酸菜魚
材料: 桂花魚或其他魚,帶甜咸酸菜,大豆芽 ,泡椒 ,辣椒干,花椒 ,薑,蔥,紅辣椒,花椒
醃魚肉味料: 鹽少許,一隻蛋白,胡椒粉少許
做法: 1 燒熱鑊落油,猛火煎香魚骨,鹽少許,加滾水煮至湯濃白隔起魚骨
2 魚肉加鹽拌勻至感覺有些膠質後加一隻蛋白,胡椒粉少許拌勻待用
3 咸酸菜片薄切塊,白鑊炒至乾身
4 落油將薑絲,蔥頭,泡椒,大豆芽,咸酸菜炒香
5 開火煲熱魚湯落魚肉加鹽,菇粉各少許稍滾,魚肉鏟起放做法 4 面上,繼而淋上魚湯加一匙白醋
6 燒熱鑊落油爆香辣椒干及花椒後倒入酸菜魚湯內,紅椒粒,蔥花飾面

Hot and Sour Fish Soup with Pickled Mustard Greens
(YouTube video starts at 1:33.)
Ingredients:
Fish - 1 large sea bass (or your choice of fish)
(Separate the meat from the bones and head. Thinly slice the meat at 45-degree angle into bite size pieces. For larger pieces, make a slit in the center of each slice. Set aside.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
(Important to choose ones that are SWEET tasting instead of salty.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Chinese pickled green chili (“pao jiao”) - 1 jar
Ginger shreds
Garlic pieces
Bean sprouts
Salt - to taste
Mushroom seasoning powder - to taste
White vinegar - 1 tbsp
Potato starch noodles or glass noodles “fensi” - optional to add into the soup
Fish soup base ingredients:
Fish bones
Fish head
Ginger slices - for frying the fish bones and head
Ginger slices - for making the soup
A dash of salt
Very hot boiling water (to make the fish soup creamy white)
Marinade fish meat ingredients:
Salt - a dash
Egg white - 1
White pepper - a dash
Garnish ingredient:
Dried chili
Sichuan peppercorns
Green onion pieces
Fresh red chili pieces
Sichuan peppercorn oil
Methods:
1. In a bowl, add in all the fish meat, a dash of salt, and thoroughly mix until slightly sticky. Add in 1 egg white, a dash white pepper, and mix well. Set aside.
2. Heat up a wok to very hot and add oil. Sprinkle in a dash of salt, add in ginger slices, and add in fish bones and head to make the soup base. Fry them until fragrant and golden brown on HIGH heat, and remove the ginger slices.
3. Add in very hot boiling water, add ginger slices, and bring it to a boil and cook until creamy white. Turn off heat and remove all the fish bones and head and pour the soup through a strainer into a bowl.
4. Return the soup back to the wok and add in marinated fish meat prepared in Step 1 and simmer until cooked. Add in salt and mushroom seasoning powder to taste. Set aside.
5. Heat up a wok, add in oil. Add in ginger shreds, garlic pieces, Chinese pickled green chili, and stir fry until fragrant. Add in bean sprouts, Chinese pickled mustard greens, and mix well. Add in cooked fish meat and fish soup.
6. Drizzle in 1 tbsp of white vinegar.
7. Heat up a separate frying pan, and add oil. Add in dried chili, Sichuan peppercorns, and pour on top of the soup.
8. Garnish with fresh red chili and green onion pieces.
9. Drizzle Sichuan peppercorn oil on top.

材料: 牛肉,青紅辣椒,咸菜
香料: 薑一片,蒜一粒
醃料: 糖少許,胡椒粉少許,鼔油,生粉適量
做法: 1 牛肉先醃備用
2 落油爆香薑,蒜,青紅辣椒,落牛肉炒,最後加咸菜炒勻即可
備註: 咸菜有二隻,一帶甜,另一帶咸,今次是帶甜
咸菜處理可參考酸菜魚
煮酸菜牛肉可試味需否加糖

Stir Fried Beef with Pickled Mustard Greens

Ingredients:
Beef steak slices
(You can replace with beef tenderloin or pork.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package

(If you are using the SALTY type, just add more sugar.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Red and green sweet bell peppers - sliced
Minced ginger
Minced garlic - 1 clove
Marinade beef ingredients:
Cooking oil
Sugar
Light soya sauce
White pepper
Corn starch / flour
Methods:
1. In a bowl, add in sliced beef steak, cooking oil, sugar, light soya sauce, white pepper, corn starch, and mix well. Set aside.
2. Heat up a wok, add oil. Add in minced ginger, minced garlic, red and green sweet bell pepper slices, marinated beef slices, and briefly stir fry until fragrant. Transfer to a bowl. Set aside.
3. Heat up the wok, add Chinese pickled mustard greens. Optional to add sugar now if you find it salty.
4. Return the partially cooked beef back to the wok, and mix well. Transfer to serving plate. Serve.

芒果棷汁糕
材料:
凍滾水 250 ml
奶 250 ml
魚膠粉 35 gr (可改用魚膠片5-6片)
沙糖 100 gr (可依個人喜好加減)
棷奶 1罐
芒果 2-3個
做法:
1. 凍滾水、奶 、魚膠粉、沙糖放入煲內,開中大火煮,邊煮邊輕輕攪拌至魚膠粉和糖完全溶解。
2. 加入棷奶,攪拌至混合後關火,放涼備用。注意:加入棷奶後不要煮太久,以避免油水分解。
3. 芒果去皮切粗條或粗粒,排放入糕盆內,倒入已放涼棷奶混合液,蓋好後放入雪櫃雪至硬身便可

Mango Coconut Pudding
(YouTube video starts at 35:35.)
Ingredients:
Drinking water - 250ml (do not use tap water)
Milk - 250ml
Gelatin powder - 35g (or replace with agar agar)
Sugar - 100g or to taste
Coconut milk - 1 can
(Add in last to avoid the oil separating, which will result in two layers when pudding is set.)
Fresh mangos - cut into your choice of designs. (Cubes or strips or floral.)
(Cut into THICK pieces to avoid pieces from moving.)
Methods:
1. In a cooking pot, add in drinking water, milk, gelatin powder, sugar, and cook until sugar and gelatine have melted and little bubbles appear by continue stirring.
2. Add in coconut milk and taste test for sweetness.
3. Let it cool down to room temperature.
4. In a mould, add in fresh mango pieces on the bottom layer then pour coconut milk mixture on top.
5. Put in the refrigerator to set.
6. Cut into cubes. Serve.
To create mango layers:
Optional to layer mango pieces on the bottom of the mould then refrigerate until they are a bit dehydrated and stick to the mould. This is to prevent them from moving or floating.
Once the mango pieces are set on the bottom of the mould, pour half of the coconut milk mixture in and set in the refrigerator for about 30 minutes.
After 30 minutes, or once the pudding is set, add the remaining mango pieces, coconut milk mixture, and refrigerate it until set and firm. You may create more than 2 layers.
Once set, loosen the pudding from the mould and transfer to a serving plate with the bottom of the pudding facing upward displaying the mango pieces design. Slice and serve.

柏柏爾人與撒哈拉 Berbers and the Sahara

(昨天在沙漠裡過夜無法發文,今天加倍奉還文章較長敬請見諒。 Wasn't able to post in the desert last night. This one is therefore longer -- please bear with the lengthiness :D)
1. 柏柏爾人
撒哈拉行程第二天一早,帶我們參觀柏柏爾村莊的當地響導請我們一行人站在田埂上,和我們分享著他們族群的生活。
「我們每個人看起來都一樣,只有帽子的顏色不一樣。阿拉伯人、柏柏爾人、猶太人……住在一起都沒有問題。因為我們所有人都有同樣的爸爸和媽媽。」
說到這裡他停頓了幾秒看我們的反應。歐洲人的眼神看起來是領會到什麼了,其他人則有點茫然。
「亞當和夏娃。」他補上了這句。令我印象深刻的是他並沒有用英文裡Adam和Eve的發音,反而相當接近中文翻譯的「亞當」和「夏娃」兩個字。
嚮導帶著我們穿過田埂和水圳,告訴我們不同作物的季節和用途、哪個是橄欖樹哪個是杏仁樹、當地人如何只交換不交易等等。接著來到一個土造的傳統建築裡,在裡面向我們介紹他們手工地毯的文化,向我們解釋流程及困難之處,也告訴我們這些地毯都是沒有設計圖的,樣式全靠家族中的婦女傳承各家的專屬樣式。不出所料,下一步就是鼓勵我們買東西,還說他們現在提供DHL送貨到府。雖然是推銷,看在他那麼誠懇的份上我們也沒什麼抱怨(雖然也沒有人買啦)。
最後我們走過河上的木板橋,河邊正好有幾個婦女在洗衣,嚮導就順道提起:「柏柏爾人的女性力氣都很大,因此有時候男人蠻辛苦的……。」我馬上察覺到他在開玩笑,於是便反問他:「所以請問您有這樣的困擾嗎?XD」
他笑了笑之後說:「我太太嘛,生氣的時候真的很……(做出頭腦爆炸的手勢);不過還好,他通常燒的都是綠色的火,不是紅色的火,兩天之後整個人又開開心心的了。」說完他馬上問我:「所以你的太太如何?」接下來過了一秒鐘,我還來不及接話,他隨即補上:「你沒有太太。來,下一位!」(我心想,哇,你這嚮導婊人的功力果然還是魔高一丈呀!XD)
2. 撒哈拉
前段故事埋了個跟撒哈拉有關的哏,不知道各位有發現嗎?
沒錯,就是村裡的作物「橄欖樹」,同時也是三毛作詞、李泰祥作曲、齊豫原唱的歌曲名,連同三毛女士的作品,是使許多華人嚮往撒哈拉的啟蒙作品,按我同團的兩個中國女生也提到這件事(他們受友人之託要把撒哈拉的沙帶回去)。「不要問我從哪裡來,我的故鄉在遠方」的歌詞,配上李大師刻意營造不規則感的旋律,也曾經讓我對於這首歌的意境嚮往;當天下午四點,我們終於一睹撒哈拉的廬山真面目。車子在基地營把我們放下,接下來得騎一個半小時的駱駝到達沙漠中的營地,在那邊吃飯過夜之後隔天返回。
那晚,我們這些觀光客們圍在營火旁邊,當地嚮導們拿出了各種大大小小的鼓,叫我們自己先玩玩。我對於一開始大家不夠high這件事看不過去,於是就自己開始憑感覺亂敲亂唱,用固定但帶一點變化的鼓點配上五聲音階的即興旋律,後來當地嚮導竟然請我和他們一起演奏、吟唱他們的傳統音樂(我只好繼續用萬用和弦與結奏矇混過去,哈哈)。最後所有人都手舞足蹈完,大家也終於放開了,在星空下圍著逐漸黯淡的營火聊著彼此的故事。
隔天早上天還未亮就得拔營起行,原本應該是「夜色茫茫、星月無光」的(欸這是不是有幫某人助選嫌疑啊?XD),結果碰上大滿月,沙丘的輪廓一清二楚,連我們騎在駱駝上的影子都清晰可見,沉睡在黝黑中的沙漠其實很美,只不過氣溫是要命的冷,冷到讓人對撒哈拉完全失去興趣,只想回基地營吃熱騰騰的早餐;一直到接近基地營時,嚮導帶我們來到一座沙丘頂端看日出。這時天色已經不是魚肚白,沙丘也從全黑慢慢被調成土灰色;突然,太陽從地平線上出來了!
只見眼前無數的沙丘從頂部開始被一一打亮,接著整片沙漠像是前晚點燃木炭一般,從灰暗中緩緩轉成溫潤的黃褐色,不見烈焰飛騰,卻像是被陽光烘烤到燒了起來一樣。事後回想此情此景,我突然理解某首台灣國語流行歌詞表達的意境了:
「我的熱情(啊!),好像一盆火,燃燒了著整個沙漠。」
(結果這篇文章莫名其妙的用了一大堆國語歌曲哏,不知道自己在寫什麼,大概是腦袋被撒哈拉的太陽給燒壞了,哈哈。)
1. The Berbers
"We are all the same. Only our hats are different. Berbers, Arabs, Jews... we have no problem living together, because we all have the same father and mother..."
It was the second day of the Sahara tour, and this was said by our Berber guide. The Europeans in our group seemed to get something, while the other remained intact. Then the guide continued: "Adam and Eve." (Interestingly, his pronunciation of the names were very different from English, which I guess were probably Arabic or Hebrew.)
The guide led us through the fields into his village, showed us olive trees and almond trees, and told us how they exchange instead of purchase them. Afterwards we were led into a mud-made residence, where he introduced how traditional carpets are made, and how women passed down family-specific patterns down without any draft. At the end, unsurprisingly, he encouraged us to buy. While one of us bought anything, everyone seemed to be comfortable with that, as he had been passionately showing us his culture.
Finally, we crossed a river while some women were washing clothes. He said, "the Berber women have a lot of strength, and sometimes it can be hard..." Understanding his humor, I jokingly asked, "so, do you have this problem?" He laughed, "Well, when my wife is angry she is... (showing head explosion with gestures); but she usually has green fire, not red fire. After two days she is happy again..." Then he turned to me, "how is your wife?" Not waiting for me to respond, he contiuned, "you don't have a wife. (Indifferent and turning to the next guy,) so how is your wife? ..."
(I have to say he is indeed a very professional tour guide, who even knows how to play back on visitors' jokes.)
2. The Sahara
Many Mandarin speakers became interested in the Sahara because of the literature and a pop song "Olive Tree" of San-Mao, a Taiwanese writer who moved to the the Sahara with her husband in 1970s. The irregular, mysterious melody of the song also helped build my impression about the Sahara. Decades later, I finally arrived at the desert's margin around 4pm. Our trip began at the base camp, and we spent the night in the dessert after 1.5 hours of camel ride.
That night, we gathered around a campfire, and the local guides gave us some traditional drums to play. As an icebreaker, I started making regular beats with some random 5-node scale singing. The local guides were excited and invited me to join their playing and singing. Finally, after some singing and dancing, the group got relaxed, and people exchanged their stories around the dimming campfire.
The next morning, we headed back in the darkness -- well, not completely. It was close to the full moon, and the ride therefore came with very pleasant and tranquil desert view. However, feeling frozen in the temperature, all we wanted was to escape from the desert. Finally, we were led to the top of a sand dune to watch the sunrise. At then, the desert already turned from black to brown-gray. All of a sudden, the sun came up from the horizon. Gradually, the entire desert was "toasted" like charcoal, injected with very warm and amicable soil yellow color. The desert was ignited!
I can't think of any better way to end our time in the Sahara.

[中國特色的中亞城市:喀什]
Kashgar: a central Asian city in China
或者也可以說是中亞特色的中國城市啦。
Or a Chinese city in central Asia.
5月21日,踏入了本趟最艱難的一段旅程:從吉爾吉斯的帕米爾高原通過中吉邊界入境中國,高海拔、沒有大眾運輸、不知道簽證與護照是否能順利通過,那天還意外的加上下大雪;還好結果這天意外的順利,交通問題得以克服、護照和簽證也沒碰到刁難,結果最讓人不耐的反而是入境時的速度——只能說,以一個不正常的身份(台胞)配上一個不正常的證件(中國旅行證)入境這個國家,真的需要很大的耐心啊。用了接近12個小時,終於在晚上九點進入中國最西城市喀什。
Started the hardest part of my journey on May 21: entering China from Kyrgyzstan via Pamir Highway: high altitude, lack of public transit, possibility of rejection, plus heavy snow on that particular date. Fortunately, it was overall smooth - had no problem finding rides, was admitted without further questions. However, the passport check did take a very long time. As a Taiwanese (which is considered both Chinese citizen and foreigner here), entering this country sometimes requires extra patience :)
老實說我原本對於喀什沒有很大的期待,純粹是抱持這路過的心情,畢竟才剛剛去過烏茲別克和吉爾吉斯,這兩個國家的文化都和維吾爾人有點關連(對,很多人都不知道其實烏茲別克人和維吾爾人其實是同一個族群,至今也操著相同的語言,因為對泛突厥主義恨之入骨的中國政府不會讓你發現這件事),但又少了中國色彩而更加純粹;相形之下,走著標準中國特色發展的喀什就沒那麼有特色,喀什的清真寺與陵墓那兩國比起來簡直像路邊民宅一樣。
結果卻讓我大感意外:我發覺這個城市雖然特色不如前兩國那樣鮮明,卻有一些讓我覺得驚喜的發現。簡單記下這一兩天所見:
I didn't expect much from this city: as someone who just came from central Asia, the Islam architecture in Uzbekistan is way more impressive than here, and the Turkic/Islamic culture in Uzbekistan and Kyrgyzstan is more authentic than Kashgar. But to my surprise, I actually liked Kashgar more than I thought. Indeed it is not as impressive, but still found things that amazed me:

Where China and central Asia meet
就如同大多數的中國城市,第一印象往往是超大的建築和馬路,現代化的高樓大廈和北京上海的看起來沒什麼差別;然而,離開市中心不遠,我仍然看到在泥塑的民居旁邊,維吾爾人在泥濘的路上趕著羊,就和我在吉爾吉斯每天看到的景象一樣。而旁邊不到10公尺處就是30米寬的新闢道路,暗示著我看到的這一切可能幾個月之後就會完全改變。
As a typical Chinese city, first impression is often the extra-large-size streets and buildings. The new high-rise buildings here are no different from those in Beijing; but few kilometers from downtown, you can still see more common central Asian scene. Next to mud-covered houses, locals still push their flocks around on muddy roads, even though it was just 10 meters away from a newly built modern street. I think the existence of the street implies that this scene can probably change in a few months.
*維吾爾民居*
Uyghur residence
和青旅認識的朋友一起去逛老城區時,有幸被當地人邀請到家裡短暫作客,得以窺見他們的典型家屋:入口處通常會有個前庭,前庭裡有著一個涼台上面擺著刺繡的軟墊與茶几,這是他們在炎熱天氣裡吃飯喝茶閒聊的地方;前庭裡還會有個直上二樓陽台的階梯,偶有植物枝葉從陽台垂下,成為房屋裝飾的一部分。
主人送上了溫水與形似饅頭的麵食,我們在涼台上透過會講中文的孫女和老爺爺老奶奶溝通。他們已經80(也就是出生在這裡還是中華民國新疆省疏勒縣的那個年代),跟他們說我是台灣人,他們完全不知道那是什麼地方,只是繼續說著這是我太太、這是我孫女、這是我曾孫……。
While exploring the old town with a friend I met at youth hostel, we were invited into a local residence. A typical residence has a front yard, where a bed is set with a table and cushions. This is where the family would eat and hang out while temperature is high. Also a stair leads to a second floor balcony, where some plants would come down into the yard.
We were served with warm water and some homemade bread, and tried to communicate with an old couple through their granddaughter who can speak Mandarin. They are already 80, and know nothing about Taiwan. The gentleman simply repeats that this is my wife, this is my granddaughter, this is my great grandson, etc.
*內地的定義*
The "inner land"
偶然遇到一位家在新疆的漢人小哥,和他提起我旅行的經驗,還有我旅行的花費。他說,他去年去「內地」轉了幾天結果也花了幾萬元。我心想,內地?啊內地不就是你們大陸嗎?我這才想到,其實對不同人來說,「內地」指的是不一樣的概念——對他們來說,東部那些以漢文化為主的核心城市才是「內地」,自己住的地方是邊疆。
這樣說來,「台灣的內地是南投」這個講法好像也不太對,正確來說,東部人會覺得內地是西部、南部人會覺得內地是北部、新北市人會覺得內地是台北市吧。
Met a local Chinese who said he traveled to the "inner land" from Xinjiang (the province where Kashgar is located). This surprised me, as I always thought that for a mainland Chinese, inner land simply means the entire mainland (in opposition to Taiwan, Hong Kong and Macau). His words changed my understanding of the word "inner land". I guess the true meaning of "inner land" is: where the mainstream culture and primary cities are located.
*維吾爾人的處境*
喀什幾乎所有的商店招牌都是維吾爾文字與漢字並列,公車報站名時都會報中文和維吾爾語(對,沒有英文),古城裡玩樂的孩童嘴裡說的也都是維吾爾語,乍看之下這個文化似乎欣欣向榮,但事實上大家都覺得這一切很快就會改變。
在這裡工作的漢人告訴我,他發現維吾爾人言談之間會流露出一種「漢文化比較好」的偏見,學校裡已經開始不教維吾爾語,許多政策明顯有利於漢人,城市裡可以見到的一切標語也都是「文明社會」、「中國特色社會主義」、「十九大精神」等。在這種漢文化或者國家團結至上的氛圍裡,維吾爾人的語言和文化正快速的弱化著。
Uyghur language can be seen and heard everywhere, and this may make you feel that this minority culture in China is thriving. In fact, it is not, and many think that this situation would change very soon.
Han Chinese locals here told me that they can feel even the Uyghurs show disdain toward their own culture unconscientiously in their conversation. Uyghur language is no longer taught at schools, and many policies are friendlier to Han Chinese. "Han is a better culture" can be observed in many ways, and the Uyghur culture and language are being weakened rapidly.
