過年知道大家都好想我較蒸糕,今次教大家椰汁年糕,我依個版本同傳統有小小唔同, 想知點整就記得睇了,記得交功課呀😁

椰汁年糕
材料:
📌糯米粉225克
📌沾米粉37克
📌澄麵30克
📌片糖200克大约2片多小小(要弄碎些比较容易煮得溶)
📌水210克
📌椰奶120毫升
📌oil 30克
📌錫纸盆掃上油
📌鍚紙一張
📌紅棗一粒
做法:
1. 先用小火在210g 水中煮溶所有
片糖後, 待涼
2. 將三種麵粉全部一起過篩, 並可
混合在一起備用
3. 將(1)的糖水過篩, 如未涼攪幾下
来降温後才加入椰奶
4. 將(2)的麵粉中間整個洞, 將糖水
分多次慢慢加入及每次攪匀了再
加入另一次
5. 加油入粉漿内可用手動打蛋器或
攪拌機攪至粉漿平滑直至没有粉
粒
6. 讓攪匀的粉漿静止20分鐘(可以
幫助麵粉吸入水份)
7. 將粉漿再次撹匀,然後再過篩倒
入蒸盆, 蓋上錫紙
8. 用蒸爐100度蒸1至1.5小時視乎
粉漿厚度. 如用明火蒸, 大火滾
起後, 用中大火蒸. 注意⚠️不要
太猛火否則容易會有洞在年糕面
蒸完加一粒紅棗在中間, 完成!

Simplified Coconut Chinese New Year Cake (“Nian Gao”)
Flour Ingredients:
Glutinous rice flour - 225g
Wheat starch (“Teng Mein”) - 30g (or replace with cornflour)
Rice flour - 37g
These flours combination will not give you a sticky and hard texture. It will be soft, bouncy, and chewy the next day instead of hard and sticky.
If you wish the make the traditional version, just omit the wheat starch (“Teng Mein”) and rice flour from the recipe and the rest remain the same.
Sweetener ingredient:
Chinese dark brown sugar - 200g or about 2 slabs (break into small pieces so they melt faster)
Liquid ingredients:
Water - 210g
Coconut milk - 120g (for more intense coconut flavor you can use coconut cream)
Oil - 30g or about 2 ½ tbsp
Garnish ingredient:
Chinese red date
Other utensils:
Sifter
Spatula
Whisk
Stand mixer – optional
Balloon whisk - optional
Oiled steam proof pan for steaming
Toothpick
Foil paper or plate to cover the pan
Methods:
1. In a large mixing bowl, you MUST SIFT the glutinous flour, rice flour, wheat starch (“Teng Mein”) into the bowl and mix well. Make a hole in the center. Set aside. This is your flour mixture.
2. In a cooking pot, add in Chinese dark brown sugar pieces, water, and turn on LOW heat to melt the sugar. DO NOT use high heat because it will evaporate the water.
3. Once it starts to boil, TURN OFF the heat and keep stirring to speed up the melting process.
4. Pour the melted sugar through a sifter into a large bowl to make sure there are no hard lumps of sugar left and MUST let it stand to cool to room temperature before mixing with other ingredients. Keep stirring to speed up the cooling process.
5. Once it is almost cool, add in the coconut milk. Mix well. This is your liquid mixture.
6. Add ONLY about ¼ of a cup of the liquid mixture into the well of the flour mixture prepared in Step 1.
7. Mix well with a spatula until all the liquid is absorbed into the flour. Continue with the rest of the liquid mixture by adding about ¼ cup at a time into the flour mixture and mix well before adding the next ¼ cup of liquid mixture. Be patience. **DO NOT add all the liquid into the flour at once.**
8. Once all liquid mixture has been mixed in with the flour, give a final good mix with a whisk and making sure there is no dry flour left.
9. Add the oil and continue mixing with a whisk until the oil is well incorporated into the batter or you can use an electric stand mixer, attached with a balloon whisk, and mix until you get a smooth batter about 1 minute or so on low speed.
10. Leave the batter in the mixing bowl and let it sit and rest for about 20 minutes. This step is VERY IMPORTANT to let the flour absorbs all the liquid and moisture for even flavor and a better tasting cake. This step also replaces the traditional way of laborious kneading of the batter.
11. Preheat the steam oven to 100C (212F).
12. After 20 minutes, mix the batter again with a spatula because flour will fall to the bottom of the bowl again after a waiting period.
13. You MUST SIFT the batter again into a bowl. This will make sure you get a smooth cake after.
14. Pour the batter into an oiled steam proof pan. Flatten any bubbles on the top surface with a toothpick. Cover the pan with a foil paper or plate to prevent condensation drippings.
15. Steam for 1 hour to 1 ½ hour depending on the thickness of your batter in the pan. Prefer to over steam instead of under steam.
DO NOT steam on high heat to prevent bubbles formed on the top surface of your cake when done.
16. The cake is done when you stick a bamboo stick into the center of the cake and comes out clean.
17. Garnish with a red date by placing it in the center of the cake.

Whenever I go to Tainan and tell my friends they are jealous, In a good way. If Taiwan is a cake, then Tainan is definitely the cherry on top. And sorry, I won’t mention all the beautiful places to visit here. Also - I will skip the fabulous historical part. I will go straight to the point - FOOD!
Recently, I was invited by the Bureau of Economic Development, Tainan City Government and NCKU Research and Development Foundation to a 3-day trip, and visited 20 shops. You can always count on the kindness and hospitality of the Tainan people. But don't worry, If I was invited, my camera was invited too, and that means I did my best to show off those places, and now I will pay back those nice people, and I am going to invite you on the trip too; are you ready?
PART 01 - When in Tainan, eat as the Tainanese do! - A guide to flavorful, popular (and English speaking) places serving Tainan food!
Taiwanese food is just extraordinary. Everybody loves it. No doubt about it. But now, you need to know that Tainan is the oldest city in Taiwan and because of that - the variety of foods is richer here than anywhere else. So I will introduce a few places around Tainan where you can get local food. So take your chopsticks in the hand and let’s commence our mouth-watering journey around Tainan!
子龍點鴨 (Zi long dian ya)
As a person born and raised in Europe, I am not really used to eating ducks the way they are usually served in Taiwan. I don't really like messing with bones. But here was a great surprise! They prepare meals removing bones. They sell duck with dried noodles or rice, and also have plenty of side dishes, too. The most special one is duck feet with cucumber, which is really good. Another thing is - the restaurant is located in a typical Tainan style neighbourhood near the old street, so after the tasty dishes you can stroll around there for a while.
磨磨茶 (Mo mo cha)
It’s a chic tea house waiting for you in one of the narrow streets downtown in Tainan (walking distance from the train station). The owner showed and let me make my own matcha from dry tea leaves. Usually tea shops are supplied by whole suppliers (importing tea in bulk). However, this is not the case here - the owner’s family has run a tea plantation for 3 generations; you can taste and say - the tea flows through his veins! They serve a whole variety of delicious teas from Taiwan, for instance: high mountain green tea, oolong tea, tea with fruit juice, milk tea, and more.
The place has stunning interiors that are simple, but you can feel a Taiwanese coziness inside. Momocha is a great place to sit and relax, read a book. Just enjoy your gourmet teas and let time stop for a while.
Apart from the teas and drink you can also find here food, such as Gua Bao. If you speak a bit of Chinese you will know that Han Bao (漢堡) is a word for hamburger. Basically, it's a burger but instead of bread they use a steamed bun. If you are in Tainan it's a must try. :)
禾記嫩骨飯 (Hé jì nèn gú fàn)
This is one very special Chinese restaurant. This place is particularly famous in Tainan because it’s already become a chain. Actually, the dishes are very simple - such as rice and meat, but…. the devil is in the details, and in this case it’s the special way they prepare their meats. Of course, that's the chef's secret, but they're delicious. The flag dish is braised pork with soft bones. And indeed the bones are so soft that you can easily eat them! Apart from that you can find other dishes, such as Braised Pork Noodles.
三船熱炒100 (三船の鳗丼 Sānchuán de mán jǐng)
100 stir-fried Taiwanese traditional food. You can see a lot of places with number "100" on the street in Taiwan and especially at night there are crowds feasting there. The number 100 in the name is not an accident here - it’s the price of most of the dishes on the menu - around 100$. Apart from Taiwanese delicacies - such a pig heart, intestines and so on, you can also order typical Japanese meals - such as freshly made sashimi, sushi. It’s worth mentioning that the owner is an eel farmer, so if you love this kind of fish, you will find great quality unagi here!

【西米布甸】
西米 Sago 1/2 Cup
牛奶 Milk 250 ml
砂糖 Sugar 75 g
牛油 Butter 20 g
蛋黃 Egg Yolks 3 pcs
粟粉 Corn Starch 30 g
雲喱拿 Vanilla 1 pc
花生醬 Peanut Butter 5-7 tbsp
【菠蘿包皮】
牛油 Butter 50 g
砂糖 Sugar 50 g
蛋黃 Egg Yolks 1 pc
臭粉 Ammonia 1/4 tsp
泡打粉 Baking Powder 1/4 tsp
低筋麵粉 Cake Flour 100 g
做法 ??????

1. 首先滾水煮西米,中大火煮20至30分鐘至完全透明。
2. 在一個鍋內,先將牛奶,一半的砂糖和牛油一起煮滾。
3. 同時在另一個碗中加入糖和蛋黃,將它們拌勻至淡黃色,再加入粟粉攪拌。
4.當奶燒滾後,便加入蛋漿,一邊攪拌一邊加入。再將西米倒進蛋漿,倒入另一個鍋開火慢慢整成稠身。
5. 先薄薄鋪一層在一個可以放進焗爐的盤子,再放上花生醬,用匙羹壓平,再加入漿遮蓋,把表面抹平便可。
6. 再做菠蘿包皮。先將牛油和糖攪勻,加入蛋黃拌勻 ,低筋麵粉、臭粉和泡打粉拌勻。放進雪櫃冷凍至少一小時。
7. 一小時後,將壓平的菠蘿包皮放在西米布甸上,掃蛋漿在皮上,攝氏200度焗約25分鐘便成!
1. Cook the sago in a pot of boiling water in mid-high heat for 20-30 minutes until they are all transparent.
2. Pour in the milk, half of the sugar and butter into a pot, and bring them to a boil.
3. Mix the sugar and yolks together in a bowl. When the sugar is dissolved, add the corn starch and mix well.
4. When the milk is boiling, pour it into the egg mixture right the way while keep stirring it. Then add the sago into the egg mixture. Pour everything back into a pot and cook over low heat until thicken.
5. Put a thin layer of pudding onto a bakeable-ware. Put the peanut butter in the middle and flatten it. Cover the filling with more pudding. Smoothen the surface and let it cool.
6. Make the pineapple bun crust. Mix the butter and sugar together. Add the yolk and mix well. Add the ammonia, baking powder and cake flour incorporate everything. Store in the fridge for at least an hour.
7. After one hour, flatten the dough and place it over the pudding. Egg wash the top and bake it at 200C for 25 minutes. Done!

婆婆做的芋蝦是我每年必食的賀年食品。不過她今年身體抱恙,所以下年才可以再麻煩她!我還是請教了婆婆做芋蝦的食譜,在此與大家分享她芋蝦的味道!在這跟大家說聲新年快樂!祝你們今年心想事成!最重要是身體健康! :)
My grandma’s deep-fried taro balls are my personal favourite every Chinese New Year. Unfortunately, she’s not feeling well this year so, I will trouble her to make it with me next year instead. To honour my grandma, I asked her to share her secret recipe with me, as well you all. I’d also like to take this opportunity to wish you all a Happy New Year! Enjoy the homely flavours of these taro balls and may all your wishes come true. More importantly, I wish you only the best of health!

芋頭 Taro 1.5 kg
自發粉 Self-rising Flour 250 g
唐芹 Chinese Celery 5 Stalks
花生 Peanuts 100 g
鹽 Salt 2 tbsp
糖 Sugar 2 tbsp
胡椒粉 Pepper 1/2 tbsp
做法 ??????

1. 首先將芋頭洗淨去皮,之後把芋頭切絲。把唐芹切碎。
2. 加入所有的芋頭絲、花生、唐芹碎、鹽、糖、胡椒粉和自發粉放入一個大盆中,然後拌在一起。
3. 同時也可燒熱一鍋油至180度,把芋蝦混合料放進油內油中炸大概五至七分鐘至金黃色便成。
1. First of all, rinse and peel the taro. Cut the taro into thin strips. Chop the Chinese celery.
2. Use a big container, put all the taro strips, peanuts, chopped Chinese celery, salt, sugar, pepper and self-rising flour. Mix everything together.
3. Meanwhile, heat your pot of oil up to 180°C. Place a spoonful of mixture into the oil and deep-fry for 5-7 minutes until golden brown. Done!
