【黃枝記 Wong Chi Kei Noodles, Macau 1st Shop】is super famous for their house made noodles. Originating from 中國東莞 and then to Macau, this has even spread to HK side for many decades - apart from the Macanese side, the HK branch moved from Causeway Bay to Central Decades ago where 大利清湯腩 used to be. Since then they moved 1 street down at Stanley St.. Recently a Causeway Bay branch also re-opened.
Although this time I ordered the 雲吞蝦籽麵 Prawn Roe and Wonton noodles here, for my own purpose as I have always been surprised that this didn't get a Michelin mention at least on Macau side but most other noodles shops are judged upon this same Prawn Roes Recipe such as 祥記麵家, 六記, 老記 or say 皇冠小館.
In reality, their Fried noodles 炒麺 here is actually always the Signature Dish - it is thin eggy crispy, probably the best within Canton region. Other items include the 擔擔炒河粉 Dan Dan Sauce Wok Fried Rice Noodles which do work well too :@

Each bowl have four big wonton, fresh and sweet prawn meat wrapped by the thin and smooth layer of wonton skin. Slurp Slurp~ MYR15.80 (Not included Service Charges and GST)

Teochew fish soup is widely available in Singapore. You can get it in most food courts and coffeeshops. If you can find a fish soup stall, most likely they will have the option of fish porridge too. Teochew fish porridge is simply rice soaked in a bowl of fish soup. If you don't like rice, you can replace it with thick or thin vermicelli or any other types of noodles.

Ingredients:
Serves 4 - 5
Ingredients for soup stock - boil for 45 mins
---
2L of water (please add more soup if the water dries up slightly after you have added the rice)
0.5 kg of chicken feet - blanched
150g of ikan bilis - washed
2 tablespoons of dried shrimps - soaked till soft
1 dried sole fish - dry roasted
Marinade for the fish

500g of mackerel
1 teaspoon of salt
A few dashes of white pepper
2 teaspoons of cornflour
Other ingredients
---
Optional: 1 whole piece of dried cuttlefish - cut into stripes & shallow fry until crispy
Optional: 2 bulbs of garlic - chopped and shallow fry until light golden brown - both oil and garlic to be used to enhance the flavour of the dish
1.5 cups of cooked Jasmine rice
1 thumb size ginger - julienne
2 tablespoons of fish sauce

In this video, we will show you how to make crispy fried egg noodles, restaurant style. Some also refer to this as Hong Kong Fried Noodles but I beg to differ because usually Hong Kong Fried Noodles is not crispy. Just like in Hong Kong, you can easily order this yummy carbo dish from any coffeshop zi char stalls in Singapore and we call it Shang Mee or 生面.

Serves 3
200g wonton noodles or egg noodles
100g of sliced marinated pork (marinated with some light soya sauce, sesame seed oil, white pepper and tapioca flour or cornflour)
9 medium size prawns
1 small squid cut into small pieces
9 young corn
A bunch of choy sum
2 eggs
1.5 tablespoons of dark soya sauce
2 tablespoons of oyster sauce
1 tablespoon of sesame seed oil
1 tablespoon of Shaoxing wine (Chinese cooking wine0
1/2 bulb of garlic - minced
A few dashes of white pepper
Chicken/Prawn stock (boil 1L of with 1 chicken stock cube & all heads and shells of the prawns used here.)
