Lai Yee's Kitchen - Rice Paper Chee Cheong Fun and rice paper crackers
Too much work to make your own Chee Cheong Fun at home or miss having Dim Sum? Here is a great tip I have learnt from @jeanabeanstudio today. It is fun and easy to make. Good try! Cheong fun (肠粉) is on the menu of every Dim Sum restaurant. Cheong fun has a light and soft texture, non-oily, and is served hot right from the steamer. You only need simple ingredients to make it, primarily a batter of rice flour and some shrimp and char siu, or served right with a savory sauce consisting of premier-grade soy sauce and some sugar. BUT if you do not have the right steamer or patience, you won't even bother to make it yourself. Try this Jean's way. Damn easy and works well for me. JUST use those Vietnamese's rice paper for spring rolls! I have even gone a little further by showing you what else you can use these rice papers besides making into spring rolls or cheong fun. My fillings are more like the Ipoh's style cheong fun. Ok Jom!
Ingredients for filling:
. 2 carrots, shredded
. 100g minced ginger
. 1 whole garlic, finely chopped
. 500g minced chicken
. 2 tbsp oyster sauce
. 1 tbsp soy sauce
. 2 tsp white pepper
. 1 tsp sesame oil
. Oil
For Cheong Fun:
. The cooked filling
. Rice papers
. 2 eggs, beaten
. 1 cup Chopped coriander or spring onions
. A bowl of hot water to soften the rice papers
. Oil for rolling the cheong fun
. Water
For Rice Paper Crackers :
. The cooked filling
. Oil for deep frying (must be super hot to achieve the best result)
. Rice papers
For Sweet Sauce :
. 5 tbsp Hoisin sauce
. 1 tbsp soy sauce
. 1 tbsp oyster sauce
. 1 tbsp minced garlic
. 1/2 tbsp minced ginger
. 1 tsp white pepper
. 1 tsp sesame oil
. 1/2 cup water
For Garnishing :
. Chopped Spring onions or coriander
. Fried Shallots
. Toasted sesame (it is good to have)
One filling, two ways of serving it. Fast, easy and appetizing meal for a weekend or a lazy day! Make sure you have really nice spicy sauce to drizzle over the crackers and cheong fun. I had my Mel's Kidnap Me Sauce on standby. I am happy! Thanks Jean for sharing, it works!

西蘭花炸粉夠薄身,口感好似食緊韓式炸雞咁,

▫ 跟住飛到去泰國,我地試左「青咖哩雞」,
一道完美同白飯結合既主菜,用左走地雞黎做
主角,所以肉質食落特別幼嫩爽滑,而配上
辣椒、茄子、椰子、金不換既青咖喱,特別
濃香惹味,但又唔會太辣,岩哂香港人口味呀。

▫ 輪到最後最濃味既「香辣蔥蒜炒大虎蝦」,
原來大廚將虎蝦加左紅尖椒、薑蔥、蒜頭去爆,
唔怪得陣陣既辛辣感已經離遠都聞到。蝦肉
食落香口彈牙,而且份量真係去到King Size,
非常滿足!

▪ Caramelized Japanese Cheesecake -
▫ 另一亮點既「焦糖焗日式芝士蛋糕」
用上日式芝士蛋糕加埋焦糖燒製,甜度岩岩好;

食落質輕盈,但同時芝士味相當濃香,
旁邊雜莓增加左成個豐滿感,非常好食!

I want to share one of my favourite restaurant to you guys as I have been there many times. Every time I came this place I could get the same quality for all the meals that I ordered. They do serve different kinds of food including Asian and Western. At the night time, the lighting is dimmed down which is a super romantic place for guests especially couples to enjoy the nice views of Victoria Harbour. I will definitely recommend you for the Soya sauce & garlic marinated beef short ribs (HKD180). The meat was tender and well pre-cut into slices. It came with the dipping sauce that would add more spices to the meat and make the meat extra juicy. The other dish I would recommend is the Chicken Satay skewers (HKD110). The chicken was marinated with the special house-made satay paste. It grilled to perfection with a bit of Thai chili sauce on the outside. It came with few pieces of lettuce that you can make your own chicken wrap. You can't go wrong with it. Again, I highly recommend this restaurant not only for its good foods, also this is the perfect spot for you to have some nice cocktails at the rooftop as well.

「營養師的貼心小叮嚀」-by 陳小薇營養師
回顧一下最近的營養動態,國人普遍有膳食纖維攝取不足的狀況,以衛福部所提供的每日建議攝取量25~35g,目前無論是男性或是女性,均未達建議攝取量的1/2。然而膳食纖維是什麼呢?主要是植物來源,無法被人體吸收的非澱粉多醣,但是部分膳食纖維,是能夠被腸道的益菌所利用,進而促進腸道的健康喔!
此次示範的清爽越南春捲,毫無疑問的是準備進入夏季前的高纖好料理,能夠做為補充膳食纖維、增加飲食趣味的料理方式,除了料理中所運用的紅甜椒、黃甜椒之外,可以大量加入高麗菜絲、紫高麗菜絲、豆芽菜,甚至是苜蓿芽,補充膳食纖維的攝取量,平均每百公克的蔬果,有2g左右的膳食纖維。營養師的貼心小叮嚀,在攝取大量膳食纖維的同時,也要同時多喝水,讓膳食纖維能夠被身體好好的利用。

300g chicken breas
80g shrimp
Vietnamese spring roll
Merlot lettuce
Sprouts
Yellow bell pepper
Mizuna leaves
Coriander
Thai basil
egg
Mint leaves
3 tbsp peanut butter
2 tbsp of olive oil
1 tbsp fish sauce
2 tpsp of stock
Chili pepper chopped
Chopped garlic
1 lemon juice
A little coriander leaves
A little peanut powder

食材
雞胸肉 300g
蝦仁80g
蛋皮
越南春捲皮
美羅生菜
豆芽
黃甜椒
水菜
香菜
九層塔
薄荷葉
花生醬 3大匙
橄欖油 2大匙
魚露 1大匙
高湯 2大匙
辣椒末
蒜末
檸檬汁1顆
香菜少許
花生粉少許
步驟:
1.雞胸肉川燙後,弄成絲備用
2.蝦仁川燙後切半備用
3.雞蛋做成蛋皮切絲
4.越南春捲皮用60度溫水泡5-6秒取出,將所有食材用春捲皮包起,搭配花生醬汁

HELLO EVERYONE! :) (MORE INFO BELOW!)
On Saturday, 28 June 2014, my beloved Grandpa passed away. The last time I updated you guys, he was home and feeling better. Unfortunately, after 10 days of being discharged from the month-long hospital stay earlier, he contracted a serious case of pneumonia and lung infection.
I thank all of you for your thoughts, prayers and words of encouragement in my Giveaway video. I hope you guys understand if I don't seem like myself in my videos for the next couple of weeks because it is after all, the first Ramadhan my family and I are celebrating without my Grandpa.

✿Vietnamese Rice Paper Rolls Recipe✿
Ingredients:
- Vietnamese Rice Paper Sheets -I got mine at NTUC, the glass noodles area
- Mint Leaves
- Basil Leaves
- Coriander Leaves
- Lettuce
- Any type of meat you want to use -Squid, prawn, beef, chicken etc
- Glass noodles or soo'oon
For the sauce:
-Chilli Padi - The amount depends on how spicy you want your sauce to be
- Lime
- Coriander leaves
- Garlic
- Ginger
- Fish Sauce
- Water
- Sugar
Steps:
1. Soak your glass noodles in water to soften them
2. Pluck the leaves from their stalks and place them in bowls so that it'll be easier for you when you want to start rolling the rice paper rolls
3. Shred your cucumber and carrots
4. Peel your lettuce and rinse them. Then cut them into smaller, manageable pieces
5. Boil or prepare the meat you're gonna use
6. For the sauce, chop the coriander leaves, garlic, chilli and place them into a small bowl. Thinly slice the ginger and add it into the bowl as well. Squeeze in the lime juice.
7. Add a tablespoon of fish sauce and dilute it with some water. Finish off with adding about a teaspoon of sugar.
8. Soak your rice paper sheets till soft and wrap away!
