1.【新鮮食材】 – 我們介紹的這六家壽司料理每個星期最少兩次,最多四次從東京,仙台,北海道等等引進新鮮海產,米飯,當季蔬果。我们每一次到访多尝试到很多的特别食材,例如【鳕鱼精子,河豚,皇后蟹,鮟鱼肝】等等。
2. 【壽司師父】 - 在日本傳統壽司店,一名生手學徒第一年通常只能做一些清潔打掃的基本工作,第二年可以開始學切菜,第三年學習有關魚貨的準備工作,第六年開始學煮飯,第八年才能真正開始學習製作壽司,一直要熬到第十年才會獲准站上壽司檯,直接服務客人。
