{IG Giveaway} Celebrating the Easter weekend with these yummy cakes from @uglycakeshop! The girls were asking "Mama, why are they called ugly cakes when they look so pretty?"
Well, this is because Ugly Cake Shop believes in using as many natural ingredients and as little chemicals as possible, which means they do not believe in using artificial flavours, colouring, fondant or gum paste in order to beautify their cakes. I think that is good news for parents as the cake ingredients are of high quality and the flavours come naturally from fresh fruit and other sources, which means a healthier option for the kids. For us, we don't like our cakes to be overly sweet and I think these cakes have just the right amount.
Check out the lovely Easter cupcakes and the newly launched kid-friendly animal themed mini cake - ours was the sheep one with a chocolate flavour! The mini cake does not contain fondant, artificial dye or preservatives and looks cute, right? I like how the 4-inch size makes it ideal for a small celebration and it is just the right portion for our family. We think it is pretty yummy!
Despite using natural ingredients, I actually find the cakes not just beautiful on the outside but from within too. That is because Ugly Cake Shop channels part of their profits to buy meat, eggs and other protein sources to help feed undernourished kids in Timor-Leste, which is a meaningful initiative worth supporting and I hope they can keep it up for as long as possible.

Our J & J Rainbow Cupcakes feature colourful sponge coated with white choco (no powdered sugar in the supermarket to make icing, hence use melted choco) and showers of sprinkles & peanut bits. We made this on Joreen's 4th birthday & she had so much fun baking & eating lol 🥰
𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔
365g Prima Muffin Mix
3 eggs
40ml water
110g melted unsalted butter
60ml vegetable oil
2 tsp vanilla extract
Food colouring
Sprinkles, peanut bits to decorate
Cupcake cups
𝑺𝒕𝒆𝒑𝒔
Preheat the oven to 350 degrees. Line cupcake tins with cupcake cups.
Combine all ingredients until incorporated (about 30 seconds). Then beat on med-high speed for 3 minutes until smooth batter is formed.
Divide batter according to how many colors you are using. I used 5 colours
Use food coloring to colour batter to desired intensity. Mix until the colors are fully combined.
Spoon a tablespoon of batter for each colour into cup.
Bake at 190 degree for 30 min or until a toothpick inserted comes out clean. Remove the cupcakes from the oven and transfer them to a rack to cool completely.
Meanwhile, melt the white choco to be use as topping of cupcake.
Drizzle over the cupcake and decorate with sprinkles/ peanut bits.
Enjoy~ ❤️
P/s: mama find that it tastes even better after putting in fridge 😋

さくらんぼのチョコチップマフィン
6個分
材料:
■チョコチップマフィン
無塩バター 80g
砂糖 70g
溶き卵 2個分
牛乳 50ml
マーマレードジャム 80g
A薄力粉 120g
Aココアパウダー 30g
Aベーキングパウダー 大さじ1/2
チョコチップ 60g
■カラフルクリーム
生クリーム 200ml
砂糖 大さじ1
かき氷シロップ(青・赤)各大さじ2
アラザン 適量
さくらんぼ 6個
作り方:
1.オーブンを170℃に温める。マフィン型に紙カップを敷く。
2.室温で柔らかくしたバター、砂糖をボウルに入れ、泡立て器で白っぽくなるまで混ぜる。溶いた卵を少しずつ加えてよく混ぜる。牛乳、マーマレードジャムも加えて混ぜる。
3.粉ふるいにAを合わせて混ぜ、(2)に一気に振るい入れる。ゴムベラで切るようにサックリと混ぜる。まだ粉っぽさが残っているうちにチョコチップを加えて混ぜる。
4.(3)を(1)の型に7分目くらいまで等分に入れ、オーブンで20分焼く。竹串を刺して生地がついてこなければ型から取り出して冷ます。
5.カラフルクリームを作る。別のボウルに生クリームを入れて泡立て器で5分立てまで泡立て砂糖を加えてさらに泡立てる。1/3の量を取り出しかき氷シロップの赤、残りに青のかき氷シロップを加えて混ぜる。
6.絞り袋に(5)のクリームを入れて(4)のカップケーキに絞り、アラザンをちらし、さくらんぼをのせて完成!

Servings: 6
INGREDIENTS
◆Chocolate cupcakes
80g unsalted butter (at room temperature)
70g sugar
2 beaten eggs
50ml milk
80g marmalade
A
120g flour
30g cocoa powder
1/2 tablespoon baking powder
60g chocolate chips
◆Colorful cream
200ml heavy cream
1 tablespoon sugar
2 tablespoons syrup (2 tablespoons each for red and blue syrup)
Some silver dragees
6 cherries
PREPARATION
1. Preheat the oven to 170°C (338°F). Line a cupcake pan with cupcake liners.
2. Whisk butter and sugar in a bowl until smooth. Add beaten eggs (little by little) and mix well. Add milk and marmalade, mix well.
3. Put all ingredients A in a sifter. Sift into the bowl (2). Fold the batter with a rubber spatula. Add chocolate chips.
4. Spoon the batter into the cupcake liners. Fill each liner about 2/3 full. Bake in the oven for 20 minutes. Insert a toothpick into the middle of the cupcake. When it comes out clean, remove cupcakes from the pan. Let them cool.
5. For colorful cream: Whip heavy cream in a bowl to medium peaks. Add sugar and whip to stiff peaks. Divide the whipped cream into 3 separate bowls. Add red syrup into one bowl, blue to another. Keep the other white.
6. Put all 3 different colored cream (5) into a piping bag. Squeeze the cream onto the cupcakes. Sprinkle some silver dragées. Tom them with a cherry.
7. Enjoy!

Resepi Kek Cawan Teh Susu
Bahan-bahan
150 gm gula
113 gm mentega
2 biji telur
60 ml susu segar
2 sb serbuk teh segera
160 gm tepung gandum
1 1/2 sk serbuk penaik
1/4 sk baking soda
1/4 sk garam
200 ml krim putar bukan tenusu
Resepi Boba
Bahan-bahan
100 gm black pearl
100 gm gula
100 ml air panas
Cara memasak
1. BOBA: Didihkan air. Masukkan black pearl dan masak sehingga 25 minit.
2. Tutupkan api. Rendamkan black pearl di dalam air sejuk.
3. Sediakan mangkuk yang berisi gula dan tuangkan air panas. Kacau sehingga gula larut.
4. Tapiskan black pearl dan campurkan ke dalam larutan air gula.
5. KEK CAWAN TEH SUSU: Campurkan serbuk teh segera bersama susu segar dan kacau sehingga larut.
6. Kemudian, masukkan telur. Kacau sekata.
7. Putar mentega dan gula sehingga sebati.
8. Masukkan tepung sedikit demi sedikit, serbuk penaik, baking soda, dan garam.
9. Kemudian, masukkan pula campuran teh. Putar adunan menjadi kental.
10. Letakkan kertas acuan ke dalam cupcake mold.
11. Masukkan satu scoop adunan ke dalam setiap kertas acuan. Bakar pada suhu 160°C selama 15-20 minit sehingga keperangan.
12. Untuk frosting, putarkan krim putar bukan tenusu sehingga menjadi kental dan kembang.
13. Paipkan krim putar bukan tenusu ke atas kek cawan dan hiaskan dengan boba.

Milk Tea Cupcake Recipe
Ingredients
150 gm sugar
113 gm butter
2 nos eggs
60 ml fresh milk
2 tbsp of instant tea powder
160 gm wheat flour
1 1/2 tsp of baking powder
1/4 tsp of baking soda
1/4 tsp of salt
200 ml non-dairy whipping cream
Boba Recipe
Ingredients
100 gm black pearls
100 gm sugar
100 ml hot water
Cooking methods
1. BOBA: Bring water to a boil. Add in black pearls and cook for 25 minutes.
2. Turn off the heat. Soak black pearls in a cold water.
3. Prepare a bowl with sugar and pour in hot water. Stir until sugar is fully dissolved.
4. Drain black pearls and mix with sugar syrup.
5. MILK TEA CUPCAKE: Mix instant tea powder with fresh milk and stir until dissolved.
6. Then, add in eggs. Stir until well incorporated.
7. Beat the butter and sugar until well combined.
8. Add in flour gradually, baking powder, baking soda and salt.
9. Then, add in tea mixture. Beat batter until thicken.
10. Place the paper cupcake liner inside the cupcake mold.
11. Pour one scoop of batter into each paper cupcake. Bake at 160°C for 15-20 minutes until brownish.
12. For frosting, beat non-dairy whipping cream until thicken and fluffy.
13. Pipe non-dairy whipped cream over the cupcakes and garnish with boba pearls.
