Here’s my Oregon & Washington Blueberries Oatmeal Muffins recipe inspired by Georgen. ✨✨

Ingredients
200g Rolled Oats
200g Oregon & Washington Blueberries
50g Honey
½ tsp Baking Soda
1 tsp Baking Powder
¼ tsp Salt
2pcs Eggs
1 Banana
1 tsp Vanilla Essence
80ml Olive Oil
.
Methods:
1. Place the rolled oats in a food processor and blend until they form a fine flour, stopping and stirring occasionally.
2.Add baking soda, baking powder and salt to the oat flour and then mix well.Mash the banana with a fork in a big mixing bowl.
3. Add the eggs to the mashed banana, followed by olive oil, honey and vanilla essence. Stir until all the wet ingredients are well combined.
4. Pour the wet mixture into the dry ingredient bowl, and slowly stir until combined. Scoop the batter and distribute evenly into all the muffin liners.
5. Place a few Oregon & Washington blueberries and sprinkle some rolled oats on top to garnish. Bake in a preheated oven at 190°C for 20 minutes.
6. Test the doneness with a toothpick, when it's fully baked, there won't be any wet batter on it. Enjoy! 💯💯

オーブンでオートミール
6人分
材料:
ココナッツオイル(溶かしておく) 大さじ2 1/2
クランベリー(またはお好みのフルーツ)250g
オートミール 175g
クルミ(粗く砕いておく) 50g
ココナッツフレーク(無糖)20g+大さじ2
シナモン 小さじ1 1/2
生姜パウダー 小さじ1/2
塩 小さじ1
牛乳 480ml
メープルシロップ 55g+盛り付け用に少々
卵 1個
バニラエクストラクト 小さじ2
牛乳かヨーグルト(盛り付け用)
塩(盛り付け用)
作り方:
1. オーブンを180˚Cに予熱しておく。
2. 22x22cmの耐熱皿にココナッツオイル大さじ1/2を塗り、クランベリー190gを入れる。
3. ボウルにオートミール、クルミ、ココナッツフレーク20g、シナモン、生姜パウダー、塩を入れて混ぜ合わせる。
4. 別のボウルにココナッツオイル大さじ2、牛乳、メープルシロップ、卵、バニラエクストラクトを入れて混ぜる。(3)に流し込んでざっくり混ぜ合わせる。
5. (2)の耐熱皿に(4)を入れ、残りのクランベリーとココナッツフレークをトッピングする。
6. 焼き色がつくまで、オーブンで30〜40分焼く。
7. お好みで牛乳、ヨーグルト、塩、メープルシロップで盛り付けたら、完成!
Easy Baked Oatmeal
For 6 Servings
Ingredients:
2 ½ tablespoons coconut oil, melted, divided
2 cups cranberry(250 g), divided
1 ¾ cups old fashioned rolled oat(175 g)
½ cup walnuts(50 g), chopped
¼ cup unsweetened coconut flake(20 g), plus 2 tablespoons, divided
1 ½ teaspoons cinnamon
½ teaspoon ground ginger
1 teaspoon salt
2 cups milk(480 mL)
¼ cup maple syrup(55 g), plus more to serving
1 egg
2 teaspoons vanilla extract
milk, or yogurt, for serving
flaky sea salt, for serving
Preparation:
1. Preheat the oven to 350°F (180˚C).
2. Oil a 9x9-inch (22x22-cm) baking dish with ½ tablespoon of the coconut oil and add 1½ cups (190 g) of the cranberries in a single layer.
3. In a large bowl, mix together the rolled oats, walnuts, ¼ cup (20 g) coconut flakes, cinnamon, ginger, and salt.
4. In a separate bowl, whisk together the remaining 2 tablespoons coconut oil, milk, maple syrup, egg, and vanilla. Pour the wet mixture into the dry mixture and stir just to combine.
5. Pour the oat mixture over the cranberry layer in the baking dish and sprinkle with the remaining cranberries and coconut flakes.
6. Bake until the top of the oatmeal is set, 30-40 minutes.
7. Serve warm with milk or yogurt, flaky salt, and maple syrup, if desired.
8. Enjoy!

To all the vegans out there, I'm sure you must have had at least one person asking you "Where do you get your protein from?" or saying "You're NOT consuming enough protein!". I’m sure you’ll agree that this is NOT true.
There are lots of high protein plant-based food such as nuts and seeds, tempeh, tofu, soy, legumes, beans, quinoa, oatmeal, spinach and more. I've put together a high protein plant-based meal plan. Watch it and make them!
Your protein intake will vary depending on your activity level. But the general recommendation is 1g of protein per 1kg of body weight. For instance my body weight is 50kgs, so my daily protein intake should be around 50g. But because I’m active, I’ll up my protein intake to about 60 - 70g.

All these recipes can be prep ahead and you can keep them in the fridge for up to 3 days. Add two ¼ cup servings of trail mix as your snacks and you’ll be meeting your daily protein requirements of 70g protein and about 1700Cals.

Here it is, a Full Vegan Meal Plan for you to lose weight effectively or even to maintain your weight! You can try it even if you are not a vegan. =)
As Vegans / Vegetarians, it is important to have enough protein in your meals, hence all the ingredients I chose are high in protein.
As always, my meals are very quick and easily put together, with simple everyday ingredients. You can prep all the meals under 30 minutes or less.
Remember, you don't have to follow the recipe, be creative and make your own. Here are some alternative/examples of high quality and natural food to choose:
Complex Carbs: Brown Rice, Whole Grain Pasta, Oatmeal, Sweet Potatoes, Wholemeal Bread, Wraps, Pita Bread, quinoa, cous cous.
High Protein Food: Tofu, chickpeas, kidney beans, baked beans, any other beans, almonds, any other nuts, peanut butter, soy milk, almond milk, avocado, tempeh, seitan, lentils, soy yoghurt, edamame, oats.
Healthy Fat: Nuts, Olive Oil, Seeds, Beans, Avocado, peanut butter.
In order for this plan to be Effective, you are recommended to:
1) Prepare Your Food in Bulk lasting 2 -- 3 days to make it stress free.
2) These meals are interchangeable. So you can have your snack for breakfast, breakfast for lunch etc.
3) Only use and Prepare high quality and natural food. So no processed, junk food and ready meals at all.
4) Adjust the portion size and calories according to the product you use. Mine might be slightly difference from yours. So read the food label carefully.
5) You must drink 3-4L of water every day.
6) You must eat every 3 -- 4 hours throughout the day in small portion.
7) Make it a habit to plan and pack your meals the night before and store them in the fridge for the next day; this will make your mornings easier, which will help to keep you on track.
8) Print your meal plan and stick in on your fridge as a daily reminder to stay on track.
9) Keep a food dairy of what you eat and how you feel, which contributes towards your weight lost progress.
10) Exercise 5--6 times a week between 45 -- 60 mins for maximum result.
