* Ingredients
A. Chocolate roll cake
4 eggs (medium sized)
20 gram granulated sugar
40 gram vegetable oil
40 gram milk
30 gram all-purpose flour
20 gram corn starch
10 gram cocoa powder
¾ tsp cream of tar tar (½ + ¼ tsp; you can substitute lemon/lime juice or vinegar for cream of tartar)
50 gram sugar (for whipping egg white)
B. Chocolate ganache
160 gram dark chocolate (60 - 75% cacao)
120 gram whipping cream (32 - 40% fat)
17 gram unsalted butter
C. Chocolate filling cream
300 gram whipping cream (32 - 40% fat)
45 gram sugar
25 gram cocoa powder

How to Make Chocolate Rum Raisin Walnut ラム酒風味レーズンナッツチョコの作り方 字幕表示可 材料(日本語)↓ (10 pieces)
40g Dark Couverture Chocolate, about 65% cocoa content or substitute: a regular chocolate bar (1.4 oz)
80g Castella or Sponge Cake (2.8 oz)
1 tsp Cocoa Powder
20g Rum-Soaked Raisins or substitute: regular raisins or candied orange peel (0.7 oz)
20g Roasted Walnuts, unsalted (0.7 oz)
1 tbsp any type of Cream
½ tbsp Rum, optional
- Coating -
Cocoa Powder
Coconut Powder, lightly roasted at 100 °C/210 °F for 1 minute
* it will easily burn so keep your eyes on it

How to make Rum-Soaked Raisins
Rinse the raisins with hot water and remove the water thoroughly. Place them in a clean jar, pour in the rum until it almost covers the raisins and let them soak for about 1 week.

ラムレーズン:20g(※製菓コーナーにあります。自分で漬けても良いです。お子様には普通のレーズンやオレンジピールで)
素焼きくるみ:20g
(素焼きとは、材料に油や調味料などをつけずに直焼きにすること)
生クリーム:大1
ラム酒:大½
(仕上げ用)
ココアパウダー(茶)
ココナッツパウダー(白)100℃で1分ほど軽くロースト。非常に焦げやすいので目を離さないこと。
