【來自東倫敦的醇黑佳釀—— Barney Artist】
自古以來,東倫敦是英國最人文薈萃的地方。為什麼,因為犯罪率高。呃,好像有點滑坡。因便宜的住宅東倫敦居住不少各國移民和留學生,無論是黑人社群、北非穆斯林、印度人,都聚集於此。
但這同樣成就了倫敦的次文化聚集地。文化交融和碰撞之下,更多的藝術能量產生於此。即便時至今日有如紐約布魯克林縉紳化之趨勢,倒也漸次產生藝文聚落的新創可能。
今年方來台演出之 Jordan Rakei,出生澳洲現亦旅居倫敦。因著才華相吸的本能,不少年輕的音樂創作者也凝聚了起來。譬如同來台過的 Jay Prince;越來越紅可能請不起的 Tom Misch;Abstract Hip Hop、Jazzy Hip Hop 好手 Alfa Mist;實力女饒 Little Simz;電氣黑樂怪才 Yussef Dayes;我個人超愛的 Loyle Carner。以及本文主角 Barney Artist。這群才華洋溢到讓人討厭的臭傢伙,就像當年的 Soulquarians 一般。一起 jam、一起演出,一起用音樂羞辱平庸、征服宇宙。
Barney Artist 是土生土長的東倫敦子弟,他沒有像其他街頭兄弟一樣 Grime 爆。而是受到 A Tribe Called Quest 和 The Roots 影響,走向有跟沒有之間,你知我知的那種風格。深厚的黑樂基礎是他最大的利器。Barney 行雲流水的饒舌,在 Jazzy、Soul、Alternative Hip Hop 間穿梭。愛、信仰、友情、日常,皆是其創作題材。如果拿文學作品比喻,他不是一個熱愛玩弄修辭藝術的匠人,更像是書寫《先知》的 Kahlil Gibran。是個單純有酒也有故事的人。

Barney Artist 的音樂不太適合用單曲聆聽,整張專輯更像是場旅程。就如同他今年八月所發的 《Bikes Are Bikes》,不疾不徐的單車輕旅。有些歌手的作品像是不刷卡在 uBike 上踏步運動,沒有前進感。Barney 則是偶爾漫步偶爾疾行,運用聲音的變化,和各曲目間的器樂搭配的轉換,以此牽動聽眾。

Cédric Grolet 主廚的第二本食譜書《OPÉRA》來了!法文版即將於 11 月 7 日上市!這本食譜書不但揭開了 Cédric 主廚甜點師生涯的另一章,也揭露了 Cédric Grolet Opéra #販售商品的製作方法。
Cédric 主廚在序言中提到,如果說他的第一本書「《FRUITS》展現了極度現代的技巧、是代表未來的甜點,那《OPÉRA》就是 #返璞歸真,#代表過去與現代的甜點」。新書與新店製作的商品,將他從多年在宮殿級酒店 Le Meurice 的工作方法與內容中解放出來,他能夠在另外一個象限創作,進而 #創造一個新的領域。
與第一本食譜書《FRUITS》相較,本書中的食譜 #更加適合一般甜點愛好者在家製作。符合目前甜點界最新的「#自然無添加」、「#回歸本質」、「#減糖」的潮流,Cédric 主廚強調他「#盡其所能地刪減掉繁雜的製作步驟」,希望「#更接近食材的天然質地、#鮮度與味道」,讓人能夠「#立即享受美味」。

Cédric Grolet, the world’s best pastry chef is publishing his second recipe book “OPÉRA” on 7th November! This book unveils recipes of pastries that are going to be offered in his new shop Cédric Grolet Opéra and turns a new page of the chef’s career.
The chef mentioned in the forewords that “FRUITS (his first book, ed.) illustrates a resolutely modern technique and pastries of future, “OPÉRA” rather demonstrates pastries of the past and present time that take a step back to the essentials.” The products offered in his new shop and featured in this book actually liberate him from what he’s been doing at Le Meurice for many years. He’s now able to "work on another axis and create a different universe”.
Compared with “FRUITS”, recipes in “OPÉRA” are more accessible for home bakers. No colorants and additives are added, more natural, they echo with the latest trends in pastry industry. Cédric emphasizes that he “eliminates to the maximum extent the steps in terms of method” and make it “as close as possible to the original texture, freshness, and flavours of the ingredients.” By making those pastries and desserts a lot easier and quicker to realize at home, they can be tasted “in an instant”.
Though these recipes are a lot friendlier to the general public and are easier to follow, the chef and his team never stop doing their best. This book and the new shop can be seen as efforts to

1 infected HEALTH workers 是「感染(伊波拉)的醫護人員」,被不小心的譯者誤看、進而誤解為 [infected but/yet HEALTHY] workers 「雖染病但仍健康的工作人員」,再順勢把突兀的中文加以合理化,「圓(謊)」成為「感染病毒但已恢復健康的工作人員」。
如果整本書就只有一兩個這種眼睛脫窗式的錯誤,我們無需太苛責。人皆有錯。不過,下一句,立刻看到這個:
2 As we were going to press 這「go to press」是常見的說法,截稿期限過了,書稿付印之際(press 是名詞:印刷機、印刷廠),結果譯者顯然「自信滿滿」,自認無需查字典看看會不會有「go to press」的解釋,自行發揮說故事的天才,把 press 理解成動詞「強調」,也不想想前面的 as we were going to(正當我們正要去到……)這種過去進行式的用法,跟動詞「強調」搭配起來,會不會令英文程度很高的自己感覺怪怪的(因爲進行式用得不妥當)。譯者這時再來一個「掩飾理解不足」的動作,把它「改編」成:我們「必須」強調,選擇性地無視於as(當……之時)和過去進行式的作用。各位是不是看到了,如果理解正確,如果 press 真的是動詞強調之意的話,這句不是應該譯作「我們正準備強調……」嗎?所以,我們彷彿觀察到了「誤譯腦」的細部分解動作!
第一頁試讀的翻譯,尚可,忠實和準確度差強人意(例如已有讀者指出「數千人」譯成「近千人」),小問題很多,都不算嚴重。然而以上兩個大誤譯,就足以讓人根據經驗下結論:這本中譯書的品質堪慮。
下一個沒有誤譯的人類物種,感覺要很久很久才會演化出來。大家一起加油,多多用心用腦、看懂了再下筆,鍛鍊記憶「肌肉」、強化神經回路,為我們百年千年後的子孫積點福分。

Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.
Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.
To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

How to make Oven-Baked Smoked BBQ Ribs
✎ Ingredients
pork ribs 950g
☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g
☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g
1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

How to make Matcha Ice Cream
☞ Container size: at least 800ml
☞ To freeze mixing bowl 12 hours before
✎ Ingredients
heavy cream 250g
sweetened condensed milk 170g
milk 50g
IPPODO matcha powder 15g
✎ Instructions
1. Sift the matcha powder.
2. Add milk into the matcha powder and mix well until it becomes the paste form.
3. Add condensed milk into the matcha paste, slowly incorporating the mixture until smooth. If there are too many lumps, sift it.
4. Pour the cold heavy cream into a freese mixing bowl, whip the cream on medium high speed until almost stiff peaks, be careful not to over whip.
5. Gently add the matcha mixture into the whipped cream, whip on low speed until the mixture becomes thick and airy.
6. Transfer the mixture to an 800~1000ml metal container and freeze for 4-6 hours.

☞ Servings : 2 glasses, each 250ml

☞ For the hot fudge sauce
heavy cream 40g
whole milk 83g
granulated sugar 10g
70% bittersweet chocolate 65g
unsalted butter 15g
☞ For the chocolate milkshake
fudge sauce 125g
whole milk 140g
vanilla ice cream 250g
☞ For the Oreo milkshake (1 glass, about 240ml)
oreo cookie 3
whole milk 80g
vanilla ice cream 125g
📍 Instructions
☞ For the hot fudge sauce
1. Add milk and heavy cream and sugar into the saucepan over medium-low heat, bring it to a simmer, then add butter to mix until melted. Remove the pan from heat.
2. Add the bittersweet chocolate into the saucepan and stir often, the chocolate is melting into the cream and butter.
3. Then pour into a pot or a container to let it cool down.
☞ For the chocolate milkshake
1. Throw the vanilla ice cream, milk and fudge sauce into a blender and purée until smooth.
2. Serve with straws in a tall glass. Top with heavy cream and shave a little chocolate Cheers.

1. Throw the Oreo cookies, ice cream and milk into a blender and purée until smooth.
2. Serve with straws in a tall glass.
