咁樣先係炸腰果
材料:
腰果半磅
油300毫升
處理:
1. 腰果,清水加入粗鹽1湯匙,浸1小時以上,以清除污漬及加入鹹味。
2. 腰果,已浸水1小時,擎乾水,吹乾1至2小時。
烹調:
1. 在鑊中加入油300毫升。
2. 放腰果落鑊。
3. 腰果,用中慢火浸。
4. 油開始熱,水分慢慢蒸發。
5. 慢慢四面推腰果。
6. 油中的泡沫開始減少,腰果開始轉金黃色,轉大火炸1分鐘,繼續推腰果。
7. 腰果,轉了淡淡金黃色,熄火,即時擎乾油分。
8. 攤凍20分鐘。
9. 腰果放入細碗中,可享用。
The best way to deep fry cashew nuts
Ingredients:
Cashew nuts 0.5 lb
oil 400ml
Preparation:
1. Cashew nuts, soak in tap tap water with cooking salt 1 tbsp for an hour or more. This is in order to remove dirts and add some salty taste into the nuts.
2. Cashew nuts, have already been soaked in salty water for an hour, hang dry, blow dry for 1 to 2 hours.
Steps:
1. Pour oil 300ml into wok.
2. Put cashew nuts into wok.
3. Soak the nuts in oil at medium~low flame.
4. Oil is started to be heated up, water evaporates slowly.
5. Push the nuts in wok back and forth.
6. Bubbles in oil starts to be reduced. Nuts starts to turn into golden yellow. Turn to high flame, deep fry for a minute. Continue to push the nuts back and forth.
7. Cashew nuts, colour has been turned into light golden yellow. Turn off fire. Hang dry the oil at once.
8. Wait for cooling down for 20 minutes.
9. Put the cashew nuts in a small bowl. Serve.

雞肉釀尖椒
材料:
尖椒6隻
急凍雞柳1磅半
辣椒仔2隻
芫荽1棵
處理:
1. 雞柳,清水解凍。
2. 尖椒,切去椗,打直切開一邊,去籽。
3. 辣椒仔,切去椗,打直切開一邊,去籽。
4. 芫荽,切去根部,洗淨,切碎,保留尾段。
5. 辣椒仔,切碎。
6. 雞柳已解凍,倒去水分,加入粗鹽乸7分鐘去除雪味、腥味及加入少許鹹味。
7. 雞柳,清水洗淨,擎乾水,廚紙索乾。
8. 雞柳,1開2,攪碎。
9. 雞肉調味:
a. 生粉1湯匙
b. 油1湯匙
c. 胡椒粉少許
d. 生抽半湯匙
e. 雞汁1湯匙
撈勻。
10. 預備芡汁:
a. 豆豉醬半茶匙
b. 蒜蓉半茶匙
c. 生抽半茶匙
d. 生粉半茶匙
e. 雞汁半茶匙
f. 胡椒粉少許
加入清水200毫升,攪勻。
11. 免治雞肉,釀入尖椒至飽滿。
12. 辣味,加入少量辣椒碎入雞肉,攪勻,釀入尖椒至飽滿。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 放尖椒,雞肉向下,轉慢火慢煎,用鑊鏟輕手壓一壓,隔去油分。
3. 加入一半芡汁,冚蓋炆6分鐘。
4. 加入餘下的芡汁,大火滾起。
5. 完成,上碟,可享用。
Stuffed bell pepper with chicken meat
Ingredients:
Bell pepper 6 Nos.
Frozen chicken fillet 1.5 lbs
Chili 2 Nos.
Coriander 1 No.
Preparation:
1. Chicken fillet, defrost with tap water.
2. Bell pepper, cut the anchor. Halfly cut vertically. Remove seeds.
3. Chili, cut the anchor. Halfly cut vertically. Remove seeds.
4. Coriander, cut the root. Rinse and chop well but retain the bottom portion of it.
5. Chili, chop well.
6. Chicken fillet has been defrosted, pour away water. Season with cooking salt to remove unpleasant smells and tastes, and add some salty tastes to it.
7. Chicken fillet, rinse thoroughly. Drain. Dry with kitchen towels.
8. Chicken fillet, divide each one into 2 shares. Blend it.
9. Season the chicken:
a. Tapioca starch 1 tbsp
b. Oil 1 tbsp
c. Pepper little
d. Light soya sauce 0.5 tbsp
e. Chicken sauce 1 tbsp
Mix well.
10. Prepare sauce:
a. Black bean sauce 0.5 tsp
b. Garlics sauce 0.5 tsp
c. Light soya sauce 0.5 tsp
d. Tapioca starch 0.5 tsp
e. Chicken sauce 0.5 tsp
f. Pepper little
Add in water 200ml, mix well.
11. Minced chicken meat, totally stuff in the bell pepper.
12. Spiciness, add in little chopped chili into chicken. Mix well. Totally stuff in the bell pepper.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Put bell pepper in wok, chicken meat faces down. Turn to low flame, continue frying. Press the pepper lightly with the wok shovel. Filter the oil as well.
3. Add in half of the sauce. Cover up the wok and braise for 6 minutes.
4. Add in the remaining sauce. Heat up at high flame.
5. Complete. Put on plate. Serve.

菜心兩吃
金銀蛋菜心湯
清炒菜心 (4人份量)
材料:
菜心2斤
鹹蛋1隻
皮蛋1隻
薑1舊
處理:
1. 菜心,搣去菜梗,1開2,放一邊,菜遠放另一邊。
2. 菜心,清水洗2次。
3. 薑,去皮。
4. 皮蛋,菜刀輕手拍一拍外殼。
5. 鹹蛋,加入少量清水,刮去灰,清水洗淨。
6. 薑,1開2,拍鬆。
7. 皮蛋,1開8 。
8. 鹹蛋,打在碗內。
烹調:
金銀蛋菜心湯:
1. 一個人1碗水,加清水入煲內,加入菜心,大火煲滾。
2. 加入鹹蛋及皮蛋。
3. 湯已滾了1分鐘,加入鹹蛋白,等湯再次滾起。
4. 完成,湯倒入大碗中,可享用。
清炒菜心:
1. 大火在鑊中燒熱油1湯匙。
2. 放菜落鑊。
3. 冚蓋,轉慢火,焗2分鐘,焗軟菜心。
4. 轉大火,炒幾下。
5. 完成,上碟,可享用。
Choy sum, cook in 2 ways
Choy sum soup with century and salted eggs
Stir frying choy sum (serving for 4)
Ingredients:
Choy sum 2 catty
Salted egg 1 No.
Century egg 1 No.
Ginger 1 No.
Preparation:
1. Choy sum, tear off the rough stems, divide them into 2 halves. Put on one side. The green portion, is to be put on the other side.
2. Choy sum, rinse 2 times.
3. Ginger, get it peeled.
4. Century egg, beat the shell lightly with chopper.
5. Salted egg, add in little water. Remove the ash. Rinse thoroughly.
6. Ginger, divide it into 2 shares. Beat well.
7. Century egg, divide it into 8 shares.
8. Salted egg, break in a bowl.
Steps:
Choy sum soup with century and salted eggs:
1. One person, 1 bowl of water, add in together with choy sum in pot. Heat up at high flame.
2. Add in salted and century egg.
3. Soup has been boiled for a minute, add in salted egg white. Wait for boiling up again.
4. Complete. Pour into a big bowl. Serve.
Stir frying choy sum:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put choy sum in wok.
3. Cover up the wok. Turn to low flame. Leave it for 2 minutes until choy sum turns soft.
4. Turn to high flame, stir fry for 30 seconds.
5. Complete. Put on plate. Serve

鮑魚雞粥
材料:
新鮮鮑魚8隻
急凍雞扒2塊
白米3/4膠嘜
程序:
1. 大火在煲內煲滾清水1升。
2. 白米,清水浸5分鐘。
3. 雞扒,清水解凍。
4. 鮑魚,用不鏽鋼羹,從它的嘴刮出鮑魚肉,然後除去內臟。
5. 水已煲滾,加入白米,大火滾起,繼續攪拌,避免黐底。
6. 粥滾起後,轉慢火,放一雙筷子在煲上留一條縫隙,避免滾瀉。
7. 鮑魚肉,加入生粉1湯匙,捽乾淨,清水沖洗乾淨,擎乾水。
8. 雞扒已解凍,倒去水分,用粗鹽1湯匙乸15分鐘,清水沖洗乾淨,擎乾水,用廚紙索乾。
9. 雞扒,切去脂肪,切粒。
10. 雞粒,加入調味料:
a. 胡椒粉半茶匙
b. 雞汁半湯匙
c. 生粉1/4茶匙
撈勻。
11. 粥已煮成稀飯,加入滾水至適當稠厚度,攪勻。
12. 粥已滾起,加入雞肉,轉大火至再滾起,放鮑魚,再煮2分鐘。
13. 完成,倒入大碗內,可享用。
Abalone chicken porridge
Ingredients:
Fresh abalone 8 Nos.
Frozen chicken steak 2 Nos.
Plain rice 3/4 measure cup
Steps:
1. Heat up water 1L at high flame in pot.
2. Plain rice, soak in tap water for 5 minutes.
3. Chicken steak, defrost in tap water.
4. Abalone, get the flesh with a stainless steel spoon. Remove the intestines afterwards.
5. Water boils up, add in plain rice. Boil it up at high flame. Continue stirring.
6. Turn to low flame after boils up. Put a pair chopsticks between the pot and its lid avoiding boil over.
7. Flesh of abalone, add in tapioca starch 1 tbsp, rub until it is clean. Rinse thoroughly. Drain.
8. Chicken steak has been defrosted, pour away water. Season with cooking salt 1 tbsp for 15 minutes. Rinse thoroughly. Drain. Dry with kitchen towels.
9. Chicken steak, cut off the fat. Dice it.
10. Season the chicken:
a. Pepper 0.5 tsp
b. Chicken sauce 0.5 tbsp
c. Tapioca starch 1/4 tsp
Mix well.
11. Porridge has been cooked in form of congee. Add in appropriate amount of water to a suitable thickness. Mix well.
12. Porridge boils up, add in chicken. Turn to high flame until boils up again. Put abalone, boil for 2 minutes more.
13. Complete. Pour into a big bowl. Serve.
