By serendipity we found ourselves at another one of Chef Ton's ( of @ledubkk ) and brother Tam's joint, OK maybe more than coincidental considering it was the one of the small but notable collection of restaurants who swiftly opened their doors post restaurant-lockdown and thankfully they did! Couples could eat together in perfect harmony and families shared each other's company and plates in peace and safety.
Speaking of family, the restaurant's menu is all about family, it's even in the name! The dishes are inspired by the boy's grandparents and mother's recipes and if you poke your head upstairs, you'll find Thai " Pas' " (Aunties) tearing off fresh herbs and flipping piping hot woks. Legit and wholesome but not without a touch of glamour.
We loved the Lamb shank Massamam, the lamb was not melt-in-mouth, more like beefy-in-bite, meaning it had great chew and texture and without being "sous vide" into oblivion, but that secret Massamam sauce was the magic trick.
When we go, I am simply compelled to order the Thai fish cake . Something akin to my childhood memories, of Grandma making piles of them to snack on at any time of the day. Bouncy, sharp, herbaceous. @baanbkk version is a slightly fancier version which is garnished with fried kaffir lime leaves.
Another recommendation to make is the prawn dish, pretty much any prawn dish. Selecting and cooking prawns is just one of those things Chef Tons and his team does best. If it's a matter of indulging in a sophisticated yet casual Thai meal, then Baan Thai Family Recipe is pretty much the no brainier.

A wholesome bowl of goodness, poke bowls are nourishing, tasty, and a whole lot of fun to make too! We created a spicy mayo version of this dish for you the guys who like salmon and spice at the same time.
For fuller flavors, we cut the salmon into nice chunks of ¾ inches, and mixed it all with our spicy mayo sauce. We used Kinmemai Better Brown for it’s excellent quality. With the rice polishing technology used, you can now enjoy a fine texture while preserving all its vitamins and nutrients.
Mouth watering goodness at it’s best, sprinkle seaweed flakes, black and white sesame seeds on top and done!

[MAPO TOFU]
Mapo tofu (麻婆豆腐) is a popular Chinese dish from Sichuan. This dish consists of tofu set in a spicy sauce, based on fermented broad bean paste and chilli paste, along with minced meat, usually pork or beef.
The naming origin of mapo tofu is very interesting. During the Qing Dynasty, there was a lady from Chen family who first created the dish in their restaurant. As this lady had poke marks on her face, people started calling her Chen Ma Po (陈麻婆) and named the dish mapo tofu. 😂😂

Happy New Year ! It is MosoGourmet's 10th anniversary this year !
We liked out Whole Strawberry Daifuku video and are recent Mandarin Orange Raindrop Cake video was also very well received, so this time we decided to make daifuku with whole tangerines! The tangerines are put through a lot by being boiled and cooled with water twice, but the result is a really fresh tasting sweet. We've got whole series of whole fruit daifuku on our hands!
* Recipe * (Makes 3 tangerine daifuku)
Peel the tangerine neatly
1. Boil water in a pot.
2. Turn off the heat, place 3 tangerines (small tangerines, approx 70g each) in the water and cover with a lid.
3. Place in cold water
4. When they have cooled down, peel the skin off from the top downward.
5. Color 50 mL of water with orange food coloring.
6. Mix one tablespoon of sugar into 55g of rice flour.
7. Add the colored water into the flour mixture slowly, kneading as you go. Adjust the amount of water to make it as hard as your ear lobe.
8. Divide into 3 pieces (approximately 35g each).
9. Make them into a circle, add 5g of white bean paste and wrap up the tangerines prepared in step 4.
If it's hard to wrap the the tangerine, it may help to wet your fingers with the water remaining from step 5.
10. Poke small holes in the daifuku with a toothpick.
11. Place in boiling water for 4 minutes,including the baking paper. You may boil them a little longer if you're worried.
12. Place in cold water to cool down.
13. Decorate with mint leaves.
14. It's time to eat! Because they're sticky, it's best to wet your hands before eating or hold the baking paper.

丸ごといちご大福に続いて、茹でて作る丸ごとみかん大福、作りました。2回茹でられ、水にも2回入れられるという試練に耐えた みかんですが、できあがりはフレッシュな味わいです。丸ごと大福、シリーズ化の予感。(正確には白玉なのでなんちゃって大福ですね。)
*レシピ*(3みかん大福 分)
みかんの皮をきれいに剥きます
1.鍋に湯を沸かします。
2.火を止め、みかん 3個(Sサイズ 1個 およそ70g)を入れフタをして5分待つ。
3.冷水に取る。
4.粗熱が取れたら、上部分から下に向かって皮を剥く。
5.水 50mlを食用色素でオレンジに着色する。
6.白玉粉 55gに砂糖 大さじ 1 入れ混ぜる。
7.6に5を様子を見ながら加え、こねる。耳たぶくらいのかたさになるように水の量を調整する。
8.7を3等分にする。1個およそ35g。
9.8を丸く広げ、白あん 5gをのせ、4のみかんを包む。
包みきれないときは、生地を付け足し、余った5を指で付けて均すとよい。
10.爪楊枝で9に点々をつける。
11.オーブンシートのまま、沸騰したお湯で4分弱茹でる。心配ならばもうちょっと茹でてください。
12.冷水に取り冷ます。
13.ミントの葉を飾る。
14.いただきます。くっつきやすいので、手を濡らしたり、オーブンシートを活用したりすると良いです。

SAUCE RECIPE (serves 2)
1. 1 tbsp. Soy Sauce – 6Cals
1. ½ tsp. Rice Wine Vinegar
3. ½ tbsp. Fresh Lemon Juice – 3Cals
SALMON SASHIMI ON WILD RICE
1. 1 cup Cooked Rice, I used wild rice – 215Cals
2. 1/3 cup Raw Salmon, cut into cubes – 60Cals
3. ¼ Avocado, cut into cubes – 65Cals
4. ¼ cup Steamed Edamame – 47Cals
5. ¼ cup Mango, cut into cubes – 27Cals
6. 1 Scallion, finely chopped – 5Cals
Marination
7. 1 tsp. Sesame Oil – 40Cals
8. 1 tsp. Soy Sauce – 3Cals
9. ½ tsp. Sesame Seeds – 15Cals
PER SERVING – 465Cals
Steps:
1. Start by marinating the salmon. In a small bowl, mix the soy sauce, sesame oil and sesame seeds.
2. Pour mixture over the salmon, coat and let it sit for about 15 minutes.
3. Then all you have to do is assemble the dish in a bowl.
4. So always start with the base, which is the rice, the arrange the rest of the ingredients.
5. Drizzle with a little bit of sauce and serve.
SAUTEED PRAWNS ON GLASS NOODLES
1. 80g Glass Noodles – 135Cals
2. 1/3 cup Prawns, peeled – 66.5Cals
3. ¼ cup Purple Cabbage, shredded – 4.5Cals
4. ¼ cup Cherry Tomatoes, halved – 7Cals
5. 2 tbsp. Cucumber, sliced – 4Cals
6. 1 tbsp. Toasted Seaweed, shredded – 2Cals
7. ½ tbsp. Sesame Oil – 60Cals
Marination
8. 1 tsp. Soy Sauce – 3Cals
9. 1 tbsp. Rice Vinegar
10. ½ tsp. Garlic, minced – 5Cals
11. ½ tsp. Sesame Seeds – 15Cals
PER SERVING – 308Cals
Steps:
1. Let’s start by prepping the noodles. In a large bowl, place the noodles and pour enough boiling water over the noodles. Cover and let it soak for 10 - 15 minutes until the noodles are soft and drain.
2. In a small bowl, mix the soy sauce, rice vinegar, garlic and sesame seeds.
3. Pour mixture over the prawns and allow it to marinate for 5 minutes.
4. Next, heat sesame oil over medium-high heat. Add the marinated prawns and cook very quickly just for about 4 – 5 minutes until the prawns are pink. Don’t overcook them!
5. Time to assemble the dish! Again, always start with the base, which is the glass noodles, and arrange the rest of the ingredients.
6. Drizzle with a little bit of sauce and sprinkle the toppings.
MARINATED TOFU ON QUINOA
1. 1 cup Quinoa, cooked – 222Cals
2. 1/3 block (100g) Firm Tofu, drained, cut into cubes – 62Cals
3. ¼ Avocado, cut into cubes – 65Cals
4. ¼ cup Carrot, shredded – 11Cals
5. 2 tbsp. Corn – 33Cals
6. 2 tbsp. Cucumber, sliced – 4Cals
Marination
7. 1 tsp. Sesame Oil – 40Cals
8. 1 tsp. Soy Sauce – 3Cals
9. ½ tsp. Sesame Seeds – 15Cals
10. ½ tsp. Garlic Clove, minced – 5Cals
11. ½ tsp. Red Pepper Flakes
Sauce:
PER SERVING – 435Cals
Steps:
1) Start by marinating the tofu. In a small bowl, combine the soy sauce, sesame oil, garlic, sesame seeds and red pepper flakes.
2) Coat tofu and leave it to marinate for 5 – 10 minutes.
3) My favourite part, time to put this dish together!
4) So we got the quinoa, tofu and all the vegetables!
5) Pour sauce mixture sprinkle with sesame seeds and serve!
Each bowl is packed with complex carbs, clean protein, lots of vegetables and healthy fat. You can keep experimenting with different toppings so you won’t feel bored eating the same dish over and over again.
