[Recipe]Dairy-free Easy Pumpkin Soup 🎃
Pumpkin soup is one of my favourite Western soups and it is so easy to whip up a pot without any milk or cream but simply with chicken broth. I bumped it up with ingredients like chicken and mushroom to make it a wholesome meal but you can leave it out and the soup itself still tastes as good. No salt is added here because the chicken broth contains salt.
Ingredients (serves 3-4)
4 @hayley_singapore brioche burger buns (I got these from ntuc)
Pumpkin (about 500g with skin)
1 Tb @newmoonsg Cooking Oil
1 New Moon Premium Chicken Broth (400ml)
1 Yellow Onion, diced
8pcs whole Mili Champignons, sliced
1 portion cooked chicken breast, shredded
Chopped roasted almonds (for garnish)
English Parsley (for garnish)
Black Pepper (for seasoning)
Steps:
1. Steam the pumpkin till soft and scoop the pumpkin flesh into a pot. Discard skin
2. Add chicken broth and blend till smooth
3. In another pan, heat up oil. Sauté diced onion, followed by sliced champignons mushrooms and shredded chicken breast in a saucepan
4. Boil pumpkin soup. Once boiled, transfer the above into the pumpkin soup and simmer on low heat.
5. Season with black pepper.
6. Prepare bread bowl: slice the top of brioche bowls and remove as much bread until you are left with a hollow bread shell. Don’t throw the bread crumbs away as they can be made into croutons.
7. Toast everything in a preheated oven at 100 degrees for 10min.
8. To serve, fill the toasted bread bowls with pumpkin soup. Garnish with roasted almonds and English parsley

Jim Cramer: In Times Like This, Go for the Easy Money
Look at the stocks you own. Can you tell me why you've got them? If you can't answer the following three questions, then have a look at several I like right now.
We've endured the meme stock craziness, with all of its love for heavily shorted stocks. We have watched the collapse of bitcoin to levels viewed as shocking, even if they are still more than double where they were not that long ago. We've dealt with Fed officials making it clear that they are no longer on the side of the bulls or the bears. They are on the side of job growth, but are wary of inflation. We've seen the end of the rush to get vaccines, which means that millions of people are going to get the new COVID variant, because there is no natural immunity to it. We've watched as the hopes for an infrastructure bill have collapsed. We've endured shortages of everything from chips to plastic to imported goods and labor.
And we're still standing, yeah, yeah, yeah.
Yep, we are in one of those halcyon moments, where the masks are off -- even if they shouldn't be -- and Americans are back doing what they do best: consume, spend, go out to eat and then consume and spend some more.
There are times in the stock market where the collective mindset is revealed. This is one of those times: Things are cool, it's not a big moment, there's no real news for a bit, it's the historically strong period and we can reach some conclusions about where we are.
When things are like this, it is important to remember that buyers like to revert to tried-and-true companies that thrive no matter what. These are companies that have an edge and are better at what they do than other companies.
You know that I am a great believer in index funds, that the average person doesn't have the time or the inclination to research individual stocks. It's a difficult barrier. I think you need to make time to read the quarterly report and listen to the conference call, to Google articles and, if possible, get some research about the companies you own. It is vital that you know what you own, that if I asked you on the street why you like a certain stock, you can give me three reasons. If you don't know how they make their money, who their key clients are and what they make if, then I will tell you that you are over your head and should not own individual stocks. I am reminded by this, because, once again, without a mask, I can be recognized and if I am not holding "Nvidia the Second," I can carry on a conversation.
I have had many in the last two weeks and when I have asked this litany of questions, I find myself at a loss as to why almost no one knew what they owned. But they thirsted for individual stocks, because they, like me, think things are better post pandemic. No, that's not a facetious comment. Many, many stocks did better with a stay-at-home economy. A huge number.
So what do I do? I revert to what others do when you are stumped about how to stay in touch with stocks, but want to do less homework. That means buying stocks that are accessible, not stocks like Unity (U) or Snowflake (SNOW) or Twilio (TWLO) or Okta (OKTA) .
I revert to normal businesses people know and I suggest they Google some articles, peruse the conference call, but, above all, like the company's products so you can buy more if it goes down.
Here's some that I have been telling people I like:
First is Ford (F) . I think the Ford lineup is amazing. The electric F-150 series will be incredible. I am eager to get a Maverick for my family, because it is a smaller pickup that will get the job done for the myriad little things I need to do with this farm I bought from that crazy bitcoin foray. I like the competitive edge of the CEO, who says he is going to bury Elon Musk when the Lightning comes out. I even think the Bronco is cool as all get out. Most important, though? I think the chip shortage is ending. My semiconductor friends are telling me the foundries are producing more feature-rich chips and that means Ford can pump out the trucks small business people love and need. Plus, the used car prices at last have plateaued, according to their most important pricing index. Halcyon times.
Second, Costco (COST) : The samples are coming back. Tell me you don't love the samples. You need things in bulk. You want low prices. You want to get all of the things that people don't think of with Costco, like insurance, hearing-aids -- hey, they are a fortune -- jewelry, things around the house. You go and you will buy far more than you first came for. My kind of store.
The kids love this American Eagle Outfitters (AEO) , which we just bought for my charitable trust, which you can follow along by joining the Action Alerts PLUS club. Jay Schottenstein, the CEO, came on "Mad Money" recently and it's clear that his Aerie model has real staying power: 26 consecutive quarters of double digit growth. No flash in the pan, that one. Number one brand in jeans for the 15 to 25 year old group. The best in the mall. How did I know this? I see the credit card bills.
I got up this morning to do my physical therapy. I have been doing it ever since I hurt my back in February. I have this really cool pair of sneakers that fit me perfectly and I love them, but I am fortunate enough to have a vacation house and I am always taking those shoes with me.
So I went on Amazon (AMZN) this morning and lo and behold I saw them for half price. I bought two pairs. Then I went over everything I have bought in the last year and got a bunch of those things. Then I bought a pair of binoculars, because mine were stolen. I paid half price.
Yep, Amazon's universal. I was talking to Alexa, while I was ordering, getting some new music on, asking questions. I saw that despite all of the Sturm und Drang of Amazon being late with things, all the delivery dates were within range. I didn't click on any ads, and I didn't need the speed of Web Services, but the whole thing reminded me about how special the darned company is. I don't care if it's ahead or behind plan for the moment. I would just buy some more when it goes down.
Finally, Apple (AAPL) . I think people who don't own Apple should look what they are holding at this very moment. Yes, right now. Or look at what's in your lap or on the table besides your fork. And then think about the bill you paid last night without knowing it. Think about what you bought in the App store yesterday. Think about what would happen if it would break or get stolen or, left in the Uber (UBER) , or heaven forbid, be dropped into the pool or in the, yes, toilet.
There, that's what you buy in halcyon times. Stocks of companies you know that if they go lower, because things get less halcyon, you are fine with it and buy more. If things go up, believe me, you will participate.
So accept the moment. Don't try for the hard money. Go for the easy kind. That's the best kind.

大園區橫山書法公園暨書法藝術館,位於青埔地區「5-8號陂塘公園」的東北角,大成路二段與大仁路交接處,館區面積約27701平方公尺,為地下1層、地上2層建築物,總樓地板面積2991平方公尺,為台灣第一座由官方經營,以書法藝術為主題的美術館,亦以向民眾收費參觀方式維持營運。
書法藝術館由建築師潘天壹設計,以公園為「硯台」、陂塘為「墨池」的意象發想,將建築外觀以書法篆刻之山型硯石為主體來組構。
基地由左至右以5個方盒子組成,包括展覽空間、館藏空間、教育推廣空間、商業空間、戶外展演場、行政空間及服務性空間等。
初步規劃除定期展出臺灣及國際書法篆刻名家作品外,亦兼具研究調查台灣書法歷史及向大眾推廣之功能,以呈現臺灣豐沛的書畫藝術創作能量。另為深化在地特色,部份展區規劃為大園尖山遺址展示區。
其他空間規劃為文創空間,預計以OT方式委外經營,讓民眾在欣賞文化藝術展覽及館區獨特的陂塘自然美景之餘,能將藝術帶入生活之中,體驗書藝生活美學。
完工後將結合青塘園旁的桃園市立美術館形成藝文廊帶,成為桃園地區休閒新景點和藝文新地標。
書法藝術館為2017年9月開工,預計2019年9月竣工,但由於諸多問題尚待解決,經桃園文化局追加預算改善後,力拼2021年秋季開館。
Dayuan Hengshan Calligraphy Park and Calligraphy Art Museum is located at the northeast corner of "No. 5-8 Pitang Park" in Qingpu District, at the junction of Section 2 of Dacheng Road and Daren Road. The area of the museum area is about 27,701 square meters, and it is 1 underground level. , A two-story building on the ground with a total floor area of 2991 square meters. It is Taiwan’s first officially operated art museum with the theme of calligraphy. It also maintains operations by charging the public for visits.
The Calligraphy Art Museum was designed by the architect Pan Tianyi. The park is the "inkstone" and the Pitang is the "inkstone".
The base consists of 5 square boxes from left to right, including exhibition space, collection space, education promotion space, commercial space, outdoor exhibition space, administrative space and service space.
In addition to regularly exhibiting works by famous Taiwanese and international calligraphy and seal carving masters, the preliminary plan also has the function of researching and investigating the history of Taiwan's calligraphy and promoting it to the public, so as to show Taiwan's abundant calligraphy and calligraphy artistic creation energy. In order to deepen the local characteristics, part of the exhibition area is planned as the Dayuan Jianshan Site Exhibition Area.
The other space is planned as a cultural and creative space, which is expected to be outsourced in OT mode, so that the public can bring art into life and experience the aesthetics of calligraphy and life while enjoying cultural and art exhibitions and the unique natural beauty of Pitang in the museum area.
After completion, it will be combined with the Taoyuan Municipal Art Museum next to Qingtang Garden to form an art gallery belt, which will become a new leisure attraction and a new art and cultural landmark in the Taoyuan area.
The calligraphy art museum started in September 2017 and is expected to be completed in September 2019. However, due to many issues that have yet to be resolved, the Taoyuan Cultural Bureau will strive to open the museum in the fall of 2021 after the additional budget has been improved.

3種の折りたたみおにぎらず
■明太クリームチーズ
2人分
材料:
明太子 1腹
クリームチーズ 30g
リーフレタス 10g
しらす 大さじ2
大葉 3枚
ごはん(炊いたもの)120g
のり 1枚
作り方:
1. 炊いたご飯は半等分し、片方にしらす、もう片方に刻んだ大葉を入れて混ぜておく。
2. のりの下半分にハサミで切り込みを入れたら、4つの面になるように左下からしらすご飯、手でちぎったクリームチーズと切り込みを入れて手で広げた明太子、シソご
飯、リーフレタスを時計回りに乗せる。
3. 最初にしらすご飯を乗せた部分を上に折りたたむ。次にクリームチーズ明太子の部分を右側にパタンと折りたたみ、最後に大葉ご飯の部分を下にパタンと折りたたんだら、ラップでしっかりと全体を包み、半分に切ったら完成!
■ゆで卵とサラダチキン
2人分
材料:
ゆで卵 1個
サラダチキン 15g
にんじん 15g
リーフレタス 10g
マヨネーズ 適量
ごはん(炊いたもの)120g
のり 1枚
作り方:
1. サラダチキンは食べやすい大きさに裂く。にんじんは千切りにする。
2. のりの下半分にハサミで切り込みを入れたら、4つの面になるように左下からご飯(60g)とマヨネーズ、ご飯(60g)とゆで卵、サラダチキンとにんじん、リーフレタスを時計回りに乗せる。
3. 最初にご飯とマヨネーズを乗せた部分を上に折りたたみ、卵が馴染むように手で軽くおさえる。次にゆで卵の部分を右側にパタンと折りたたみ、最後にサラダチキンとにんじんの部分を下にパタンと折りたたんだら、ラップでしっかりと全体を包み、半分に切ったら完成!
■スクランブルエッグとスパム
2人分
材料:
スパム 1枚(厚さ1cm程度)
卵 1個
アボカド 1/4個
油 少々
ケチャップ 適量
ごはん(炊いたもの)120g
のり 1枚
作り方:
1. アボカドは縦半分に切り、皮と種を除いたら7mm程度の厚みになるようにスライスする。
2. スパムをフライパンに乗せて油を乗せずに中火で加熱し、両面に焼き色をつける。スパムを取り出したフライパンに油をひいたら溶いた卵を加えて弱〜中火でスクランブルエッグを作る。
3. のりの下半分にハサミで切り込みを入れたら、4つの面になるように左下からご飯(60g)、ご飯(60g)とスクランブルエッグとケチャップ、アボカド、スパムを時計回りに乗せる。
4. 最初にご飯を乗せた部分を上に折りたたむ。次にスクランブルエッグの部分を右側にパタンと折りたたみ、最後にアボカドの部分を下にパタンと折りたたんだら、ラップでしっかりと全体を包み、半分に切ったら完成!

◆Mentai with cream cheese
Servings: 2
INGREDIENTS
1 piece Mentaiko
30g cream cheese
10g lettuce
2 tablespoons Shirasu-whitebait
3 perilla leaves (Shiso)
120g steamed rice
1 dried seaweed
PREPARATION
1. Divide steamed rice into two bowls. Mix Shirasu with one bowl. Mix chopped Shiso with another bowl.
2. Make a slit in the center bottom of the dried seaweed. Place Shirasu-mixed rice on the bottom left of the seaweed, cream cheese and mentaiko on top left, Shiso-mixed rice on top right, and lettuce on bottom right.
3. Fold in the seaweed with rice and fillings, staring from bottom left (Shirasu-mixed rice). Wrap tightly with a food wrap. Cut into halves.
4. Enjoy!
◆Egg and chicken salad
Servings: 2
INGREDIENTS
1 boiled egg
15g salad chicken
15g carrot
10g lettuce
Some mayonnaise
120g steamed rice
1 dried seaweed
PREPARATION
1. Shred salad chicken into small pieces. Cut carrot into thin strips.
2. Make a slit in the center bottom of the dried seaweed. Place half of steamed rice (60g) and mayonnaise on the bottom left of the seaweed, rest of the rice (60g) and the boiled egg on top left, chicken and carrot pieces on top right, and lettuce on bottom right.
3. Fold in the seaweed with rice and fillings, staring from bottom left (rice and mayonnaise). Wrap tightly with a food wrap. Cut into halves.
4. Enjoy!
◆Spam with scrambled eggs
Servings: 2
INGREDIENTS
1 slice (1cm) spam
1 egg
1/4 avocado
Some oil
Some ketchup
120g steamed rice
1 dried seaweed
PREPARATION
1. Cut the avocado into halves and remove the pit. Slice it into 7mm pieces.
2. Cook the spam in a pan over medium heat. Make sure to cook both sides. Heat the oil in the pan and cook the egg over low to medium heat.
3. Make a slit in the center bottom of the dried seaweed. Place half of steamed rice (60g) on the bottom left of the seaweed, rest of the rice (60g), scrambled eggs, and ketchup on top left, avocado slices on top right, and the spam on bottom right.
3. Fold in the seaweed with rice and fillings, starting from bottom left. Wrap tightly with a food wrap. Cut into halves.
4. Enjoy!
