⛔美食當前,別太放「粽」
糯米所含澱粉(starch)約75~77%,其中支鏈澱粉(amylopectin)約占90%以上,黏性較強。
人的口腔中含有唾液澱粉酶可以剪切澱粉,但澱粉酶分泌較少且停留時間短,少部分澱粉被分解後便通過食道(所以吃飯要細嚼慢嚥)。
胃部幾乎無澱粉酶,僅可做將食物乳化成食糜並蠕動碎化,糯米加熱之後黏性較強,在胃中難以排出,造成脹氣。

「營養師的貼心小叮嚀」-by 陳小薇營養師
八寶飯主要是以糯米為主要材料來製作,糯米與一般食用白米的澱粉特性不同,先為大家介紹,澱粉可分為支鏈澱粉(Amylopectin)以及直鏈澱粉(amylose),如果含支鏈澱粉比例較高,烹煮後的質地會較有黏性,因為結構複雜容易接觸消化酶被分解消化,但是也因為分支點較多,所以容易消化不完全,這也是胃腸功能不佳的人容易產生脹氣的原因。
營養師貼心小叮嚀,八寶飯常給人熱量偏高的印象,但是透過創意巧思,也能把八寶飯變成健康美食喔!如將部分糯米替換成五穀雜糧、紫米…等,可以增加膳食纖維的攝取,也能夠增加花青素及多酚的來源!

Ingredients:
A kumquat cake.
300g round sticky rice
30g raisin
Adequate amount of lotus seed
Adequate amount of jujube
Adequate amount of crystal sugar
Water
Red bean paste

糯米飯食材:
圓糯米 300g
水 1大杯
橘餅 1顆
葡萄乾 30g
(圓糯米:水=1:1)
其他食材:
蓮子適量
紅棗 適量
冰糖 適量
豆沙 1大碗
做法:
1.圓糯米不用泡,洗好備用、橘餅切碎、葡萄乾備用 (若硬掉,可泡 水)。
2.加冰糖與少許的水將紅棗與蓮子 蒸熟,蒸好鋪在直徑約15cm圓形的 碗底。
3.起油鍋炒香糯米,加入葡萄乾與切碎的橘餅,放入鍋中蒸成糯米飯。
將蒸好的糯米飯壓入碗中,但中間略留空間,將豆沙放入,再用糯米飯填滿並壓緊,倒扣入盤中即可。
4. 可放冷凍庫保存,要吃的時候再蒸熱即可食用。

Risotto là một trong những món ăn nổi tiếng của người Ý, có thể nói là một tinh hoa của ẩm thực. Món này nấu đơn giản mà khó, khó mà đơn giản. Quan trọng là canh được độ chín thích hợp.
Các loại gạo hạt tròn, ngắn hoặc vừa, có hàm lượng amylose nhưng lại giàu chất bột amylopectin được dùng để làm risotto. Các loại gạo này có thể hấp thụ nước và tách tinh bột ra, nên chúng dẻo hơn cả gạo tẻ.
Loại gạo dùng ở Ý là gạo Arborio, Baldo, Carnaroli, Padano, Roma, và Vialone Nano. Carnaroli và Vialone Nano là loại gạo tốt và đắt nhất. Chúng có chút ít khác biệt. Gạo Carnaroli khó bị nhão hơn, nhưng gạo Vialone Nano hạt lại nhỏ hơn, nấu nhanh hơn và ngấm gia vị tốt hơn. Các loại gạo khác như Roma, Baldo, Ribe và Originario cũng có thể dùng, nhưng không tạo ra được sự dẻo mịn như kem theo kiểu truyền thống; chúng tốt hơn nên được dùng cho các món súp và các loại xôi chè. Các từ "superfino", "semifino" và "fino" là muốn nói đến kích cỡ và hình dạng của hạt gạo (chiều dài, chiều rộng) chứ không phải chất lượng gạo.

4tbsp of soy sauce
1tbsp of oyster sauce
1/2tbsp of rice wine
1tbsp of sugar
2tsp rock salt
A little green onion
A little ginger
Long glutinous rice
1tbsp of sugar
1tbsp of oyster sauce
3tbsp soy sauce
1tbsp of rice wine
1/4 tbsp of white pepper
1 tsp salt
Salted egg yolk

醃肉食材:
猪胛心肉600g
醬油4大匙
米酒1/2大匙
糖1大匙
蔥少許
薑少許
蠔油1大匙
粗鹽2小匙
糯米調味:
長秈糯米1斤
醬油3大匙
米酒1大匙
白胡椒1/4匙
鹽1小匙
糖1大匙
蠔油1大匙
其他:
鹹蛋黃
粽竹葉
步驟:
1.粽葉需泡水3~4小時軟化
2.將豬前腿肉放入醃料,放進冰箱醃製一晚
3.長糯米泡足2小時以上的水,完全瀝乾水分,將糯米調味後拌炒
4.竹葉2片為一組,下方1/3處捲起成漏斗狀,先盛裝一大匙糯米,鋪成長方狀
5.放上適合的豬肉條,鹹蛋黃,均勻鋪上2大匙糯米
6.包好的粽子放入煮沸的熱水中水量必須完全淹蓋粽子,蓋上蓋子大火煮3小時
