Stuffed roast turkey 聖誕烤釀火雞
(Serve 10-15)
1隻火雞 (超市有售 Tasty, city ultra etc)1 Free range turkey (ideally Norfolk Black or
Bronze)
鹽, 即磨黑胡椒Salt and freshly ground black pepper
2個洋蔥 onions, 開半
1個檸檬 lemon (orange), 開半
1 整個蒜頭 garlic, 打橫切開
2個蕃茄切碎tomato cubed
6 塊月桂葉 bay leaves
橄欖油Olive oil
8 塊煙肉 smoked streaky bacon
1 罐白腰豆 cannellini beans
小紅莓果醬 cranberry jam (配熟火雞肉)
8條煙肉bacon
檸檬, 蕃茜, 蒜蓉牛油Lemon, parsley and garlic butter:
375g 牛油butter, 放置室溫
1 湯匙橄欖油 olive oil
2個細檸檬汁和青Finely grated zest and juice of 2 small lemons
3 瓣蒜頭garlic cloves,
1 細束蕃茜葉Small bunch of flat leaf parsley, leaves only
1) 火雞解凍至室溫
2) 預熱焗爐至180度
首先,準備香草牛油
1) 將牛油放入大碗
2) 加入黑椒、鹽、蕃茜及一湯匙橄欖油調味
然後,準備火雞
1) 將火雞內臟取出
2) 在火雞內腔加入鹽及黑椒
3) 用手拉開火雞皮下組織至皮肉之間的空隙,如有需要使用小刀切開尾龍骨位
組織
4) 將切半洋蔥、切半蒜頭、切半檸檬、月桂葉、百里香及迷迭香塞入火雞內腔
5) 用手伸入火雞皮,並將牛油平均塞入全身的皮肉空間
6) 在火雞面上加上鹽及黑椒調味
7) 將火雞放上烤架,預備底盆盛載流出來的雞汁
8) 先將火雞以180度烤兩小時,如火雞面顏色變金黃,可於火雞面加上鍚紙以
防過度變色
9) 如想火雞更入味,可於烤焗時將底盤內的雞汁不時淋面
10) 烤焗兩小時後取出火雞,先將火雞內腔的材料取走,然後於火雞內腔塞入
白腰豆,並再次放回材料,最後在火雞雞胸面鋪上煙肉條
11) 再次放火雞入焗爐以180度烤一小時
12) 取出火雞,用竹籤插入火雞脾最厚肉的位置,如流出來的雞汁為粉紅色,
代表未熟
13) 火雞於室溫靜止三小時
Stuffed Christmas turkey bean 聖誕火雞釀豆
1) 取出火雞內的所有材料切碎
2) 所有材料加入平底鑊,加入雞汁及雞油(如雞油過多可以隔走)
3) 用慢火將汁收至一半,加入蕃茄後可將汁變杰
4) 將全部材料放入焗盤,用150度焗至乾身
