Grilled Flounder fish engawa #えんがわ side skirts. Served with a South American - Peruvian style Sudado sauce accompaniment. I sometimes think this seems related to an Iberian Spanish coast #Suquet recipe myself, however this particular recipe was super smart. Most Engawa skirt cuts are served Aburi grilled or Raw, but here at Aji/Maido it was served with the Skin on & Crispy Skin grilled with Meat. Even within Japan this is not heard of, it was super smart by Chef @Mitsuharu_maido
