最近在研究米布丁,由於顧問了一間飯糰店 🍙
正是夏天,芒果滿街都是,逛一趟市場都能聞到飄散在街道上的芒果香氣🥭
不知要做什麼還是不自覺買了兩斤回來,後來想到芒果🥭,想到米飯🍚,接著又想到椰奶 🥥
於是,做一個 #芒果椰奶米布丁 的念頭就出來了
嘗試了幾次之後找到了黃金的配方
煮熟米飯1公斤
鮮奶 800公克
奶油 100公克
二砂糖 150公克
好的鹽巴 10公克
香草精 5公克
煮滾之後慢慢收乾,狀態跟很稀的燉飯差不多,煮好之後攤平倒在平盤上封上保鮮膜進冰箱冷卻約一小時(記得要平!)
接著切芒果丁,跟萊姆皮萊姆汁與少許五香粉混合
再來把一整罐 #小磨坊 的椰奶與削下來的芒果皮煮滾後,過濾取出的椰奶進冰箱冷卻
最後把冷卻好的米布丁與椰奶混合,接著加入100公克打發的鮮奶油即可與切丁的芒果一起擺盤🤙🏿🤙🏿🤙🏿

I still remembered when I was in London and I laid 7 pounds for a piece of way below average standard mango 🥭
Back here in Taiwan 🇹🇼 the quality of mango is amazingly nice, the fragrance of it is very unique from other fruits. And the sweet and sour taste of it is balanced and the texture is soft and it just melts in your mouth.
Anyway it really is sth that we Taiwanese expect on a hot summer day, we put it on shaved ice with condensed milk, make fruit tea out of it, layered cake with it and loads of cream.
Now I’m running a Onigiri 🍙 shop in Taipei and I was wondering wht kinda dessert can I make with rice. And the idea of this coconut milk rice pudding with mango popped right in to my mind.
I diced up the mango and mix it with lime zest & juice, and the secret is to put a sprinkle of 5 spice to give it that nice aroma. Rice is from the east part of Taiwan, short grain and stored in fridge for over an year. The. Simply boil with sugar/salt/vanilla/butter and cook just like risotto but a bit runny.
Then out in a tray and cooled to core temp at around 8-10 (easier to combine with whipped cream and coconut milk).
The skin and pit of mango I don’t waste, I boil with coconut milk to extract the mango flavor and then just combine cooled rice and mango together.
Simple but full of details, defoly worth a try 🤙🏿🤙🏿🤙🏿

In this set we tried the following:
Curry leaf fish, Green peppercorn masala and puffed bread
Butter chicken with gunpowder naan
Tandoor roasted chicken with tomato masala
And the Coconut payasam, Milk reduction, tender coconut, mango jelly.
Nothing to reproach, everything is bold and beautiful. Full of wonderful spice and chunks of tenderness. The show stoppers however were the a la carte Masala muska bun with pav bhaji butter 220+. This will blow you away. Trust me, and the Thalassery bamboo biryani chicken
Fragrant layered short grain rice, Kerala masala, finished in bamboo, accompaniments
VEG 4 4 0+ /CHICKEN 6 0 0+ / MUTTON 6 4 0+ is enough to fill an entire family. On top of being jammed with goodies like cashew, pumpkin seeds, shallots and buried beneath, enormous blocks of mutton.

🥭My most favorite is this ‘Sweet Summer’ - Coconut Milk mousse in a Chocolate shell with Mango & Passionfruit sauce oozing from the middle. Super creative and fancy one with unique taste. Good combo of tropical fruits coconut x mango with just right level of sweetness. The coconut milk mousse is so smooth & has the right hint of coconut aroma. Very refreshing. Just perfect for hot summer days in Bangkok!

🍫’Chocolate Hazelnut Dome’ - Chocolate mousse with Hazelnut mousse in the middle & crunchy chocolate crumb base. This one is also nice. Chocolate fan would love this! But for a hazelnut fan like me, more mix of hazelnut would be even more awesome 😻 @sugarcraver .

Resepi Pulut Mangga Ala Thai
Bahan-bahan (Pulut Mangga)
1 kg beras pulut
1 cwn santan pekat
50 ml air
1/2 sk garam
2 helai daun pandan (disimpul)
mangga
1 sb gula
bijan hitam (secukupnya)
Bahan-bahan (Kuah santan)
1 cwn santan pekat
1 cwn air
2 helai daun pandan (disimpul)
1 sk garam
1 sb gula
1 sk tepung jagung
Cara memasak
1. Rendam beras pulut sekurang-kurangnya 30 minit sebelum dikukus.
2. Masukkan daun pandan yang disimpul dan kukus beras pulut hingga masak selama 25 minit.
3. Angkat dan ketepikan.
4. Campurkan santan, air, garam dan gula. Kacau sebati.
5. Tuangkan campuran santan ke dalam pulut yang siap dikukus dan gaul sehingga sebati. Ketepikan.
6. Kuah Santan: Panaskan air sehingga mendidih dan masukkan daun pandan.
7. Tuangkan santan dan kacau seketika.
8. Perasakan dengan garam dan gula secukup rasa.
9. Masukkan tepung jagung dan kacau sehingga kuah santan pekat. Ketepikan.
10. Hidangkan pulut, kuah santan dan hirisan mangga segar. Hiaskan dengan taburan bijan hitam.
11. Pulut mangga manis siap untuk dihidangkan.

Thai Style Sweet Mango Sticky Rice Recipe
Still thinking what to have for high tea, you can try to make this delicious Asean dessert "Mango Sticky Rice" The combination of fruity taste of mango and glutinous sticky rice is really compliments with the coconut milk gravy, one plate is not enough. It also super easy to make too. Give a try and good luck!
Ingredients (Mango Sticky Rice)
1 kg glutinous sticky rice
1 cup of coconut milk
50 ml water
1/2 tsp of salt
2 strands of pandan leave (knotted)
mango
1 tbsp of sugar
black sesame (as needed)
Ingredients (Coconut Sauce)
1 cup of coconut milk
1 cup of water
2 strands of pandan leave (knotted)
1 tsp of salt
1 tbsp of sugar
1 tsp of corn starch
Cooking methods
1. Soak glutinous rice for at least 30 minutes before steaming.
2. Add in pandan leaves and steam until cook for 25 minutes.
3. Remove and set aside.
4. Mix coconut milk, water, salt and sugar. Stir to combine.
5. Pour the coconut milk mixture into steamed glutinous rice and mix all well. Set aside.
6. Coconut Sauce: Boil water and add in pandan leaves.
7. Pour coconut milk and stir well.
8. Season with salt and sugar to taste.
9. Add in corn flour and stir the sauce until thicken. Set aside.
10. Served the glutinous sticky rice, coconut sauce and fresh mango slices. Garnish with black sesame.
11. Sweet mango glutinous sticky rice is ready to be served.

Ingredients for mango Panna Cotta:
1 cup of coconut milk (250 ml)
1 cup of cream (250 ml)
⅓ cup of sugar
2 tsp gelatin (2½ if you like little firm pannacotta)
Pinch of salt
½ tsp vanilla
Mango Sauce
1 or 2 mangos depending on the size
sugar if needed (depending on the sourness of your mango)
1. soak gelatin in 4 tbsp cold water and let it bloom for 10 minutes.
2. In a saucepan mix cream, milk, gelatin, sugar, vanilla, and salt. bring to a simmer over medium-low heat until gelatin dissolves. (Do not boil)
3. Pour it in the small serving glasses and refrigerate until it sets, for about 4 hrs or better overnight.
4. use a blender to make a mango puree. Or you can serve small cubes of mango if you like
5. pour the mango sauce over the panna cotta and serve.
