Hope everyone is staying healthy and safe this MCO! Speaking of healthy, I got just the right thing for you guys, which are @tasteaustraliamy summer fruits that consist of juicy nectarines, plums, peaches and apricots! They are high in antioxidant and are filled with nutrients and vitamins and can be a perfect pair with just anything!
This year, toss your Yee Sang higher with this uplifting and delicious summer fruits. They have just the perfect sweetness and tartness that would give your Yee Sang the perfect twist! Follow my Yee Sang recipe using Aussie Summer Fruits.
So Fresh, So Delicious Yee Sang
Components of Yee Sang:
½ packet popiah skin, cut into strips and fried
50g White nectarine, sliced
50g Yellow nectarine, sliced
50g Black plum, sliced
50g White peach, sliced
50g Yellow peach, sliced
100g taro, peeled, cut into cubes and fried
100g sengkuang (jicama), shredded
80g daikon, peeled and shredded
1 carrot, peeled and shredded
¼ cup cilantro, chopped
10 slices pickled ginger, sliced
To serve:
½ tsp five spice powder
1 tbsp toasted sesame seeds
50g smoked salmon
1tbsp lime juice
Dressing:
80ml hoisin sauce
80ml apricot + red plum compote
2 tbsp honey
2 tbsp water
1 tsp sesame oil
1 pinch of salt
Directions:
1) Arrange all components of yee sang on a round plate. Ensure that all fried items have been drained well of oil and all fruits and vegetables are placed on kitchen towels to dry up excess liquid before using.
2) For the dressing, put all ingredients into a pot. Heat gently till thickened and well combined.
3) To serve, place salmon in the middle of the plate, sprinkle with five spice powder sesame seeds and lime juice. Followed by crushing the fried popiah and finally a drizzle of the dressing.
4) Toss all ingredients together.

[RECIPE]
Preparation time: ~20 mins
Cooking time: ~1 hr 30 mins
Total duration: ~1 hr 50 mins
Ingredients:
1) Spare ribs, 1kg (cut into slices)
2) Ginger, 1 x 4-inch piece (flattened for boiling) and 1 x 4-inch piece (sliced for frying)
3) Garlic clove, 5, minced
4) Sour plum sauce, 130 grams
5) Soya bean paste sauce, 1 tablespoon
6) Hua Tiao Chiew (rice wine), 2 tablespoons
7) Water, 1 cup
8) Oki premium corn oil, 2-3 tablespoons
9) Tapioca starch, 2 tablespoons
10) Coriander and spring onion, to garnish, chopped
Instructions:
1) Place ribs and ginger into water and boil (Do not cover and remove dirt from water).
2) Once boiled, remove from heat and drain water away from pork ribs.
3) Add 1 tablespoon of OKI premium corn oil to a saucepan heated to medium heat.
4) Sauté sliced ginger until slightly brown.
5) Add garlic.
6) Add soya bean paste.
7) Add pork ribs and fry until fragrant.
8) Pour in 1 cup of plain water. Cover and let it boil.
9) Mix in plum sauce and pepper.
10) Add in Hua Tiao Chiew. Cover and simmer over medium heat for 1 hour or until meat is tender and liquid is reduced.
11) Separate out one small bowl of sauce to mix in tapioca flour.
12) Mix in 2 tablespoons of tapioca starch to the small bowl of sauce. Pour in sauce to thicken.
13) Add garnish and serve.

Yusheng is an unique Chinese New Year dish that is very Malaysian and Singaporean. It's a must-have dish to be served, heralding the arrival of Chinese New Year. Each component of the dish has an auspicious meaning. Tossing it high up, joyously shouting auspicious words is such a celebration!
For a twist, we did beetroot citrus cured salmon. The beetroot dyes the salmon a rich ruby hue that screams Chinese New Year. The subtle taste of juniper and citrus of gin with the citrus zests gives it a zing to tease the palate. To follow up with this taste profile, our Yusheng sauce has orange and lime juice in it to lift up and lighten the dish, to cut through the sweetness of the plum sauce. Lo Hei everyone!

食欲がわかない夏に食べたい!冷やし梅茶漬けのレシピを2選ご紹介します!

冷やし梅茶漬け2選
2人分
■長芋と梅干しとなめ茸
材料:
ごはん 200g
長芋 100g
梅干し 2粒
なめ茸 大さじ1
しょうゆ 大さじ1/2
白ごま 適量
万能ねぎ 1本分
油揚げ 1/2枚
A緑茶 200ml
A白だし 大さじ1/2
作り方:
1. Aの緑茶と白だしは合わせて冷蔵庫で冷やしておく。
2. 梅干しは種を取って包丁でたたいておく。油揚げは1cm角に切ってフライパンで焦げ目がつくまでカリカリに焼いて、万能ねぎは小口切りにする。
3. 長芋をビニール袋に入れて麺棒などでたたき、(2)の梅干し、しょうゆ、なめ茸を加え揉む。
4. 茶碗にごはんをよそって(3)を盛り付け、(2)の油揚げも添えて、万能ねぎと白ごまをちらし、(1)を注いで完成!
■梅干しとささみキムチと塩揉みきゅうり
2人分
材料:
ごはん 200g
キムチ 35g
鶏ささみ 1本
塩 少々
酒 小さじ1
梅干し 2粒
きゅうり 1本
塩 1つまみ
ごま油 大さじ1
白ごま 大さじ1
水 200ml
梅昆布茶 スプーン2杯分
作り方:
1. 水に梅昆布茶を溶かし、冷蔵庫で冷やしておく。
(溶けにくいときは先に少しのお湯で溶く)
2. きゅうりを薄切りにして塩をまぶし、10分置く。
3. 鶏ささみに塩と酒をふり、ラップでふんわり包んで600Wの電子レンジで30秒、裏返してさらに30秒加熱し、あら熱が取れたら手でほぐす。
4. キムチを刻み(3)と和える。
5. (2)がしんなりしたら水気をしっかり絞り、ごま油と白ごまを和える。
6. 茶碗にごはんをよそい、(3)と(4)を盛り付け梅干しをのせて(1)の梅昆布茶を注いで完成!

2 Ways to Enjoy Cold Plum Chazuke
Servings: 2
◆Plum with Chinese yum and Namesake mushrooms
INGREDIENTS
200g steamed rice
100g Chinese yam
2 umeboshi plums
1 tablespoon nametake mushrooms
1/2 tablespoon soy sauce
Some white sesame seeds
1 string scallion
1/2 dried tofu
200ml green tea
1/2 tablespoon shiro-dashi
PREPARATION
1. Mix green tea and shiro-dashi. Cool in the refrigerator.
2. Remove plum seeds and chop. Cut dried tofu into 1cm pieces, and cook in a pan until golden and crunchy. Chop scallion.
3. Put Chinese yam in a plastic bag, break wth a rolling pin. Add chopped plums (2), soy sauce, and namesake mushrooms into the bag and mix.
4. Put steamed rice in a bowl. Place some mixed yam (3) and dried tofu (2). Sprinkle with some scallions and sesame seeds on top. Pour the green tea (1) over the rice.
5. Enjoy!
◆Plum with kimchi chicken and salted cucumber
INGREDIENTS
200g steamed rice
35g kimchi
1 chicken tenderlion
Some salt
1 teaspoon sake
2 umeboshi plums
1 cucumber
1 tablespoon sesame oil
1 tablespoon white sesame seeds
200ml water
2 spoons plum-kelp-tea (umekobucha)
PREPARATION
1. Melt plum-kelp-tea in the water. Cool in the refrigerator.
2. Slice the cucumber thinly and rub with salt. Leave for 10 minutes.
3. Season the chicken with salt and sake and wrap loosely with a plastic wrap. Microwave at 600W for 30 seconds. Flip the chicken and microwave another 30 seconds. Let cool. Shred the chicken with hands.
4. Chop kimchi and mix with the chicken (3).
5. When cucumber slices (2) are soften, drain water. Mix with sesame seeds and sesame oil.
6. Put steamed rice in a bowl. Place some kimchi chicken (3) and cucumber slices (5), and top with some plums. Pour the ume-kelp-tea (1) over the rice.
7. Enjoy!
