1. Chơi game
Mình rất thích game Liên Minh Huyền Thoại (League of Legends), nhưng mình không dám chơi game online vì sợ nghiện. Mình từng nghiện game online hồi cấp 2 và hậu quả rất thảm khốc nên mình chỉ xem các clip highlights các trận đấu (bằng tiếng Anh) và chơi các game offline thôi. Ban đầu mình thấy các bình luận viên trong clip đọc rất nhanh, có những đoạn không thua kém Eminem trong bài Rap God nhưng dần mình quen và nghe khá thoải mái. Mình xem các clip về game này để giải trí mỗi khi đi làm về chứ cũng không có chủ đích là ôn luyện gì, nhưng kỹ năng nghe của mình cải thiện rất tốt. Mình thi IELTS ở BC hồi tháng 2/2020 được 8.5 Listening.

Không chơi game online nhưng mình có chơi game offline trên PS4 (vì nó không làm mình nghiện). Các game mình chơi nói tiếng Anh khá nhiều và mình học rất nhiều từ vựng mới. Khi chơi gặp từ nào không hiểu mình thường tra cứu nhanh rồi lưu lại. Sau khi chơi xong mình xem ví dụ sử dụng kỹ hơn rồi mình chọn lọc từ nào phù hợp rồi tập đưa vào các bài Speaking. Các từ vựng khá ngầu mình học được trong game như là: benevolent, turmoil, eclectic, invigorate… Hoặc các cách diễn đạt hay như: a pain in the neck, to make matters worse… Một số tựa game mình recommend: Dynasty Warriors 8 Xtreme Legends, Mortal Combat 11, God of War 3.

2. Xem YouTube
YouTube là một nguồn nghe rất tốt mà lại miễn phí. Hãy subscribe các kênh mà bạn thích và mở nghe thư giãn. Nếu bạn thích nấu ăn (hoặc chỉ thích ăn), hãy follow những kênh chuyên về ẩm thực, và bạn có thể vừa xem video vừa rửa bát hay xếp đồ. Nếu bạn thích du lịch, hãy subscribe các kênh chuyên về du lịch. Hoặc nếu thích cả 2 chủ đề Ẩm thực và Du lịch thì bạn có thể subscribe kênh “Best Ever Food Review Show” của Sonny. Sonny là người Mỹ nhưng thường sinh sống ở Việt Nam, anh ấy đi nhiều nơi tìm hiểu ẩm thực. Clip được đầu tư công phu và cách nói chuyện của anh ấy cũng rất dí dỏm.

Ngoài ra mình thích cuộc sống outdoor – tự đi thuyền ra biển câu cá và nấu ăn, nên mình subscribe kênh chuyên về chủ đề này là “Deer Meat for Dinner”. Đây là kênh mình xem để giải trí chứ cũng không có chủ đích xem để luyện nghe. Nếu bạn thích các chủ đề hài hước bắt theo trend thì không nên bỏ qua kênh “Nigahiga” với hơn 21 triệu lượt sub, bạn sẽ cười thả ga khi xem các clip của anh này. Còn nếu bạn có sở thích hơi lạ là tìm hiểu về loài cá sấu giống mình thì bạn có thể subscribe kênh “Gatorland” – trang dành cho người mê cá sấu.

3. Nghe nhạc / Bài nói tiếng Anh
Nếu quá bận rộn không có thời gian ngồi luyện nghe, các bạn có thể tận dụng các thời gian chết trong ngày để nghe chút gì đó bằng tiếng Anh. Mình chép vào máy mp3 Sony Walkman của mình các bài nhạc US/UK và các bài Ted Talks để nghe trong lúc đi xe buýt hoặc ngồi chờ món ăn ở các quán. Bạn có thể xem loại máy mình dùng trong hình. Máy khá dễ dùng và chất lượng nghe cũng rất ổn. Máy còn cho phép bạn chia thành các folder khác nhau – rất tiện lợi nếu như bạn muốn chia các bài nghe thành các chủ đề khác nhau như Environment, Education, Health…

[Paris pastries / 巴黎甜點] 巴黎半島酒店 2019 年聖誕節蛋糕與下午茶甜點 / Christmas tea time & 2019 Yule log creation of Dominique Costa (The Peninsula Paris - Official ) (for English, click "see more")

週二受邀至巴黎半島酒店品嚐 Dominique Costa 主廚創作的聖誕節蛋糕以及聖誕節下午茶甜點。Dominique 主廚的「Vigne Enchantée」（「魔幻葡萄藤」）聖誕節蛋糕，我之前已經在巴黎巧克力大展時看到、也已分享給大家，當時一直很好奇味道，沒想到最後很幸運地在年末親自品嚐到了。

「魔幻葡萄藤」以歐洲聖誕節必備的熱飲「熱紅酒」（vin chaud / mulled wine）為主題，外觀分成兩部分，上方是巧克力與榛果帕林內做的葡萄藤、下方則是葡萄酒盒造型的法式慕斯蛋糕（entremets），主要結構包括香料蛋糕（pain d’épice）、熱紅酒煮西洋梨（poire au vin chaud）、香草輕奶餡（crémeux vanille）與焦糖杏仁酥脆層（croustillant amande caramélisé）等。最令人感到驚奇的，其實是 Dominique 主廚在創作時為一般消費者設想的貼心，從外觀看來像是很堅硬的巧克力雕塑，其實不管是慕斯蛋糕還是巧克力榛果帕林內葡萄藤都很容易切開，在自家聖誕節餐桌上也可以毫無困難地和大家分享。味道則是超乎想像的輕柔，一點都沒有酒精味，熱紅酒的香氣、西洋梨的圓潤和香料蛋糕帶來的聖誕節氣息交織在一起，能夠為聖誕大餐劃下完美的句點。

Dominique 主廚為半島酒店設計的聖誕節下午茶甜點，則圍繞著秋冬常見的食材與風為主題，如栗子、榛果、巧克力等，熱紅酒與西洋梨的搭配也再次以「迷你巴巴」出場，另外還有熱帶水果搭配米布丁、櫻桃搭配優格的組合。當天幾乎每一樣甜點都非常清爽、完全不膩口，能夠把幾乎所有甜點都有餘力地品嚐一遍，真的很令人開心。

I got invited to taste the 2019 Yule log creation and Christmas tea time pastries of the chef Dominique Costa at The Peninsula Paris the other day. While I was already very interested in the “Vigne Enchantée” (“Enchanted Vine”) yule log since its exhibition earlier at Salon du Chocolat, I felt really lucky to be able to taste it finally at the hotel.

Inspired by the indispensable “vin chaud” (French mulled wine) during the festive season, “Vigne Enchantée” composes of a chocolate sculpture of a grape vine and a mousse cake shaped like a wooden wine box. Consistuting by a crispy layer of caramelised almonds, a gingerbread (pain d’épice), mulled wine poached pears pears, vanilla crémeux, and coated by a thin layer of Dulcey chocolate, the cake is extremely easy to be cut and sliced. The chef has apparently taken into consideration that it’s something to be shared on the Christmas dinner table, so he has put extra efforts in it. Flavour-wise, it is slightly spiced by the ginger bread and full of the sweetness of mulled wine and pears. Amazingly light, it is for sure a true delight to the Christmas dinner.

Patries offered at the Christmas tea time surround popular ingredients of the season, such as chestnuts, nuts, and chocolate. The "mulled wine & pears” combination is highlighted once again and transformed into a mini baba. Other pastries like rice pudding mini tarts and cherry yogurt mousse cakes are very lovely as well. Most of them are very light and refreshing which is a good news for those who would like to have a bite on everything.

This year the Peninsula Paris is collaborating with Citroën for the Christmas celebrations. Displays such as a vintage Citroën, part of the hotel collections, and huge Christmas trees decorated by mini Citroëns are installed at the hotel hall lobby. A mini Christmas market and a pop-up pastry shop are also available to all guests. [Paris pastries / 巴黎甜點] 經典巴巴與各種重新詮釋 / Baba - classic and revisited (for English, please click "see more")

在各種經典法式甜點中，我一直有適應困難的就是「#baba」（巴巴）。

這個甜點的基本組成，是將 #加了葡萄乾與新鮮葡萄的布里歐許麵糰，在 #烤好之後浸漬在酒糖液中，最常見的是「rhum」蘭姆酒，另外也有其他如「Malaga」馬拉加甜酒、「Porto」波特酒、「Madeira」馬德拉酒等版本，經常會加 #香緹鮮奶油 做裝飾。

巴巴的命名來自 #阿里巴巴（Ali Baba）。沒錯，你沒有看錯，正是阿里巴巴與四十大盜的故事。十八世紀時由於政爭離開家鄉的波蘭國王 Stanisław I Leszczyński 後來在法國亞爾薩斯、洛林附近定居，他的女兒 Marie Leszczyńska 在 1725 年嫁給法王路易十五。Stanisław 的甜點師 Nicolas Stohrer 為了拯救太乾的布里歐許麵包（也有一說是亞爾薩斯當地的名產 kouglof 咕咕霍夫），靈機一動，以加了番紅花的 Malaga 馬拉加甜酒重新將其浸潤，另外還加上甜點奶餡與葡萄乾、新鮮葡萄等，創造了一個新的甜點。這個作品征服了身為美食家的 Stanisław 國王，傳說中他當時正沉醉於一千零一夜的故事中，所以將這個創新的甜點命名為阿里巴巴。

後來 Nicolas Stohrer 隨著國王的女兒瑪麗一起來到巴黎，他 1730 年在 Rue Montorgueil 上開的甜點店 Stohrer, la plus ancienne pâtisserie de Paris 至今屹立不搖，是巴黎現存最古老的甜點店。而他的拿手甜點巴巴，也風靡了全法國、成為經典中的經典。

根據我過往的經驗，法國人通常都相當喜愛巴巴，但我不但對酒精過敏、也不喜歡浸得濕軟的麵糰。還記得七年前當剛剛到巴黎沒多久，和朋友一起去一家二星餐廳午餐，餐後甜點上了一個浸滿蘭姆酒的巴巴、還附上額外的蘭姆酒依個人喜好添加。幾乎不喝酒的我，被這個簡直是是麵包型的酒瓶嚇到，從此對巴巴敬謝不敏。沒想到身在法國多年，我近來發現自己竟然已經可以欣賞蘭姆酒的香氣而不再感到噁心。最近因為經常路過巴黎銅鑼燒專賣店 Pâtisserie TOMO，每次看到他們的日本威士忌巴巴都非常心動，終於在本週下定決心品嚐了一下。

先說結論，因為我幾乎不喝酒、也不喜歡酒精的味道，所以品嚐過的巴巴非常少，這大概是目前為止「唯一一款」我能夠欣賞的、加了酒精的巴巴。銅鑼燒與布里歐許麵糰相較，口感更加厚實有彈性，而 TOMO 並未將整個銅鑼燒浸在酒糖液中直至軟爛，所以仍舊能夠享受原本的口感；以 Nikka 威士忌和沖繩黑糖調製的糖漿，有麥芽的醇香、威士忌輕微的冷冽，但絲毫沒有酒精的刺鼻。單純美好的香草香緹鮮奶油，以濃醇補足了口味的深度。雖然我只吃了幾口，就能感覺到臉頰微微發熱，但這是一款我非常喜愛、也會希望下次再來品嚐的甜點。

之前我在其他文章中介紹過 Pâtisserie TOMO，店內不僅有傳統的日式銅鑼燒、也有許多將法式經典甜點以銅鑼燒重新演繹的作品，這個威士忌巴巴銅鑼燒便是其中的代表作。點開照片，我另外附上 MORI Yoshida、des Gateaux et du Pain、Yann Couvreur Pâtisserie 的巴巴作品，讓大家一起欣賞經典的再創作。

Among all French pastries, baba has been a real challenge for me.

This classic is composed with a brioche made with raisins as well as fresh grapes. After it’s baked, It then has to be soaked in syrup made with hard liquor, rum usually, sometimes with Malaga wine, Porto wine, or Madeira wine, etc. Very often, it is decorated with Chantilly cream.

The pastry is attributed Stanisław I Leszczyński, the exiled king of Poland. Nicolas Stohrer, one of his pâtissiers from Alsace had the idea of soaking a dried brioche (or kouglof) in Malaga wine with saffron and added dried and fresh raisins with pastry cream. Legend says that during the time it was served, Stanisław was in love with the stories in A Thousand and One Nights and thus named the pastry as “Ali Baba”.

When Marie Leszczyńska married Louis XV in 1725, Nicolas Stohrer followed her to Versailles as her pâtissier, and then opened his own pastry shop “Stohrer” in 1730 on Rue Montorgueil in the 1st arrondissement in Paris. The shop remains today and is now the oldest pastry shop in Paris. His baba also has become one of the great classics of French pastries.

According to my own experience, French people seem to love baba. But I’m not a big fan of it since I’m allergic to alcohol and I don’t really get the idea of a soggy bread. I still remember my first time tasting a baba. It was 7 years ago when I just arrived Paris. I had lunch with friends in a Michelin two-starred restaurant and the dessert was a huge baba soaked thoroughly in rum syrup and with additional rum to taste. To me it was almost like a bread-shaped bottle of wine and I was almost traumatised. As I can’t drink, I don’t really like the smell of alcohol either. But after several years of living in Paris, I recently found out that I seem to be able to appreciate the smell of rum and some alcohols finally. So I was thinking that maybe I could give it a try when I found the Dorayaki Baba au Whisky at Pâtisserie TOMO.

Well, as I haven’t really tasted a lot of babas, I can’t say this is the best, but it is surely the top 1 among all what I’ve tasted. The dorayaki pancakes are well perfumed by the Japanese whisky Nikkai. Soft, moist but and not-at-all soggy. The texture of dorayaki is well-kept which is a big plus compared with the brioches that have almost lost its characteristic when saturated with alcoholic syrup. The Nikkai whisky has a really rounded and mellow smell of malt and the Chantilly cream adds depth to the tinge of alcohol. Though I could already feel that my cheeks started to get flushed after several small bites, it’s still a real delight that I’d like to taste again.
