Paying tribute to the pioneer Hainan chefs, this recipe explores the iconic use of soda crackers and trademark ketchup-based sauce with veggies. Think crispy chunks of tender meat drenched in saucy good, perfect with a bowl of rice!
Swap out the pork for chicken thighs and voila, extra crispy Hainanese chicken chop at home.

380g Pork Chop
½ tbsp Garlic powder
½ tbsp Onion powder
1 tbsp Light Soy sauce
2 tbsp Ginger juice
1 tbsp Oyster sauce
2 tbsp Cooking cream
White Pepper taste
2 tsp Cornstarch
4 tbsp Frozen mixed vegetables (frozen peas, carrots, corns)
1 Onion (sliced)
1 Tomato (diced)
Batter for frying:
4 tbsp Potato starch
2 Eggs (beaten)
14 Soda cream crackers (crashed)
Sauce:
15g Salted butter
2 tbsp Cooking oil
2 tbsp Worcestershire sauce
2 tbsp Light soy sauce
1 tbsp Sugar
3 tbsp Ketchup
1 cup Water
3 tbsp Cornstarch solution (1 cornstarch:2 water)
A squeeze of lemon juice

Assalammualaikum, macam mana "Perintah Kawalan Pergerakan" korang di rumah? Rasa bosan tak dengan masakan yang sama hari-hari. Near to Mount Erskine in Tanjung Tokong lies a kopitiam selling Hainanese Western Food, uniquely sharing the compound with a Chinese temple. In fact, the kopitiam has been existing for some time and popular among the locals. The menu is strikingly extensive, offering popular choices such as chicken chops, fish and chips, and steaks options, which are rarely seen in any hawker settings. Out of the 3 food we tried here, the chicken chop lived up its reputation, while the steak and mushroom soup lacks any vitality to shine. Besides, it is noted the food here, especially its sauce are skewed toward the sweeter and bolder taste.

2 boneless chicken leg - butterflied (roughly around 220g or 7.76oz each)
2 tablespoons light soy sauce
1 teaspoon salt
A few dashes of white pepper

Hainanese curry rice is a Chinese Singaporean dish consisting of steamed white rice drenched in curry and braising sauce. The dish is often accompanied with other dishes laid on top of the rice such as pork chop, chap chye (mixed vegetables - cabbage), braised pork and a sunny side up. Although this dish is known as Hainanese curry rice, I was told that there is no such dish in Hainan, China (i can't verify because it's hearsay) I hope to visit Hainan one day to confirm myself :)
