Martin Ong, from 88 Hong Kong Roast Meat Specialist, does one of the best sio baks in town! He now has three outlets — Tyrwhitt Road, Ubi and the latest one in Lavender Street. This space in Lavender is where he will prepare all the roast meats and deliver them to the rest of the outlets.
The sio bak is air dried for at least 24 hours. The first bite produces a noisy crunch as the skin breaks, then you will find yourself sinking your teeth into well-seasoned, tender, and juicy meat. The roasted duck was really beautifully seasoned, with quite a refined taste that wasn’t too gamey. Martin collects the duck juices that oozed out during the roasting process and baste the meat in its own juices to keep it moist.
The char siew was, for me, one of the best barbecued pork I have eaten in a long time. Eating Martin’s char siew is like eating a fatty version of bak kwa. Nothing says comfort food like tender well-caramelised barbecued pork with the perfect fat-to-lean meat ratio. Pair it with their wanton mee and it may be one of your best breakfast!

An avid fan of Wanton Mee, Mr Luo started Belly Lucky Noodle and prides himself on the fact that all his ingredients (except the noodles) are handmade! Mr Luo freshly roasts fatty Char Siew daily, using a premium cut of ‘Bu Jian Tian’ (which he translates to ‘No See Sky’) pork. Mr Luo explained that this cut is from the pig’s armpit. The well-marinated meat was tender, juicy and flavoursome.
Mr Luo only sells dumplings as he feels that with Wantons, it is hard to pack them to the brim. Belly Lucky Noodle’s dumplings are filled generously with good quality ingredients such as Sua Lor (Metapenaeus Ensis), water chestnuts, minced meat and mushrooms. What I thought was interesting was the Miso soup base! While dining at a Chinese Restaurant in Tokyo, Mr Luo fell in love with their dumplings in Miso Soup, and decided to recreate it. This is not the conventional Wanton Mee you would typically get, but it’s definitely worth a try!

Fei Zai Xiang Shao La Wanton Mee might not be well known, but they do their meats well. Wanton Noodles came with the standard wanton noodles, wantons, and char siew. The char siew was quite fatty. The edges were nicely caramelised. Some ends were even slightly charred for that lovely smokey fragrance. The plump wontons were packed with meat, and I kind of wish there were more on the plate as they were quite delightful.
The Roasted Meat Rice came with rice and roasted meat, and was covered in the same sauce as the wanton noodles. The roast meat had that lovely crackly skin, and was tender and fatty.
