Our good friend Lloyd has recently turned vegan 🌱 for good, and as he’s been staying with us I’ve put my thinking cap on to make him lots of Chinese Vegan Food.
It’s been a great experiment for me personally and I’ve enjoyed making all these new dishes. Some I’ve take pics of, some I haven’t. Here’s what I’ve made in the past week:

-Fried tofu braised with fermented red bean curd and fermented soyabeans
-Dried tofu skin braised with sour preserved veg, cloud ear fungas and glass noodles
-Chinese BBQ “char siu” firm tofu
-Braised fried tofu and Chinese seaweed
-Tofu with “jar choi” preserved veg on top of crispy noodles
-Spinach, watercress, tomato, onion and preserved “dong choi” soup
-Soba and cucumber mixed with dumpling sauce

And here’s another Weekend Food Diary Update! 😆 Unlike many of my crazy cheat meals weekends, I ate relatively healthy this time because...counting down only 2 days left in my One Month Project Comeback and also our Sri Lanka Trip! Gotta give that final push muahahaha 🔥 .l
Day 24 (Saturday - Intermittent Fasting)
Lunch: Mum’s homemade Chinese Style Soup with Apple, Almonds, Figs and White Fungus蘋果雪耳無花果杏仁湯 + Green Tea Soba Noodles + Yellow Bell Peppers + Green Beans + Chicken & Veggies Dumplings
Dinner (Eating out for “Cheat Meal” but actually not super unhealthy): Thin Noodles in Seafood Soup with Scallops, Crab Meat & Prawns
Day 25 (Sunday)
Breakfast: Purple Sweet Potatoes + Eggs + Cherry Tomatoes + Cucumbers
Lunch: Broccoli + Seaweed Noodles + Same Dumplings as Day before
Afternoon Snack: Homemade Lentils & Vegetable Soup
Dinner: Tempe with Tofu and Bell Peppers + Fish + Veggies with Egg White + Rice with Quinoa
Day 26 (Monday)
Breakfast: Same as day before
Lunch: Same as dinner the day before
Dinner: Silver Fish + Broccoli + Mushroom with Chicken, Fish Skin & Fish Maw + Rice & Quinoa & Spinach Noodles
As you can see, we always cook extra food for next day to save time & meal prep for work😆 and no I don’t get sick of eating the same food because they are yummy and I know they are good for me! Plus I am lazy (and cheap ass) to buy food from outside myself😂 Just very very grateful already to have such amazing meals everyday! @ Singapore

【材料】(保存期間:冷蔵で約4日)
●きゅうり:2本
●オクラ:8本
●長芋:約450g
●えのき:1パック
●お酒:50ml
●みりん:50ml
●赤味噌:大さじ1/2(普通の味噌でもOK)
●めんつゆ(3~4濃縮):大さじ4(白だしでもOK)
●醤油:大さじ2
●砂糖:大さじ1
●にんにく:2片
●生姜:お好み量
●唐辛子:お好み量
●黄金の天然だし:1パック(かつお粉でもOK)
●塩(板ずり用)
お好みで、ネギ、ミョウガ、わさび、納豆、海苔

これぶっかけると、蕎麦、素麺、豆腐、卵かけご飯がまるで飲み物w
食感もやみつきで秒で無くなります( *´艸`)
何でもエンドレス♪出汁の旨味が半端ねぇ~無限に食べられる美味しさですよ!
作り方はただ漬けるだけっ!超簡単です!
この夏、是非ハマり倒しちゃって下さい!!!!!
[Ingredients]: (Preservation period: about 4 days refrigerated)
● Cucumber: 2
● Okra: 8
● Chinese yam: about 450g
● Enoki mushrooms: 1 pack
● Sake: 50ml
● Mirin: 50ml
● Red miso paste: 1/2 tablespoon (regular miso can be used)
● Noodle soup (3-4 concentrated): 4 tbsp (white soup stock can be used)
● Soy sauce: 2 tablespoons
● Sugar: 1 tablespoon
● Garlic: 2 cloves
● Ginger: as desired
● Chili pepper: as desired
● Dahi powder: 1 pack (you can also use bonito flour)
● Salt (For removing smell)
● Negi (green onion), myoga, wasabi, natto, dried seaweed, as desired

Once you start eating it, you won't be able to stop... I made
"Infinite Addictive Veggie Topping."
When you pour it over soba noodles, somen, tofu, or rice with egg, it
becomes like a drink lol
The texture is also so addictive that it's gone in seconds ( *´艸`)
The taste of the soup stock is unbelievable. It's an endless supply of
deliciousness!
All you have to do is just pickle it! It's so easy!

●絹豆腐:1丁(約300~350g)
●たくあん:約100g
●キムチ:約160g
●長芋:約160g
●きゅうり:2本
●あごだし(4倍濃縮):大さじ2(めんつゆ、白だしでもOK)
●コチュジャン:小さじ1(豆板醤でもOK)
●ゴマ油:大さじ2
●にんにく:小さじ1
●生姜:小さじ1
●塩コショウ少々
●炒り胡麻
●最後にお好みでブラックペッパー、卵黄、刻みネギ
(韓国のりや納豆も相性抜群だよ♪)

低糖質ですが糖質やカロリーを気にして食べているとは全く思えない美味しさになってますよ。
ただ和えるだけの簡単なレシピですが味は最高に美味しいです!!

[Ingredients]
● Tofu: 1package (about 300~350g)
● Pickled radish: about 100g
● Kimchi: about 160g
● Chinese yam: about 160g
● Cucumber: 2
● Fish stock (4 times concentrated) (noodle soup base or white soup
stock can be used): 2 tablespoons
● Sesame oil: 2 tablespoons
● Garlic: 1 teaspoon
● Ginger: 1 teaspoon
● A pinch of salt and pepper
● Roasted sesame seeds
● Black pepper, egg yolk, and chopped green onion to taste.
(Korean seaweed and natto are also great with this...♪)

This is a new version of the Infinite series that many people have
enjoyed making, called "Addictive Infinite TOFU."
The ultimate texture created by the different textures, which are
Kimchi, Pickled radish, Chinese yam, cucumber, is really irresistible.
The combination of the original spicy and addictive sauce and tofu
makes it an unbeatable snack♪
And if you add an egg yolk on top of the rice, it becomes an
unbeatable accompaniment to rice.
It's low in sugar, but you won't feel like you're caring eating
carbohydrates or calories at all.

200 g Saikyo miso
1 tbsp sake

Hijiki no Nimono(for 4 servings)
24 g dried hijiki seaweed
1 deep-fried bean curd
1/2 carrot
1 tbsp oil
2 tbsp sake
2 tbsp mirin
2 tbsp soy sauce
1 tbsp sugar
200 ml bonito kombu dashi
Hourenso no Shiroae(for 4 servings)
350 g Momen tofu
200 g spinach
1/2 carrot
50 g Konnyaku
some bonito kombu dashi
1 tbsp light soy sauce
60 g sesame seeds
1 tbsp sugar
1 tsp miso
