Ingredients
2 tablespoons Anchor Butter (Salted)
3/4 cup Brown Sugar
1/4 cup Full Cream
1 teaspoon Vanilla Essence

1. Melt the butter in a medium heat, add the brown sugar and full cream milk stir the mixture until it's well blended. Then add vanilla essence. Bring the mixture to a boil. Tips: the butterscotch thickens as it cools, so don’t over-boil or make it too thick.
2. Transfer the butterscotch sauce to a container to cool.

山藥煎餅
材料:新鮮山藥半條、麵粉或地瓜粉3至4湯匙、鹽適量
做法:
1. 新鮮山藥去皮磨成蓉,注意要戴手套處理,因為山藥黏液會刺激皮膚引致痕癢。
2. 逐少加入麵粉或地瓜粉拌勻至稠身,加入適量鹽拌勻調味,搓成小餅狀。
3. 燒熱油鍋,加入山藥餅煎至兩面金黃色及熟透即成。
山藥/淮山 — 性平,具補腎精、健脾胃、補肺氣功效,適合肺腎兩虛的慢性咳喘、氣短哮鳴、脾胃虛弱引起的腹瀉、遺精盜汗、夜尿頻多者食用。要注意容易便秘者不宜食用。

Preparation:
1. Peel Chinese yam and mash. Handle it with gloves on as the fresh Chinese yam’s slimy mucus-like substance may irritate the skin and cause itching.
2. Add flour or sweet potato flour gradually and mix well until thicken. Add salt to taste and knead into small pancakes.
3. Heat the pan with oil, add the pancakes and pan-fry until golden brown and cooked.
Chinese yam - mild in nature, can strengthen the spleen and nourish the stomach, replenish the lungs and promote fluid production. It is healthy for those with weakened spleen and stomach, chronic cough and asthma, diarrhea caused by weak spleen and stomach, nocturnal emission, night sweats, and frequent nocturia. It should be noted that people who are prone to constipation should not eat it.

Good morning!
How was your weekend? We celebrated Easter w a little homemade Sunday brunch.
We have had a lot of one-pot meals so this “fancy” smorgasbord brought a lot of smiles. We even dressed up (and matched!) in our Easter dresses.
To celebrate, I wanted to share w you a favorite pancake recipe I inherited from my sister-in-law in Wisconsin.
I love that the cousins get to stay connected over their love of pancakes and the mamas that love them!
It’s simple, one mixing bowl joy. We subbed the vegetable oil for coconut oil today and it ended up runnier but also a lot yummier! It’s sweet so you can even get away without any maple syrup.
You can half the recipe for a smaller batch but my favorite #kacaumamahack is to do all the work and dirty the kitchen once so I make a large batch then freeze the leftovers for easy breakfast and snack options!
The other hacks are that I cook the bacon and sausages at the same time in the oven (bacon on a rack, sausages at the bottom 400f for 20-25mins) no need for oil splatters and clean up or watching it so it doesn’t burn and the tomatoes, spinach, mushrooms all go in the same pan too. Cut up some fruit and throw it on a cutting board and TADAH!!! 🎉🎉
My husband also created a pancake avo taco this weekend and is very proud of himself. 😂❤️

ShuangLi’s Yummy Homemade Pancakes
2 cups flour
1/4 cup sugar
1tbsp baking powder
1/2 tsp salt
2 eggs
1/4 cup vegetable oil
1 1/2 cups milk
1. Whisk all the dry ingredients together before adding in all the wet ingredients and mixing it together.
2. Over medium to low heat, melt a little butter and swish it around the pan.
3. Pour pancake mix into the pan. I usually use a 1/8 cup for silver-dollar sized pancakes. You can also pour into an empty ketchup bottle to make intricate designs or just slap some on there with a ladle if you don't really care. 🙂
4. Pancake is ready to be flipped when lots of bubbles form on the surface.
5. Let the other side brown and of course, taste test as you cook. 😉
Ps. It’s a little bit messier but sometimes I even add in dark choc chips 😍😍 or blueberries!

【Ingredients】1 Pancake mix bag
140g Cake flour
7g Baking powder
25g Cane sugar(or Granulated sugar)
●In a zip bag or air-tight container, mix the flour, baking powder, sugar.
(You can save the mixes in the freezer)
to cook one diy pancake mix bag:
1 Egg(50g)
8g oil
50g Plain yogurt
90g Milk
1 Pancake mix bag
Mix the ingredients in order from the top.
Finally, add the pancake mix and mix.
Cook in a frying pan until golden brown on both sides.

【作り方】
①ボウルにホットケーキの材料を上から順番に入れて泡立て器でぐるぐる混ぜる。
②最後にホットケーキミックスを全量加えて、粉っ気が無くなるまで混ぜる。
③フライパンを強火で熱してから弱火にしてうすく油をひき、両面きつね色に焼く。
焼き始めてから表面にぽつぽつと空気の穴が出てきたらひっくり返します。
***甘さ控えめですので、ハムやウィンナーをサンドして食べても
美味しいです。
今回はちいさめに焼きましたが、15cm位の大きさで数枚焼いて
休日の朝食にもどうぞ^^

【Ingredients】
1 Egg yolk
20g Milk
Vanilla oil
20g Cake flour
1/2tsp Baking powder
1 Egg white
15g Granulated sugar
*for topping
Lemon cream:
1Egg yolk
45g granulated sugar
15g Cake flour
25g Lemon juice
100g Water
*non melting powdered sugar
whipped cream,Honey lemon
【Directions】
Make the lemon custard cream in the microwave.
①Combine the sugar and egg yolks.
②Add a squeeze of lemon.
③Add the sifted flour into Step 2, and mix without making lumps.
④Add the water into Step 3 , and mix well.
⑤Microwave for 90sec. Take it out, and stir well.
⑥Then microwave for another 90 sec.
⑦Take it out, and stir well, stir well until the mixture is no longer lumpy.
⑧Cover with plastic wrap, and chill in the fridge.

Make pancakes
①Separate the egg into egg yolk and egg white. Cool the egg white in the freezer until its edge is a little frozen.
②Add milk, shifted cake flour, and baking powder to the egg yolk, and mix well.
③Beat the egg white ① with a hand mixer at the high speed until the meringue has tips.
(Add sugar some by some for 3 times)
④Add some of the meringue ③ into ② and mix with a rubber spatula, then put it into the bowl with meringue, and mix softly not to crush the meringue.
⑤Heat your pan with medium heat and oil a frying pan lightly.
⑥Turn heat lower.
⑦Scoop the mixture and put it thickly on the frying pan.
⑧Cover and cook on low for 3-4 minutes.
Flip pancakes when bottoms are golden brown and bake it as well.
⑨Cover and heat for 2 minutes on low.
⑩Put the cake on a plate, decorate it with whipped cream and powdered sgar, and drizzle lemon custard cream on top of the pancakes.

It easily burns, bake it at a low heat!
Don't use more cake flour, the amount makes a nice cake.
Depends on how hard the meringue is, the fluffiness of the cake changes.
If you like to have melting mouthfeel, make the meringue to have the tips making a bow.

⑦バットなどに移して上にラップをぴったりと貼り付ける。
⑧粗熱が取れたら冷蔵庫で冷やす。
*保冷剤などを下に敷くと比較的早く冷ますことが出来ます。
パンケーキを作る
①ボウルに卵を卵黄と卵白に分けて、卵白は冷凍庫に入れて、卵白の周りがしゃりっとするくらいまで冷やす。
②卵黄には、牛乳、ふるった薄力粉、ベーキングパウダーを加えてよく混ぜておく。
③①の卵白をハンドミキサーでほぐして、高速でツノがたつくらいまで立てる。
(途中三回に分けて砂糖を加える)
④②に③のメレンゲを少し取って、ゴムベラで混ぜたら、これをメレンゲのボウルに移してメレンゲを潰さないように混ぜる。
⑤中火でフライパンを温めて、薄く油を塗る。
(テフロン加工の場合は油は塗らなくてok)
⑥弱火にする。
⑦フライパンに生地をすくってこんもりと乗せる。
⑧ふたをして極弱火で3-4分焼く。
きつね色になるくらいに焼けたらひっくり返す。
⑨ふたをしてさらに2分ほど焼く。
⑩お皿にパンケーキを盛り付け、ホイップクリームを乗せ粉糖をふりレモンクリームを絞って出来上がり!
*あればレモンのはちみつ漬けを飾るとパーフェクト♡
