Recipe: Anchor Butter Mochi

Ingredients:
2 tablespoons Anchor Butter (Salted)
1 bowl Glutinous Rice Flour
1 cup Sugar
1 cup Milk
.
Methods:
1. Add the glutinous rice flour, sugar, and milk. Then stir until the mixture blend well and smooth.
2. Microwave the mixture for 2 minutes at 600 watts.
3. Stir the mixture until it’s smooth. Add butter and stir it into the mixture until the butter is fully melted and blend well with the mixture.
4. Microwave the mixture at 600 watts for another 2 minutes. Then use silicone spatula to knead the mochi together.
5. Transfer the mochi into the square container lined with parchment paper. Press the butter mochi into the corners and flatten off the top. Chill the mochi in the refrigerator until its firm-up.
6. Cut it into bite-size pieces and dust each piece with flour. It’s ready to be served!

The Sting of Death is Gone
“Behold, I give you authority to tread on serpents and scorpions, and over all the power of the enemy. Nothing will in any way hurt you.” (Luke 10:19 WEB)
Many troubles we experience in life are the work of Satan and his demons, represented by the serpents and scorpions in the verse above. When they attack, do you know what to do?
The power of a serpent is in its sometimes poisonous bite, and the power of a scorpion is in its toxic sting. The serpent’s mouth is in front, the scorpion’s stinger is at the back.
Jesus is saying that He has given you authority and protection against the front, back and everything in-between of the enemy.
When you understand how to tread on your demonic enemies, you become immune to harm.
““Death, where is your sting? Hades, where is your victory?” The sting of death is sin, and the power of sin is the law.” (1 Corinthians 15:55-56 WEB)
Sin is the scorpion’s poisonous sting which produces death. Satan wants people to nurture their sins so that their sowing into the flesh brings forth the mature fruit of death.
Sin produces death because of the Law (the Ten Commandments). A transgression of God’s law brings the penalty of death and the curse of the Law. Without the Law, sin wouldn’t result in death.
For a born-again believer, sin has become powerless to kill him (the spirit) because the believer has shared in Jesus’ death and has passed from death into life. He has been irreversibly saved.
““Most certainly I tell you, he who hears my word, and believes him who sent me, has eternal life, and doesn’t come into judgment, but has passed out of death into life.” (John 5:24 WEB)
Sin is also unable to bring the curse upon a believer because Jesus has redeemed us from the curse of the Law, having become a curse Himself at the cross.
“Christ redeemed us from the curse of the law, having become a curse for us. For it is written, “Cursed is everyone who hangs on a tree,” that the blessing of Abraham might come on the Gentiles through Christ Jesus; that we might receive the promise of the Spirit through faith.” (Galatians 3:13-14 WEB)
However, many believers don’t know these. When up against a believer, Satan is like a scorpion without a sting. He still tries to deceive believers that they can lose their salvation and that God curses them when they sin. Making a Christian think that God is against him destroys his faith because who can resist the power of God?
Actually, the only way the sting can grow back is if you put yourself under the Law again. The moment you attempt works-based justification, it’s like Satan’s sting regenerates and is driven deep into your body, inflicting death through the curse of the Law.
“For as many as are of the works of the law are under a curse. For it is written, “Cursed is everyone who doesn’t continue in all things that are written in the book of the law, to do them.”” (Galatians 3:10 WEB)
Satan may come with lies like a serpent and say, “You sinned again. You’re hopeless. God’s curse is upon you. God is going to destroy you because you keep repeating your sins and are unrepentant.”
He heaps accusations and condemnation upon you. The moment you believe him, you are stung by the scorpion. The curse of the Law takes effect in your life because you have effectively put yourself under the covenant of the Law as a transgressor.
Based on the principle of sowing and reaping, sin still bears the fruit of death, causing sickness, depression, infirmity, aging, and finally the death of the body, but sin cannot cause you to lose your salvation or bring you under God’s curse.
God is for you, not against you. His favor continually shines upon you and it is not by your performance, but by the grace of God, made possible through Jesus’ finished work at the cross.
When you fall because of sin, it is by the grace of God that you can immediately pick yourself up again. Do not cut yourself off from that supply by being self-condemned.
In your war against Satan’s temptations, sometimes you will fall—and God knows that. But you can dust yourself off and get up again by receiving the grace and mercy of God. Do not allow Satan to trick you into thinking that God’s curse is upon you.
The scorpion’s sting has been removed and the Law does not apply to you, so let it stay that way. You are a child of God under the New Covenant of Grace who is led by the Holy Spirit!

One of my favourites from @breadtalksg Mother’s Day lineup is this Yammy Croissant 香芋可颂 ($2.50) that retains its flaky buttery glory after toasting it for about 7min.
It’s filled with yam paste and mochi that stretches as you bite and pull the bread apart. Mmmmm....so good. Yes, the key is to have it warm and crisp right out from the oven. And that light dust of sweet potato powder made it simply attractive to look at

照り焼きチキンのドーナツバーガー
2個分
材料:
シュガードーナッツ 2個
鶏もも肉 1枚
しめじ 1/2パック
レタス 3枚
紫玉ねぎ (薄切り) 1/4個
れんこん (5㎜厚さの輪切り) 4枚
片栗粉 大さじ1
Aおろしにんにく 少々
A水 大さじ1
A酒 大さじ1
Aみりん 大さじ1
Aしょうゆ 大さじ1
A粒マスタード 小さじ1
A砂糖 小さじ1
サラダ油 大さじ1
マヨネーズ 適量
塩 少々
黒コショウ 少々
作り方:
1.紫玉ねぎは水に15分さらして水けをしっかりしぼる。しめじは石突を落として小房に分ける。レタスは一口大にちぎる。鶏肉は余分な脂身を取り除き、半分に切って塩、黒コショウ各少々を振り、片栗粉をまぶす。
2.フライパンを熱してサラダ油大さじ1/2をひき、れんこんを並べて塩少々を振って強火で両面を焼いて取り出す。
3.フライパンにサラダ油大さじ1/2を足し、鶏肉を皮を下にして入れて蓋をして強めの中火で4分焼く。焼き目がついたら返し、空いているところにしめじを加えて塩少々を振り、蓋をして2分焼く。いったん火を止めてしめじを取り出す。
4.フライパンの余分な油をキッチンペーパーで拭きとり、混ぜ合わせたAを加えて再び中火にかけて絡めながら煮詰め、たれが少なくなったら取り出す。
5.ドーナツは厚みを半分に切り、(2)、鶏もも肉、しめじ、紫玉ねぎ、マヨネーズ、レタスの順に重ねて挟んで完成!

Teriyaki chicken donut burgers
Servings: 2
INGREDIENTS
2 sugar donuts
1 chicken thigh
1/2 pack shimeji mushrooms
3 lettuce leaves
1/4 red onion (sliced)
4 slices lotus root (5mm)
1 tablespoon potato starch
A Some grated garlic
A 1 tablespoon water
A 1 tablespoon sake
A 1 tablespoon mirin
A 1 tablespoon soy sauce
A 1 teaspoon brown mustard
A 1 teaspoon sugar
1 tablespoon vegetable oil
Some mayonnaise
Some salt n pepper
PREPARATION
1. Soak red onion slices in water for 15 minutes, drain well. Remove the stem of shimeji mushrooms and break into small pieces. Tear lettuce leaves into bite-size pieces. Remove excess fat from the chicken, then cut into halves. Season with salt n pepper, dust some potato starch.
2. Heat 1/2 tablespoon of vegetable oil in a pan. Place lotus root slices, season with some salt. Cook both sides over high heat.
3. Add another 1/2 tablespoon of vegetable oil into the same pan. Grill the chicken (skin-side down) for 4 minutes over medium heat with a lid on. Flip the chicken when golden. Put shimeji mushrooms and season with some salt. Cook for another 2 minutes with a lid on. Turn off the heat, transfer the shimeji mushrooms to a plate.
4. Absorb excess oil with a paper towel from the pan. Mix all ingredients for A. Add mixed A into the pan and simmer over medium heat.
5. Split donuts in half to open. Place lotus root slices (2), the chicken, shimeji mushrooms, red onion slices, mayonnaise, and lettuce between donut halves.
6. Enjoy!

白菜から出る水分と白ワインに、コーンスープの素が入ることで旨味が凝縮♡
濃厚なコーンクリーム煮が出来ちゃいます♪
とっても簡単で美味しいので、ぜひ作ってみてくださいね!
コーンクリーム煮
2人分
材料:
白菜 300g
鶏むね肉 1/2枚
塩 適量
コショウ 適量
薄力粉 大さじ1
マッシュルーム 6個
バター 10g
白ワイン 60ml
コーンクリームスープの素 1袋
作り方:
1.白菜は2センチ幅のザク切りにし、マッシュルームは石づきを取り4等分にする。
2.鶏むね肉は皮や余分な脂を取って、一口大に切る。塩、コショウをし、出た水分はふき取って、薄力粉をまぶす。
3.フライパンにバターを入れ、溶けてきたら(2)の表面を焼き色がつくまでしっかり焼き、一度取り出す。
4.同じフライパンに白菜とマッシュルームを加え、塩、コショウをして軽く炒める。(3)の鶏肉を戻し入れたら白ワインを入れてアルコールを飛ばし、蓋をして中弱火で5分程煮込む。
5.野菜がクタっとして水分が出たらコーンスープの素を振り入れる。煮溶かして、塩、コショウで味を調えたら、完成!
(白菜によっては水分が出にくい場合もありますが、その時は水大さじ1を入れ様子を見てください。)
Creamy corn soup
Servings: 2
INGREDIENTS
300g napa cabbage (aka. hakusai)
1/2 chicken breast
Some salt
Some pepper
1 tablespoon flour
6 mushrooms
10g butter
60ml white wine
1 pack corn cream soup-stock-powder
PREPARATION
1. Cut napa cabbage into 2cm pieces. Remove the stems from mushrooms and cut into 4 parts.
2. Remove skin and excess fat from the chicken breast and cut into bite-size pieces. Season with salt n pepper and pat dry with paper towels. Dust with flour.
3. Melt butter in a pan. Grill both sides of the chicken (2) until golden. Transfer to a plate.
4. Stir fry the napa cabbage and mushrooms (1) in the pan. Season with salt n pepper. Add the chicken (3) back to the pan. Pour white wine and let the alcohol evaporate. Simmer for 5 minutes with a lid on over medium-low heat.
5. When vegetables softened, add corn cream soup-stock-powder. (Add 1 tablespoon of water if needed.) Season with salt n pepper.
6.Enjoy!

生スイートポテト大福
6個分
材料:
■スイートポテト
さつまいも 200g
生クリーム 100ml
練乳 大さじ3
バニラエッセンス 少々
塩 少々
■ぎゅうひ
水 100ml
白玉粉 75g
砂糖 25g
片栗粉 適量
生クリーム 100ml
砂糖 大さじ1
黒ごま 少々
作り方:
1. 生クリームに砂糖を加えてハンドミキサーでかために泡立てる。バットなどにクッキングシートをしき、スプーンなどですくって6等分し、冷凍庫に入れて凍らせる。
2. スイートポテトを作る。さつまいもは皮をむいて一口大に切り、水にさらす。
3. 耐熱ボウルにさつまいもを入れてラップをかけ、600Wの電子レンジで5分加熱する。さつまいもがやわらかくなったらなめらかになるまでフォークで潰す。
4. 鍋に(3) と残りの材料(生クリーム、練乳、バニラエッセンス、塩)を全て加え、弱火にかけて水分を飛ばしながら木べらで練る。なめらかになってぽってりとしてきたら、バットなどに広げて冷蔵庫に入れ、しっかり冷ます。
5. ぎゅうひを作る。ボウルに白玉粉、砂糖、水を入れて混ぜ、ラップをかけて600Wの電子レンジで3分加熱する。ラップを外し、木べらなどで透明感が出るまでよく練り混ぜる。
6. まな板に片栗粉を振り、(5) をおいてまるくまとめ、6等分に切り分ける。
7. (6)のぎゅうひを丸くのばし、(1) と(4) を包む。黒ごまを飾ったら、完成!

Sweet potato mushy mochi
Servings: 6 mochi
INGREDIENTS
◆Mashed sweet potatoes
200g sweet potatoes
100ml heavy cream
3 tablespoons condensed milk
A pinch vanilla
A pinch salt
◆Gyuhi-mochi
100ml water
75g shiratamako
25g sugar
Some potato starch
100ml heavy cream
1 tablespoon sugar
Some black sesame seeds
PREPARATION
1. Put heavy cream and sugar in a bowl and whisk until firm peaks form. Spread a parchment paper on a baking sheet and divide the whipped cream into 6 equal portions with a spoon, then freeze.
2. To make mashed sweet potatoes, peel potato skins and cut into bite-size pieces. Put them in the water.
3. Drain water and microwave sweet potatoes for 5 minutes at 600W. Mash potatoes until smooth.
4. Heat heavy cream, condensed milk, vanilla, salt, and mashed potatoes (3) in a pan over low heat. Stir until thick and smooth. Transfer into a pan and refrigerate.
5. To make Gyuhi-mochi, put shiratamako, sugar, and water in a bowl. Plastic-wrap the bowl and microwave for 3 minutes at 600W. Knead with a wooden spoon until stretchy and transparent.
6. Dust a board with potato starch and put Gyuhi-mochi dough. Divide the mochi dough into 6 pieces.
7. Flat each piece of mochi dough. Place a cream & sweet potato ball in the center and seal. Sprinkle with black sesame seeds.
8. Enjoy!
