Bratkartoffeln is a popular dish in every German household. Yes, it is very difficult to pronounce (brat-kah-toff-len) translates as "fried potatoes" and it's indeed pan-fried potatoes, bacon, onions, and seasoning. I don't eat bacon, so I did it without most of the time. It will taste as great still. Another dish which will make you fall in love forever. Trust me, if it isn't making u love again, please ask me to buy u a drink! :P
Trust me, it is so easy to prepare and cook. JUST time consuming. Normally it takes me 1 hour to cook the potatoes. Slow cooking is the best!
Ingredients :
. MANY potatoes. I used 4kgs of Potatoes.
. A lot of FAT aka BUTTER. 1 to 1.5 blocks of unsalted butter
. 2 whole finely chopped onions
. Salt to taste
. Black pepper
You may also add some marjoram & chopped bacons.
Some nice tips:
- Potatoes can be cooked several hours ahead. You must boiled whole potatoes for 20 mins and not less. In fact, this dish is often made with leftover potatoes.
- In Germany, these potatoes are traditionally served with fried sunly side up eggs, pickles, and green salad.
- If you're using a nonstick pan, the potatoes will need a lot of butter to brown properly.
- Cook the potatoes on medium low fire after the onion turn golden. Turn/flip the potatoes slices gentlely and not as often but watch out, don't let them burn.
- If you are a vegan, use oil instead of butter.
- The potato slices will turn brownish and crispy on the edges. It means they are ready!
I learnt this dish from Oma- German Grandma of my kids. She is such a good cook. Eventhough I dont't speak German, I still managed to learn from her. Glad I did, my kids love this dish and miss their Deutsch homeland too.

從中醫角度來看,番薯性平,有健脾胃、補氣血、通便秘的功效,是健康的粗糧選擇,亦是減肥恩物,脾胃虛弱、氣血兩虛體質人士亦適合食用,尤其習慣性便秘者,要注意過量食用易引起胃氣、放屁等。糙米是未去除外皮的稻米,纖維量較白米多,亦是適合瘦身人士適量食用的粗糧選擇。
根據中醫古籍《黃帝內經》的「子午流注圖」,下午5時至7時腎經當值,是最佳的晚飯時間,晚上7時至11時宜休息及準備睡覺,所以下午6時後禁食能讓脾胃有足夠時間消化食物,這種減肥方法符合中醫養生原則,體重亦不易反彈。
番薯 — 性平,能健脾胃、補氣血,亦有通便秘的功效。適合脾胃虛弱、營養不良、氣血兩虛、產後或習慣性便秘者食用。

Sweet Potato- mild in nature, can strengthen the spleen and stomach, replenish qi and blood, and suitable for constipation relief. It is suitable for those with asthenic spleen and stomach, with lack of nutrients, with asthenic qi and blood, with chronic constipation, or postpartum ladies.

瓜納華托│彩色山城裡找素
距離墨西哥城四個多小時,便會到達這個「彩色山城」 - 瓜納華托 (Guanajuato)。這裡很少vegan餐廳,但不代表他們不注重,可能只是需求還沒有很大。但我們很幸運遇到Escarola,雖是肉食餐廳,但主要賣的卻是蛋奶素食,也有部分純素選擇!
特別喜歡蠶豆湯,剩最後一份被我們買了,幸好!另外推薦大啡菇薯仔配沙律,煎過的大啡菇,特別香,又多汁。雖說是沙律,但主要是大啡菇和薯仔,綠葉菜的比例不多,還加了幾片牛油果,很適合不好沙律的我啊!
室外用餐區更有置身大自然的感覺呢!而且可以通往旁邊的環保手藝小店 - Mercadito Escarola,店裡擺放著各式各樣的手藝、小盆栽、環保工具,我更在這裡找到了目前最喜愛的Kombucha (康普茶)!還特意從當地帶了一瓶回港,到現在也不捨得把它喝掉。

Guanajuato│Looking for vegan places in this Colorful Mountain City
About four hours away from Mexico City, you will arrive at this "colorful mountain city" - Guanajuato. There are very few vegan restaurants here, but it doesn't mean they don't care, it may just be that the demand is not great yet. But we were lucky enough to meet Escarola. Although it is a meat restaurant, it mainly sells vegetarian food, and there are also some vegan options!
I especially like the broad bean soup. We bought the last one. LUCKY! Also recommend the brown mushroom potato with salad, the fried brown mushrooms are particularly juicy. It doesn't look like a regular salad, because it is mainly brown mushrooms and potatoes. The proportion of green leafy vegetables is not much. A few slices of avocado are added, which is very suitable for me who is not a salad person!
The outdoor dining area feels more in nature! And you can go to Mercadito Escarola, a small eco-friendly craft shop next to it. Japanese Potato Salad
Difficulty: Easy
Time: 30min
Number of servings: 4
Ingredients:
300g (10.5oz.) potato
50g (1.8oz.) carrot
50g (1.8oz.) onion
50g (1.8oz.) cucumber
2 slices of cooked ham
1/2 cup whole kernel corn (canned)
4 tbsp. mayonnaise
1/2 tbsp. vinegar (rice or grain)
salt and pepper
Directions:
1. Slice the onion, sprinkle with a bit of salt, and leave for 2~3 minutes until limp. Wash and drain well. Use a paper towel to squeeze out any excess water. *This removes the bitter taste and strong smell of the onion.
2. Slice the cucumber into thin rounds (you can use a vegetable slicer if you have). Sprinkle with a bit of salt. When they become limp, drain well and gently squeeze with a paper towel. *Removing excess water from the cucumber will keep the salad from becoming wet.
3. Cut sliced ham into 1/2 inch (1cm) square pieces. Slice the potato into 1/2 inch (1cm) half rounds. Place the potato slices in a pot, lightly wash (to remove extra starch), add water until covered, add 1/2 tsp. of salt, and put on high heat. When it becomes to a boil, turn down to medium and cook for about 12 minutes. 4. Check the potatoes with a skewer. When they are done, drain well, transfer to a bowl and mash with a fork while they are still hot. Season with 1/2 tbsp. of vinegar, salt and pepper. *The seasonings will make the potato tasty.
5. Slice the carrot into 0.1 inch (3mm) quarter rounds. Boil for 3 minutes and drain well.
6. When the potatoes and carrots are cool enough, combine all the ingredients in one bowl and season with 4 tbsp. of mayonnaise, salt and pepper.
