Lai Yee's Kitchen - Spicy Taucu/Fermented Soybean Paste Steamed Fish 酱蒸鱼
I love my food with gravy. When you have fresh fish, steaming them with sauce is the best way to enjoy. Steamed fish are healthy, easy to prepare and extremely delicious. It is even more so when paired with a simple fermented bean paste sauce. You can use this recipe to steam other types of fish like cod, grouper, red snapper, trout or bream and Nile Tilapia. Simple, fast and super comfort!
Ingredients :
- 1.5kgs snapper
- 2 tbsp oil
- 2" ginger or more(sliced)
- 2 medium size red onions
- 2 whole garlic
- 8 cut chili padi
- 4 stalks coriander with roots
- 5 tbsp taucu/fermented soy bean paste
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1/2 tbsp white pepper
- 2 tbsp cooking rice wine (optional)
- 2 big lime juice or 3 tbsp juice(I have added the lime pulp too)
- 2 tbsp sugar
- cut spring onions for garnishing
If your fish is not big or thick, you need just 8 mins of steaming with the fire stove. If you are cooking with an induction stove like mine, then you need 15 mins of steaming. If you have a big fish, then you will need slightly longer BUT not too long. Make sure you boil the water in the wok before you put the fish to steam.
You can also fry the sauce ingredients in a wok first with oil. Steam the fish without any sauce, once the fish is ready then pour the fried sauce over. This way is equally delicious. Try it! I love 酱蒸鱼 Spicy taucu steamed fish!

Porridge 🥣 represents ultimate comfort served up in a bowl for people of all walks of life. It’s relatively simple to make, warming and filling. A big bowl of porridge can help increase the running speed of your internal motor in the morning, help you unwind after a long tiring night or even cure your hangover after a night of heavy drinking. The beauty of porridge boils down to the different ways it could be made. It can be prepared sweet, savoury, thin and thick with toppings/condiments or without. This humble dish is best served warm, my favourite version of porridge would be “JUK” 粥congee. Besides being featured often as a breakfast dish served in Asian households, 粥 also being served as a main meal with the addition of meat & vegetables. Depending on which country & region you are from, the addition of toppings/ condiments range from pickled vegetables, eggs to even fermented tofu to add flavours to the congee. I don’t have any porridge selfie to celebrate World Porridge Day today but hoping these few snippets of Congee could express a little bit of the world I grew up in. I believe that we all grew up eating all sorts of savoury congee - from Plain, Spinach, Fish, Pork, ABC to 皮蛋瘦肉粥. The congee list is endless here and this is really the beauty of it. My favourite version of porridge would be the Asian Congee as said above. Some porridge lovers add milk to their porridge, while others are content with just water.

As I type this, I'm currently in Hong Kong in our little apartment =) It feels so surreal to be back. In fact, we just ordered McDonalds home delivery and it's 2.35am!!! MAN I MISSED HONG KONG!
Ibiza was amazing! Big thank you to Skin Inc for having me. So happy to be back with the family. Will be even happier to see my dogs again soon. Stay tuned for Hong Kong vlogs to come hehe! I know you guys missed the HK back drop a lot hehe.
As the video title says, Tim and I do not have a perfect relationship. Too often I see you guys put #marriagegoals in the comments when in truth- we have have our fair share of ups and downs. I used to boast that we aren't the argumentative types.... that was until Isaac was born and Tim and I started to clash more. We clashed mostly when it came to our parenting methods. These days, I am seeing things more in Tim's eyes. I've always been so stubborn that my method is the right way. Maybe he is right. I need to step back more so Isaac learns to depend on other people more and most of all, himself.
I landed this evening and it's been amazing spending quality time with the family. Once Isaac got to bed, Tim and I had a 2 hour chat reminiscing our pre-baby times and just how amazing it was. But then we smiled so much sharing all the cute stories of Isaac. We may have lost sleep and free time along the way but we have gained so much more. I'm feeling very thankful for my family tonight.
