Despite my love for 浙江軒, 留園雅敘, or 老上海 if you say hi to the chefs, I actually quite enjoy Ye Shanghai 夜上海 as well. They dropped from Michelin 2 ⭐️⭐️ to 1 ⭐️ recently, but what I like about this place is that the taste of the original ingredients always sing out for most dishes. You can actually taste them, even if some sauces & seasonings are on the saltier side.. their 馬蘭頭 here is prob the most fragrant & non muted version I have eaten in HK, which.. you’d assume to be the case anywhere but most ain’t a good Chinese tabbouleh 👲🏻 #Michelin #Michelin1Star #ミシュラン #ミシュラン一つ星

In collaboration with Bosch Home (SG), we embarked on a mission to recreate a series of Lost Recipes of Singapore; and the first recipe we’re dishing out is the Yi Zi Ban – a Hakka snack with over 300 years of history.
Yi Zi Ban is a Hakka traditional snack from Tai Po County, Guangdong Province. It has a history of more than 300 years. One long forgotten dish, the story is that Hakka mother will prepare this dish for her son when he travels on a long journey overseas and to ensure his safe return.
The skin is made from glutinous rice flour, texture similar to mochi. The filling is a textural delight as it has the softness of tofu, the crunchiness from the black fungus and the meatiness from the finely diced pork encased in chewy stretchy ‘QQ’ skin. The banana leaf perfumes the snack when it is steamed. It is one seriously good delicious snack!

杂粮饭:
白米一杯,1 cup rice
糙米1杯,1 cup brown rice
小米1/2杯,1/2 cup foxtail millet
三色藜麦1/2杯,1/2 cup tri-color quinoa
土豆泥:
土豆3个(800g),3 potato (about 800g)
黄油20g,20g butter
盐1小勺,1 tsp salt
热牛奶150ml,150ml milk
粉蒸牛肉:
牛里脊300g,300g beef tenderloin
豆瓣酱1大勺,1 tbsp Doubanjiang
蒸肉米粉100g,100g Steamed meat powder
生抽2小勺,2 tsp light soysauce
糖1小勺,1 tsp sugar
蒜蓉1/2小勺,1/2 tsp chopped garlic
粽叶,reed leaf
酒酿1大勺,1 tbsp Jiuniang(fermented rice)
小苏打1/4小勺,1/4 tsp baking soda
茄汁牛肉丸:
牛里脊200g,200g beef tenderloin
猪肉糜200g,200g minced pork
胡萝卜30g(细丁),30g chopped carrot
鸡蛋1个,1 egg
面粉1-2大勺,1-2 tbsp flour
姜泥1/2小勺,1/2 tsp chopped ginger
盐,salt
洋葱130g(细丁),130g chopped onion
番茄丁罐头250g,250g canned tomatoes
番茄膏1大勺,1 tbsp tomato paste
糖1小勺,1 tsp sugar
叉烧猪软骨:
猪软骨400g,400g pork cartilage
叉烧酱3大勺,3 tbsp barbecued Sauce
姜片2片,2 slices of ginger
葱段10cm,10 cm leek segments
酒酿三文鱼:
三文鱼400g,400g salmon
酒酿2大勺,2 tbsp Jiuniang(fermented rice)
生抽2大勺,2 tbsp light soysauce
盐1小撮,pinch of salt
蜂蜜1大勺,1 tbsp honey
葱段5片,5 segments of leek
香菇肉燥:
猪肉糜400g,400g minced pork
干香菇8朵,8 dried shiitake mushrooms
洋葱100g,100g onion
五香粉2小勺,2 tsp five-spice powder
八角1个,1 star anise
香叶2片,2 bay leaves
生抽2大勺,2 tbsp light soysauce
老抽1小勺,1 tsp dark soysauce
黄酒2大勺,2 tbsp Shaoxing ricewine
盐1/2小勺,1/2 tsp salt
糖2小勺,2 tsp sugar
姜泥1小勺,1 tsp ginger puree
黑胡椒一小撮,pinch of black pepper
葱段10cm,10 cm leek segments
干锅卷心菜:
卷心菜400g,400g cabbage
干香菇4朵,4 shiitake mushrooms
蒜蓉1小勺,1 tsp chopped garlic
干辣椒4个,4 dried chillies
盐1小勺,1 tsp salt
糖1/2小勺,1/2 tsp sugar
黑胡椒一小撮,pinch of black pepper
水煮西兰花:
西兰花600g,600g broccoli
盐,salt
蔬菜杂炒:
胡萝卜丁100g,100g diced carrot
杏鲍菇丁100g,100g diced pleurotus eryngii
罐头玉米50g,50g canned corn
毛豆仁50g,50g shelled edamame
盐1/2小勺,1/2 tsp salt
蚝油2小勺,2 tsp oyster sauce
蒜蓉1小勺,1 tsp chopped garlic
腌胡萝卜/卷心菜:
胡萝卜100g,100g carrot

Such an easy noodle meal!
Xing Zhou Mi Fen has so many variations that make it like Home, Truly (get it, Singaporeans?). This version is a simple yet tasteful recipe that uses shredded pork and omelette strips to dress the bee hoon.
Known as Singapore-Style Noodles depending on where you’re at, Xing Zhou Mi Fen is an effortless stir-fried noodle base - toss in your favourite vegetables or diced meats and you’ll have a whole new meal.

My daughter (6 years) has been to Daikon digging at her Kindergarten and brought back some Daikon. She asked me to make Daikon Curry ☺️ It was juicy, tasty, yet delicious. Must TRY 😉
At first, when she requested for this idea, I thought it can turn out too watery, but NOT. I would make it again!!!

Daikon Radish Curry and Rice (Japanese Kare Raisu Recipe)
Difficulty: Easy
Time: 30min
Number of servings: 4
Ingredients
500g (1.1lb) Daikon radish
200g (7oz) minced chicken or pork is good
1/2 box Japanese curry and rice roux https://amzn.to/3oXYXRa
Dashi soup stock or water as directed on the package
1 tbsp. Miso *if you have
150g (5.3oz) minced onion
1 tbsp. cooking oil
4 servings rice
Directions:
1. Dice Daikon radish.
2. Heat cooking oil in a frying pan, sauté the minced onion and diced Daikon for 5 min.
3. Add minced meat and cook until no longer pink.
4. Add Dashi soup stock or water and cook until Daikon radish is soft.
5. Stop the heat (to mix well) and add Miso (if you have) and curry roux. Mix well and cook on low until thick.
6. Serve the curry over the rice.
