Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

中秋芋圓(芋圓湯圓):
材料:
紫薯170克
南瓜170克
木薯粉200克
甜味料:
蜂蜜、椰漿、鮮奶
雪糕、紅豆、薑糖
(隨意加入)
處理:
1. 紫薯,洗淨,刨皮。
2. 南瓜,刨皮。
3. 紫薯及南瓜切薄片。
4. 煲滾3升水,大火蒸紫薯及南瓜12分鐘。
5. 另一邊,煲滾1升水,放薑片及半塊片糖煲糖水。
6. 放50克木薯粉落碗,加入少量凍滾水。
7. 戴上透明膠手套,攪勻粉漿。
8. 取出紫薯及南瓜。
9. 壓爛紫薯,加入粉漿,攪勻。
10. 戴回膠手套,逐少量逐少量加入薯粉,直至將紫薯搓至一個粉團。
11. 洗淨雙手,灑少許木薯粉在砧板上,輕手上下上下的搓粉團成粗條狀,切開一吋一粒,搓粉團至圓形。
12. 在芋圓上灑上木薯粉,避免黏在一起。
13. 篩出多餘的木薯粉。
烹調:
1. 大火煲滾水,水滾後,放芋圓落煲,滾至浮起,加入少量凍滾水,等再次浮起。
2. 預備一碗冰水。
3. 芋頭再次浮起,撈起即時放入冰水。
4. 擎乾水,分配好芋圓。
5. 加入蜂蜜,或加椰漿,或加入薑糖水,任君選擇。
Taro tong yuen sweet soup :
Ingredients:
Purple sweet potato 170g
Pumpkin 170g
Tapioca starch 200g
Sweeteners:
Honey, coconut milk, fresh milk, ice~cream, red bean or ginger sugar (just choose one flavour you like)
Preparation:
1. Purple potato, rinse and peel.
2. Pumpkin, peel.
3. Purple potato and pumpkin, thinly slice.
4. Boil up 3L of water, steam sweet potato and pumpkin at high flame for 12 minutes.
5. On the other side, boil up 1L water with ginger slices and half slice of slab sugar. Get ready for the sweet soup.
6. Put 50g of tapioca starch into a bowl. Mix with little cold boiled~up water.
7. Put on transparent gloves, mix well the tapioca sauce.
8. Take out the purple potato and pumpkin.
9. Squash the purple potato, mix well with tapioca sauce.
10. Put on the gloves, add tapioca starch little by little until a dough can be made.
11. Rinse your hands thoroughly. Put little yapioca starxmch on chopping board Roll the dough, then cut into size, 1" , 1", then make it in round shape.
12. Pad some tapioca starch on the dumplings avoiding stick together.
13. Filter the excess tapioca starch.
Steps:
1. Boil up a pot of water at high flame. Put taro tong yuen into the pot after water boils up. Wait for the dumplings flows up. Add little cold boiled~up water. Waits for boil up again.
2. Get ready for a bowl of iced water.
3. Taro flow up again. Pick them up then put into iced water at once.
4. Hang dry. distribute the food equally.
5. Add honey, coconut milk or ginger sweet soup. Just choose one that you like.

Resepi Puding Karamel Kukus | Steamed Caramel Custard Pudding Recipe

Bahan-Bahan Karamel
3 sb gula pasir
1 sb air panas
Bahan-Bahan Puding
2 biji telur
200 ml susu cair
3 sb susu pekat
1 sk esen vanila
Cara memasak
1. Untuk membuat karamel, masakkan gula sehingga warna bertukar keperangan.
2. Masukkan air panas dan gaulkannya.
3. Setelah itu, tuangkan sedikit gula ke dalam mangkuk.
4. Untuk puding pula, panaskan dahulu susu segar bersama susu pekat. Tidak perlu sehingga mendidih.
5. Pukul telur di dalam satu mangkuk.
6. Campurkan campuran susu bersama telur dan kacaukan sehingga bersatu.
7. Masukkan esen vanila dan kacau sebati.
8. Tapiskan campuran sebanyak dua kali untuk mendapatkan tekstur yang halus.
9. Tuangkan dan tapiskan campuran ke dalam mangkuk berisi karamel.
10. Kukus puding karamel selama 45 minit atau sehingga puding menjadi pejal. Gunakan api yang perlahan.
11. Setelah selesai, puding karamel siap untuk dihidangkan. Boleh sejukkan dahulu di dalam peti sejuk untuk rasa yang lebih sedap.

Pudding Ingredients
2 nos eggs
200 ml fresh milk
3 tbsp of condensed milk
1 tsp of vanilla essence
Cooking methods
1. For caramel, cook sugar until the color turns golden brown.
2. Add hot water and stir well.
3. Then, pour the mixture into medium-sized bowl.
4. For pudding, heat fresh milk and condensed milk together. No need to bring to a boil.
5. Slightly beat eggs inside a bowl.
6. Combine milk mixture with slightly beaten eggs while simultaneously stir well.
7. Add vanilla essence and stir well.
8. Sieve the mixture twice to get smooth texture.
9. Pour and sieve mixture again into bowl filled with caramel.
10. Steam caramel pudding for 45 minutes or until pudding becomes firm. Make sure to use low heat.
11. Once it is done, caramel pudding is ready to be served. For better taste, chill it in the refrigerator before enjoys.
