記得10幾年前還在台灣的時候,每到下午3~4點公司的同事便會開始團購下午茶, 大部分的時間不外乎是蔥油餅、雞排加珍奶, 或是紅豆餅加紅茶, 想到這裡嘴又饞了。
在西方國家他們有分早茶(10am), 和下午茶 (3pm ), 通常他們會吃蛋糕配咖啡, 因此,這個coffee cake 咖啡蛋糕的由來不是因為裡面加了咖啡,而是它是用來配咖啡的。
如果你是一個不太愛吃甜食的人,又覺得歐美的蛋糕有時太甜了,那你可以試試我這個作法,因為我不是很愛吃甜食,而這個蛋糕吃起來偏鹹,我個人非常喜歡,有時朋友臨時來家裡,烤起來又超方便的,手動時間不到五分鐘,很適合用來對付不時之需。
首次嘗試錄音來介紹做法,因為沒有看稿子所以有點緊張,希望大家可以聽得懂。然後陶先生一直嫌我前五秒的聲音太像小孩,我跟他說老娘說中文就是如此音調,重點是我已經錄了200次才滿意,然後花了3個小時上傳,叫我刪掉重錄,那我乾脆按delete 鍵比較快。
8-12 塊
烤盤尺寸 33*22公分
食材:
低筋麵粉(cake flour)
2 1/4 量杯 (給濕蛋糕糊用的)
1/4 量杯 (給乾蛋糕糊用的)
紅糖 1量杯
白糖 3/4 量杯
鹽 1/2 茶匙 (加到1茶匙更夠味)
薑粉 1茶匙
肉桂粉 1茶匙 (給濕蛋糕糊用的)
肉桂粉 1茶匙 (給乾蛋糕糊用的)
蔬菜油 3/4量杯 (或玉米油、葡萄籽油)
白脫牛奶 (酪漿)butter milk 1量杯
一顆蛋
小蘇打粉 1茶匙
泡打粉 1茶匙
奶油 少許 (抹蛋糕烤盤用的)
My favourite coffee cake, the only companion I allowed for my ME TIME.
Make 8- 12 slices
Cake baking tray size: 33*22 cm
Ingredients:
2 1/4 cups cake flour - for the battery
1/4 cups cake flour - for the crumb topping
1 cup brown sugar
3/4 cup granulated sugar
2 tsp cinnamon
1/2 tsp salt - I prefer 1 tsp
1/4 tsp ginger
3/4 cup vegetable oil
1tsp baking powder
1 tsp baking soda
1 egg
1 cup buttermilk
Directions:
Preheat oven 176 C
1. Preparethebatter. Mix together 2&1/4cups flour, white sugar and brownsugars,1tsp cinnamon, salt and ginger.
2. Pour the oil and blend in until all well combined.
3. Remove 3/4 cup of mixture and set aside.
4. For the remaining flour mixture, add baking soda, baking powder, egg and butter milk. Blend until smooth. Pour into greased to a greased baking tray.
5. Make the crumb topping- to 3/4 cup of r served mixture, add 1/4 flour and 1 tsp of cinnamon powder. Sprinkle over the batter.
6. Bake in 176 (C)oven for 30-45minutes. Depends on your baking tray size and oven.
7. Serve warm or cold.

小英的英國菜小教室第二彈又來啦!這次他要分享他本人最喜歡的也最常烤的英式家常薑味蛋糕,不需要任何特殊工具,只要萬能雙手跟一支攪拌棒即可完成!
雖然這款蛋糕因不可抗拒之因素賣相不佳🤣但依然還是很好吃,不甜不膩帶點薑味,而且不會很乾還很有彈性!請務必搭配鮮奶油或冰淇淋一起享用唷!
快速文字版食譜:
麵粉 200g
棕糖/黑糖(質地很細的咖啡色糖,介在黑糖與白糖之間)200g
小蘇打粉 1茶匙
薑粉 1茶匙
綜合香料/肉桂粉 1茶匙
雞蛋 1顆
奶油 50克
金黃糖漿 2湯匙
熱水 240ml
作法:
1.全部乾料混合(麵粉記得過篩),加入奶油用手指搓成麵包屑
2.加入全部濕料,混合均勻
3.入烤箱180度烤35分鐘
4.靜置放涼,打發鮮奶油或準備冰淇淋搭配

Whole Egg .................... 3 Pcs
Egg Yolk ........... 1 Pcs
Butter .............. 60g
Water ............. 190ml
All Purpose Flour......1 Cup
Glutinous Rice Flour ...... 1 tsp
Baking Powder ............. 1/2 tsp
Sea Salt .......... 1/4 tsp
Condensed Milk.........1 tsp
Sugar ........... as much as suffices
Method
1. Whip the whole egg and egg yolk in a bowl.
2. Place water and butter into a sauce pan and warm with low heat. Turn off the heat once bubbling starts.
3. Place all purpose flour, glutinous rice flour, baking powder, salt and condensed milk into the sauce pan and mix until well blended.
4. Remove from stove and let it cool down a bit.
5. Divide the egg mixture into 4 portions. Add 1 portion each time and mix it all up with the dough.
6. Make a sphere shaped dough and deep fry on low heat.
7. Turn the dough from time to time, deep fry evenly.
8. Take it out once the dough expands and nicely brown.
9. When they are still warm, roll the puffs in sugar bed.
