我親愛的好朋友沈倩如,食物攝影師。她住在美國華盛頓,昨天傳了一張美麗的椒鹽豆腐照片給我。她說:「 妳的食譜,妳看怎樣?我一直很喜歡椒鹽的味道,這次還加了點五香粉。微妙混合的香氣在口中擴散,讓人旋即想起台灣路邊攤的小吃。」
我們其中一位最忠實的顧客,住在英國曼城的 Lynne Marland, 她告訴我說:「 我用大白菜和菠菜佐著一起做了椒鹽豆腐,非常好吃!然後,今天我用香菇、大白菜和米粉煮了一鍋美味的味噌湯,我把剩下的幾塊切碎,加了進去,也很好吃。」

My dear friend Lisa, an international food photographer and a best selling author based in Washington DC, USA, sent me a lovely image of the Salt & Pepper Tofu, she said, “Your recipe, what do you think? I have always liked anything that’s cooked with salt and pepper, and this time I added a little five spice powder. The magical aromatic mix gently explodes in the mouth, reminiscent of the street food we used to have on Taiwan's roadside stalls.”
One of our most loyal customers lovely Lynne Marland, who lives in Manchester, UK, messaged me and said, “I made Salt and Pepper Tofu with Chinese cabbage and spinach, very nice! Then today I made some miso soup with shiitake mushrooms and Chinese cabbage & vermicelli, then I cut up the few pieces that were leftover and added those, it was yummy too.”

Here’s another meatless Chinese dish that I’m excited to introduce to you! Lei Cha is a traditional Chinese Hakka dish that was invented during the Han Dynasty. The aromatic green soup consists of oolong tea leaves, ground roasted nuts, ginger, Thai basil leaves, coriander leaves, mint leaves and salt. The rice, either white or brown, is topped with all kinds of nutritional vegetables such as leeks, spinach, Chinese cabbage, choy sam, shiitake mushrooms as well as peanuts and tofu. This dish is customarily vegetarian, although versions containing dried shrimps for extra flavours can also be found today.

雖然未食「五月糉」,但也彷彿呼吸到炎夏的暑氣。天氣悶熱令人胃口變差,外出只想吃喝各式甜品、特飲,回家時又按捺不住從冰箱取出冰凍汽水大口大口地喝,這都是因為夏天出汗較多、易耗氣傷津,會出現口渴、口乾等症狀,為了解暑就容易一時吃太多生冷。中醫理論指出「汗為心之液」,所以初夏時節需要注意養心,也要避免滋膩食物。另外夏天亦容易引發皮膚病,可適量食用清熱利濕的食材,忌食發物。天氣再熱,都要每天按時進食三餐保護脾胃運作呢!
夏日宜適量進食:
夏季當造瓜果-冬瓜、西瓜、青瓜、菠蘿、節瓜、絲瓜
苦味食材-苦瓜、芹菜、萵筍、枸杞葉
酸味食材-菠蘿、奇異果、山楂、檸檬、百香果、芒果
養心食材-紅豆、草莓、紅葡萄、紅棗
寒性蔬菜- 芽菜、馬蹄、番茄、白菜、白蘿蔔、菠菜
夏日健脾胃養心餐單
早:烚番薯 / 瑤柱小米粥 / 番茄湯米粉
午:銀魚仔蒸肉餅 / 咕嚕魚塊 / 絲瓜豆腐泡飯
下午茶:一碗份量兩款水果,例如車厘茄、櫻桃、草莓、紅葡萄等等
晚:涼拌苦瓜 / 蒜蓉炒紅莧菜 / 粉葛紅蘿蔔綠豆湯
建議每天飲用米水,全日任何時候皆可飲用。有助消化、轉化並吸收營養、排出多餘水分!
Summer Diet Pointers
It may not quite be time to eat rice dumplings yet, but you can definitely feel the heat in the air. Hot weather may decrease your appetite. You might crave for desserts and specialty drinks while you are out, and head straight to the fridge for a cold soda when you are home. You are thirsty and have dry mouth because you sweat too much in summer, resulting in loss of qi and fluid. You might try to cool down by eating many cold/raw food. Chinese medicine believes that ‘sweat is the heart’s fluid’. So it is important to calm your mind and avoid nourishing food in early summer.
Otherwise, skin allergies are prone to act up in summer. Appropriately consume ingredients that can clear heat and promote diuresis as well as avoid stimulating foods. No matter how hot it is, remember to eat three meals on time to protect spleen and stomach.
Foods to eat appropriately in the summer:
Seasonal melons and fruits- winter melon, watermelon, cucumber, pineapple, hairy gourd, luffa
Bitter- bitter melon, celery, lettuce, wolfberry leaves
Sour- pineapple, kiwi, hawthorn, lemon, passion fruit, mango
Heart nourishing ingredients- red beans, strawberries, red grapes, red date
Cold in nature- sprouts, water chestnuts, tomato, bak choy, white radish, spinach
Summer menu to strengthen the spleen and stomach and calm the mind
Breakfast: steamed sweet potato / dried scallops millet porridge / tomato soup rice noodles
Lunch: steamed meatloaf with ice fish / sweet and sour fish / tofu soup rice with luffa
Afternoon Tea: two types of fruits in a bowl, such as cherry tomatoes, cherries, strawberries, red grapes, etc.
Dinner: cold bitter melon / fried red amaranth with garlic / mung beans soup with carrot and kudzu
It is recommended to drink rice water at any time in the day to improve digestion and relieve water retention.

1 cup of water
1/2 teaspoon of chicken stock powder
400g of round cabbage
220g of enoki mushrooms
Sauce ingredients
------
1 tablespoon of sesame oil
2 tablespoon of cooking oil
15g of chopped young ginger
4 cloves of chopped garlic
2 chopped shallots
2 chopped red chilli (optional)
1/2 teaspoon of sugar
2 chopped spring onion (stem only)
2 tablespoons of oyster sauce
1 tablespoon of light soy sauce
125ml or 1/2 cup of water
Other ingredients
----
300g of prawns
150g of shabu shabu pork
150g of scallops
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
Rest of the spring onion

24 g dried hijiki seaweed
1 deep-fried bean curd
1/2 carrot

350 g Momen tofu

一隻雞蛋 1 Egg
200克青瓜 200g Cucumber
120克紅蘿蔔 120g Carrot
1件潮州豆腐潤 1 piece of firm tofu
半茶匙蔴油 1/2 tsp Sesame oil
蒜蓉一湯匙 1 TBS minced garlic
醬汁材料:
芝蔴醬四湯匙 4 TBS Sesame sauce
鎮江醋兩湯匙 2 TBS Zhenjiang vinegar
白醋三湯匙 3 TBS White vinegar
鹽半茶匙 1/2 tsp Salt
兩湯匙白糖 2 TBS Sugar
一湯匙辣椒油(有渣嘅) 1 TBS Chilli oil (with flakes)
半茶匙蔴油 1/2 tsp Sesame oil
50毫升水 50ml Water
一些冰塊 Ice cubes (to make an ice bath)
