater audience.
