材料:
桂花魚 ... 1條
鹹酸菜 ... 150克
芽菜 ... 50克
白蘿蔔 ... 60克
野山椒 ... 10克
紅辣椒 ... 1條
薑片 ... 10克
芫荽 ... 10克
蔥花 ... 10克
醃料:
鹽 ... 1茶匙
胡椒粉 ... 1茶匙
啤酒 ... 20ml
生粉 ... 2茶匙
蛋白 ... 少量
調味料:
鹽 ... 1茶匙
糖 ... 1茶匙
胡椒粉 ... 1茶匙
醋 ... 1茶匙
魚露 ... 1茶匙
食譜:
第一步 起魚片,切鹹酸菜
第二步 將魚骨和魚片各自用啤酒和清水均勻地攪拌,攪拌乾淨後撈出 備用
第三步 魚片加入醃料,攪拌,待完全吸收備用
第四步 起鑊,開滾水,烚鹹酸菜約一分鐘,隔水備用
第五步 落油,炒芽菜,備用
第六步 落油、薑,把魚頭、魚骨煎至金黃色
第七步 把酸菜落鑊炒香,直至開始乾身微焦,然後落油爆香其他菜料
第八步 加熱水,大火滾起後,加入魚頭,然後調至中火煲3分鐘,芽菜放在碗底
第九步 魚湯加入魚露、糖、胡椒粉、醋調味,煮好之後把所有材料撈起,放入鍋中
第十步 將魚湯收細火,加入魚片滾15秒,撈出放入碗中,把魚片慢慢推散,使其平均受熱

-魚骨煎至兩邊金黃 湯才會奶白入味
-野山椒是酸菜魚辣味的靈魂
-啤酒洗魚片有去潺和殺菌作用
-「起雙飛」砌法有助令魚片更加吸收精華

Chinese perch ... 1pc
Pickled cabbage ... 150g
Mung bean sprouts ... 50g
White radish ... 60g
Wild chili pepper ... 10g
Red chili pepper ... 1pc
Ginger slices ... 10g
Coriander ... 10g
Scallion ... 10g
Marinade:
Salt ... 1tsp
White pepper ... 1tsp
Beer ... 20ml
Corn starch ... 2tsp
Egg white ... a little
Sauce:
Salt ... 1tsp
Sugar ... 1tsp
White pepper ... 1tsp
Black vinegar ... 1tsp
Fish sauce ... 1tsp
Recipe:
STEP 1 Cut the fish fillet,Cut the pickled cabbage
STEP 2 Wash the fish fillets and the fish bones with beer and water,Rinse well and set aside
STEP 3 Add marinade to the fish fillets and mix well,Set aside
STEP 4 Boil a pot of water,Cook pickled cabbage for one minute,Drain and set aside
STEP 5 Add oil and stir-fry the bean sprouts
STEP 6 Add oil and ginger,Cook fish head and fish bones until golden
STEP 7 Stir-fry the pickled cabbage,Until dry and crisp,Add oil to cook the vegetables
STEP 8 Pour in hot water and bring to a boil,Add the fish head,Simmer on medium heat for 3 minutes,Put bean sprouts at the bottom of the pot
STEP 9 Add fish sauce, sugar, white pepper and black vinegar to the broth,Put all the ingredients into the pot
STEP 10 Cook the fish fillets on low heat for 15 seconds,Disperse and cook evenly,Add to the pot
TIPS:
-Cook fish bones until golden for a milky white fish broth
-Wild chili pepper is the essence of the dish's hotness
-Wash the fish fillets with beer to remove slime and sterilize
-“Butterflying" makes fish fillets absorb flavour easier

清明養生重點:「健脾祛濕,疏肝解鬱」
淮山(又名山藥):補腎精、健脾胃、補肺氣
洋蔥:祛風發汗、行氣化痰
涼拌淮山紫洋蔥
材料:鮮淮山 1 段、紫洋蔥 1/4 個、紫菜絲適量、木魚花適量
調味醬汁:生抽 1 茶匙、醋 1 湯匙、黃糖 1/2 茶匙、玫瑰花瓣少許
做法:
1. 鮮淮山去皮後切粗條;紫洋蔥切絲;調味醬汁拌勻備用。
2. 燒滾一鍋水,加入鮮淮山灼 15 秒後撈起瀝乾,浸入冰水中一會後撈起瀝乾。紫洋蔥亦可浸在冰水中一會減少辛辣感。
3. 鮮淮山上碟,加上紫洋蔥絲,淋上調味醬汁,灑上紫菜絲及木魚花即成。
注意:處理新鮮山藥宜戴手套,因為山藥黏液會刺激皮膚引致痕癢。

Onion: dispel wind, induce sweating, promote the circulation of qi, and get rid of phlegm
Chinese yam purple onion salad
Ingredients: 1 section fresh Chinese yam, 1/4 purple onion, some seaweed shreds and bonito flakes
Sauce: 1 teaspoon soy sauce, 1 tablespoon vinegar, 1/2 teaspoon brown sugar, some rose petals
Method:
1. Cut the peeled fresh Chinese yam into thick slices; shred the purple onion; mix the sauce for later use.
2. Boil a potful of water; add fresh Chinese yam into the pot for 15 seconds, take it out, and drain the excess water. Dip the purple onion in iced water to reduce the pungent sensation, if necessary.
3. Place the fresh Chinese yam on a plate, add purple onion shreds on top, drizzle it with the sauce, and top it with seaweed shreds and bonito flakes.
Note: It is best to put on a pair of gloves when processing the fresh Chinese Yam as its sticky sap could irritate the skin.

雨水養生重點:「祛濕禦寒,養護脾胃」
糯米:補中益氣、健脾養胃
枸杞子:滋補肝腎,益精明目
糯米珍珠丸子
材料:糯米300克、免治豬肉200克、蝦10隻、馬蹄5粒、雞蛋1隻、蔥1棵、枸杞子10粒
豬肉調味料:生抽1湯匙、糖1茶匙、麻油少許、胡椒粉少許
做法:
1. 所有材料洗淨;糯米浸水2小時後瀝乾;蝦身去殼保留蝦尾,去腸;馬蹄去皮切碎;蔥切粒。
2. 免治豬肉加入調味料拌勻,加入馬蹄粒、雞蛋及蔥粒攪拌至有黏性。
3. 取適量豬肉餡放在掌心,放上一隻蝦,將豬肉餡搓圓,放在糯米上滾一圈平均沾上糯米,放上枸杞子。
4. 將珍珠丸子排在碟上,隔水蒸15分鐘至熟透即成。
注意:扭傷、痛症患者、容易出現胃脹不適者不宜過量服用。要注意糯米性質黏滯滋膩,難以消化、容易礙濕,所以不宜過量食用,以免滯氣引起胃脹。消化力差及有濕疹者不宜多食,小兒及生病時更不宜食用。

Glutinous Rice Balls
Ingredient:300g glutinous rice, 200g minecd pork, 10 prawns, 5 water chestnuts,
1 egg, 1 sprig spring onion, 10 wolfberry
Seasoning:1 tablespoon of soy sauce, 1 teaspoon of sugar, sesame oil, pepper
Preparation:
1. Rinse all ingredients. Soak glutinous rice in water for 2 hours and drain. Remove the shell from prawn and keep the tail on. Peel water chestnuts and dice, dice spring onion.
3. Mix the seasoning ingredients with minecd pork, water chestnuts, egg and spring onion.
4. Use the pork mixture to make small ball with one prawn. Coat with glutinous rice. Put the wolfberry on.
5. Steam for 15 minutes.
Notice:Those with sprains, chronic pain, or those prone to abdominal discomfort should not have any. Note that glutinous rice is more sticky and heavier, which makes it more difficult to digest. It can also lead to stagnated dampness so do not eat too much of it as that can lead to abdominal bloating. Those with weak digestive system, with eczema, those who are sick and children should not have glutinous rice.

Resepi Churros Bersama Sos Coklat
Bahan-bahan (Churros)
100 gm mentega
275 ml air
150 gm tepung gandum
2 biji telur
1/2 sk serbuk kayu manis
3/4 cwn gula kastor
1 sk esen vanila
Bahan-bahan (Sos Coklat)
1 cwn coklat gelap
1/2 cwn susu penuh krim
1 sb mentega
Cara memasak
1. CHURROS: Masak air seketika. Masukkan mentega dan tunggu hingga cair.
2. Masukkan esen vanila dan tepung. Gaul sehingga campuran menjadi doh.
3. Ketepikan dan biarkan ia sejuk seketika.
4. Masukkan telur satu demi satu dan gaulkan sehingga doh berkilat.
5. Masukkan doh tersebut ke dalam piping bag.
6. Paipkan doh ke dalam minyak yang panas dengan anggaran 2 inci panjang setiap satu dan gunting.
7. Goreng sehingga keperangan. Angkat dan toskan.
8. Pindahkan churros ke dalam bekas bertutup. Tuangkan gula dan serbuk kayu manis. Tutup bekas dengan penutup dan goncangkan sehingga churros disalut rata.
9. SOS COKLAT: Panaskan coklat, susu, dan mentega atas api sederhana sehingga cair sebati.
10. Sejukkan seketika. Sos siap untuk dihidangkan bersama churros.

275 ml water
150 gm wheat flour
2 nos eggs
1/2 tsp of cinnamon powder
3/4 cup of castor sugar
1 tsp of vanilla essence
Ingredients (Chocolate Sauce)
1 cup of dark chocolate
1/2 cup of full cream milk
1 tbsp of butter
Cooking methods
1. CHURROS: Bring water to a boil. Add in butter and cook until butter fully melted.
2. Add in vanilla essence and wheat flour. Mix until the mixture forming a dough.
3. Set aside and let it cool for a while.
4. Add in eggs one by one and beat until dough is shiny.
5. Place the dough inside a piping bag.
6. Pipe dough into hot oil with estimation of 2 inch long for each dough and snip off.
7. Deep fry until golden brown. Lift up and drain.
8. Transfer churros into a container. Pour in sugar and cinnamon powder. Close the lid and shake well until churros are fully coated.
9. CHOCOLATE SAUCE: Heat chocolate, milk, and butter over medium heat until fully melted and well-combined.
10. Let it cool and chocolate sauce is ready to be served with churros.
