上次去嘉義,隔天早餐就排了到嘉義東市場吃牛雜湯,很久很久以前有跟家人來一次,不過很殘念的來得太晚沒吃到,所以一直記得東市場裡有家牛雜湯很厲害,所以隔天退房後就直奔東市場吃早午餐。料理區有大鍋的牛雜燉煮,點牛肉的話是現燙的,光看就非常過癮,據說這家不只是觀光客愛吃,在地的人也會來吃唷!

Horiginal Beef Noodle at a food court in Bedok Reservoir offers a wide array of unusual beef cuts and offal not commonly found elsewhere.
The dry Mixed Beef Noodle with thick rice vermicelli was brimming in a bowl of clear soup with generous cuts of lean beef slices, tripe, brisket, beef ball and tendons. Though clear, the meaty broth was surprisingly full-bodied with peppery undertones, and a subtle herbal profile. The rich beef stock was simmered for at least 6 hours with a myriad of herbs and spices such as bay leaves, cinnamon and dang gui which gave it its characteristic light herbal sweetness. The beef slices, tripe, and brisket were tender, the beef balls bouncy, and the tendons broke apart easily with minimal chew.
What really piqued our interest though, was the 5 different types of piquant sauces offered. The Cincalok Onion and Homemade Sour Chilli are perfect for hearty beef cuts such as the brisket and ribs, while the Galangal Chilli is popular among elderly folks who prefer the sharp taste of galangal.

Which gives you a stronger flavour as well

And tastes really spongy
It has a light palette of fish and umami and gives you a really soothing sensation
