I am sure all of you remembered Chef Lam in Golden Mile Food Centre. They have moved to 371 Beach Road (City Gate #02-29). Lam's Garden 林苑

Chef Lam’s signature seafood crispy noodle is the most popular dish in his menu. The dish sees two towers of fried sheng mian standing in a sea of starchy gravy with seafood. The noodles and gravy are packed separately and delivered to our home. Chef Lam always calls it the twin tower. I tried to recreate it, my version doesn’t look like twin tower. It looks more like Huangshan. 😂 ⁣

I really love his Curry Fish Head with generous servings of ladyfinger, tau pok, brinjal and tomatoes. The fragrant curry is thick and we balanced, nothing too overwhelming. Fish is fresh and the gravy leaves a pleasantly sweet aftertaste in the mouth. ⁣

We were literally salivating at the Crispy Garlic Spring Chicken. It looks unassuming when I first opened the container, but that golden skin and tender meat are very enticing. We simply tear the chicken apart using our hands. ⁣

This is one of the better meals we had during Circuit Breaker period. Literally comfort food at its best! ⁣

Mee siam is considered one of Singaporean's favourite dishes and amongst the most notable in Singapore. However, what you get out there at the stalls is usually the original mee siam which is spicy vermicelli served with tangy gravy. I don't know who is the ingenious one who thought of making fried mee siam instead. Whoever is the person is brilliant! This is absolutely yummy! If you like to host parties at home, this recipe is a good change from your usual plain beehoon or fried rice. Try it and let us know what you think of it.
