Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

George’s father learnt the laksa recipe from the legendary Janggut Laksa owner and started peddling his Laksa along the streets before hawker centres were built. A bowl of laksa can only shine with a spicy coconut-based soup, which is the soul of this Peranakan dish. You can tell the difference in George’s all-important homemade laksa rempah (spice paste). His laksa gravy is complex, rich, delicious, and well balanced in taste. It also has a great texture.
The thick vermicelli is very smooth and chewy. George blanches it in the laksa gravy before topping it with fish cakes, cockles, bean sprouts, prawns and laksa leaves. You may opt to add a spoonful of the shop’s tasty sambal chili. Since the noodles are always cut short before serving, you don’t need a pair of chopsticks to wolf them down. Use a spoon to scoop up all the goodness.

春雨は短く切るよりもちゅるちゅる食べたくて、長いまま使っています。胡瓜はもっと沢山入れますが、今日は冷蔵庫に1本しかなくてがっかり、、バッタの私としてはあと1本は入れたいところ、、、。
薄焼き卵もたっぷり入れて、栄養満点^^
赤が入ると綺麗なので、カニカマか人参の千切りを加えますが、赤パプリカでも美味しいです。

【Ingredients】
2.8oz Harusame Noodles
1 Cucumber
1.4oz Kanikama
(crab stick)
*shred with your fingertips
3-4 slices Ham
●Dressing Ingredients
1tsp Chicken bouillon powder
1-2 tbsp Sesame Oil
2-3 Soy Sauce
2 Rice Vinegar
For Sprinkle:
1 tbsp Roasted Sesame Seeds
*Make Thin Omelette(Usuyaki Tamago)
2 Eggs
1 pinch Salt
1 tsp Katakuriko
2 tsp Water
* Vegetable oil
【Directions】
①Make Thin Omelette
Beat the eggs in a bowl. Add the katakuriko dissolved in water, and salt, then mix well.
Thinly grease a frying pan with oil, and Pour in the Step 1 mixture, and evenly spread it out. When the surface starts to harden, flip.
When cooked, remove from the pan, and let it cool and cut them into.
②Cook Harusame Noodles as instructed.
③Cut cucumber. microwave at 600w for 40sec.
Squeeze the Cucumber to remove excess water.
④Ham into thin strips.
⑤Combine all the Dressing Ingredients in a bowl and mix well.
⑥Place everything in a large bowl, add the Dressing and mix well.
⑦Sprinkle Sesame on salad.
To Store
You can store the leftovers in an airtight container and keep it in the refrigerator for up to 3 days.

春雨 80g
胡瓜 1本
かにかま 40g
ロースハム 3-4枚
●Dressing Ingredients
鶏ガラスープの素 小さじ 1
ごま油 大さじ 1-2
醤油 大さじ 2-3
米酢 大さじ 2
For Sprinkle:
白ごま 大さじ 1
*薄焼き卵
卵(M) 2個
塩 ひとつまみ
片栗粉 小さじ1
水 小さじ 2
* サラダ油
【作り方】
①薄焼き卵を作る。
卵を溶いて、塩と水溶き片栗粉を加えてよく混ぜる。
フライパンを熱し油を薄く引いてフライパンを回しながら卵液を均等になるようしながら焼く。表面が乾いたら裏返して数秒焼き取り出して冷ましておく。
***水溶き片栗粉は錦糸卵と同様、卵を破れにくくするために少量加えます。
②春雨は袋の指示通りにゆでる。
私は熱湯につけて5分ほどそのまま置いてからお湯を切り、よくお湯を切って使います。
③胡瓜は細く切り、袋に入れて600wで40秒レンチンしたら、水分を良く絞っておく。
***そのまま加えると胡瓜から水分が出て味が薄くなるので、最初に水分をよく絞っておくと良いです。
④ハムも細く切っておく。
⑤ボウルにドレシングの材料を入れてよく混ぜ合わせる。
⑥ここに材料を全部入れてよく混ぜ合わせる。
⑦器などに盛ったら上に白ごまをふりかけて出来上がり!
●保存
タッパーなどに入れて冷蔵庫で保存。作った日を含めて3日ほどで食べきりましょう。
容器から取り分ける時はその都度必ず綺麗なお箸を使いましょう。

We've been taught since young to embrace racial diversity and maintain social harmony. This is not only evident in our language - Singlish, which is a variety of English spoken in Singapore, incorporating elements of Chinese and Malay, but also the food that we eat. Spicy food is rather common in Singapore so when Sichuan cuisine is brought over to our shore, they immediately became a hit. Almost all the coffeeshops or foodcourts in Singapore these days have at least one stall selling Sichuan food. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. It's a really nice experience. Just prepare extra stock because we can guarantee you that a top-up is required. If you've never tried this yummy dish before, do give it a go.

星洲炒米
材料:
炒米粉1個
急凍蝦仁12隻
叉燒150克
雞蛋2隻
銀芽30克
三色椒少許
乾蔥頭2個
蔥少許
處理:
1. 急凍蝦仁,清水解凍。
2. 三色椒,去籽,清水洗乾淨,切條。
3. 乾蔥頭,去皮,洗乾淨,切碎,代替洋蔥。
4. 叉燒,切幼條。
5. 蔥,切段。
6. 蝦仁,解凍後,清水沖洗乾淨,廚紙索乾。
7. 蝦仁,用大地魚粉半茶匙調味,撈勻。
8. 預備咖哩醬汁:
a. 清水100毫升
b. 咖哩醬1茶匙,攪勻。
c. 糖1湯匙,攪勻。
烹調:
1. 大火在鑊中煲滾1鑊水。
2. 加入鹽半茶匙。
3. 放米粉煮1分鐘,至軟身,擎乾水,夾起放碗中,加入咖哩醬汁,撈勻,冚蓋,焗2分鐘。
4. 大火在鑊中燒熱油2湯匙。
5. 打勻雞蛋,倒入鑊中,煎成蛋餅,撥向鑊邊。
6. 放乾蔥頭、三色椒及叉燒落鑊。
7. 在鑊中切碎雞蛋,炒勻,撥向鑊邊。
8. 放蝦仁在鑊中心煎透。如油不夠,可加入少量,炒勻。
9. 夾起米粉,放鑊中,加入少許咖哩醬汁,炒勻。
10. 咖哩醬汁要逐少、逐少加入,才不會令米炒
粉過分軟身。
11. 在鑊邊加入生抽1湯匙,有焦香的味道。
12. 加入銀芽及蔥段。
13. 加入少量鑊尾油,炒勻。
14. 上碟,可享用。
Singaporean fried rice noodles
Ingredients:
Fried rice vermicelli 1 No.
Frozen shrimps 12 Nos.
Char siu 150g
Eggs 2 Nos.
Bean sprouts 30g
Tri~colour bell peppers little
Shallots 2 Nos.
Green onion little
Preparation:
1. Frozen shrimps, defrost with tap water.
2. The bell peppers, remove seeds. Rinse and slice.
3. Shallots, get them peeled. Rinse and chop.
4. Char siu, thinly slice.
5. Green onion, cut in lengths.
6. Shrimps, rinse after defrost. Dry with kitchen towel.
7. Shrimps, season with dried flounder powder 0.5 tsp, mix well.
8. Prepare curry sauce:
a. Water 100ml
b. Curry paste 1 tsp, mix well.
c. Sugar 1 tbsp, mix well.
Steps:
1. Heat up a wok of water at high flame.
2. Put 0.5 tsp salt in water.
3. Put rice vermicelli, cook for a minute until it turns soft. Hang dry, put it in a bowl. Mix with the curry sauce well. Cover it up for 2 minutes.
4. Heat up oil 2 tbsp at high flame in wok.
5. Beat 2 eggs well. Pour into the wok, make it as a pancake. Put it to side of wok.
6. Put shallots, bell peppers and char siu in wok.
7. Cut the egg pancake in small pieces. Fry well. Put it to side of wok.
8. Put shrimps in the middle of wok. If oil is not enough, just add a little. Fry well.
9. Pick up rice vermicelli, put in wok, add little curry sauce. Fry well.
10. Curry sauce, put into wok, little by little, this will not make the vermicelli to be too soft.
11. Put light soya sauce 1 tbsp alongside the wok to enhance the taste.
12. Put bean sprouts and green onion.
13. Add little oil, fry well.
14. Put on plate. Serve.
