It is very interesting that we(Hong Kong people) always named a dish with a foreign country name. The Russian Beef dish indeed has no linkage with Russian at all. It is 100% old Hong Kong Style cuisine from 1950s.
It was made from beef slice, different bell pepper slice, cucumber pickles slices and rich brown sauce with soy sauce , tomato paste and beef broth . I always love this dish when I was a little girl. This is one of my favourite including the baked pork rice and minced beef rice. I ordered them in turns when I visited the old Hong Kong style Western Cafe during my childhood. Nowadays, not many Hong Kong tea rooms serve this dish in their menu. Therefore, I would like to recreate this recipe to share with all of you. It is worth to preserve such recipes and also our food culture of Hong Kong.
Russian Beef with Rice (old Hong Kong Style)
1 onion
3 clove garlic
1 bell pepper
1/2 green bell pepper
2 pickled cucumber
1 sirloin steak
3-4tbsp flour
Seasoning:
1tbsp soy sauce
1/2tbsp sugar
1/2tbsp potato starch
1tbsp oil
2-3tbsp water
俄國牛柳絲飯 材料:
洋蔥 1個
蒜 3粒
紅甜椒 1個
青甜椒 ½個
酸青瓜 2條
西冷扒 1塊
麵粉 3-4湯匙
調味:
生抽 1湯匙
糖 ½湯匙
生粉 ½湯匙
油 1湯匙
水 2-3湯匙
牛肉湯粒 2粒
水 400毫升

I am a big fan of both 潮州 Teochew-Singaporean peppery, or the darker, medicinal 馬來西亞 Malaysian-Hokkien Bak Kut Teh #肉骨茶 & used to eat it a lot when living in Malaysia for 2.5 years. Until recently not much in Hong Kong tasted great to me, the most correct was the now defunct #楊氏肉骨茶, & I almost got depression when that closed. Albeit Malacca Cafe, Satay Inn & now【馬來亞春色綠野景緻艷雅 Malayan Restaurant, 鰂魚涌】nails it quite right finally! A recipe passed down from her own Grandfather 👴🏻, the version here is claimed as a Klang style BKT & has a spare ribs > medium medicinal, but more sweet soup base. It’s served with Yao Fan 油飯 oil rice, which reminds me more of a Melaka or some Penang styles.

Personally if one searches online, they say there’s 2-3 diff types of Bak Kut Teh. But obviously I never believed in that general classification because everywhere u go it tastes different, in fact the Taiwan-Hokkien #藥燉排骨 style tastes more similar to nearer Kuala Lumpur bowls but no one even related them together. I also love the Sabah 沙巴 style with many small bowls & often more pig intestines.. in Hong Kong our Chiu Chow shops usually make similar to white peppery Singapore-Teochew version more, such as #胡椒豬肚湯 . Remember HK & Chiu Chow both fall inside Cantonese region. I just often find the online information about BKT to be quite off the mark ... Even both Teochew & Hokkien have shareable Minnan 閩南話 words, so instead of dividing them up so clearly, I tend to think of the Food recipes itself to have shared love together in the past! 👀❤️

高筋麵粉450克 Strong flour 450g
酵母12克 Yeast 12g
糖35克 Sugar 35g
米糠油或菜油20毫升 Rice bran oil / Vegetable oil 20ml
適量白芝麻 Handful of toasted white sesame seeds
10克吉士粉 10g Custard powder
六份一茶匙鹽 1/6 tsp salt
湯種水份120毫升 Utane dough: 120ml water
麵團水份150毫升 Bread dough: 150ml water
餡的材料: Filling ingredients:
無鹽牛油140克 Unsalted butter 140g
糖70克 Sugar 70g
椰絲70克 Desiccated coconut 70g
全脂奶粉50克 Milk powder 50g
鹽六份一茶匙 1/6 tsp salt
吉士粉10克 10g Custard powder
低筋麵粉10克 10g Soft flour
雞尾包的白油: Cocktail bun decoration paste:
無鹽牛油45克 Unsalted butter 45g
糖10克 Sugar 10g
低筋麵粉25克 Soft flour 25g

I love instant noodles (you can also call it instant ramen noodles) and I'm not ashamed about it. Haha. Yes!! I love instant noodles!! In Singapore, instant noodles are fondly referred to as Maggi mee which is a brand of Nestle. Since I'm a fan of instant noodles, how can I resist this dish whenever I'm in a Hong Kong cafe (aka cha chan tng)? I used to go Hong Kong every month for work over more than two years. You may think that I should have tried most of the dishes available at cha chan tng but haha, no (! LOL) because i always end up ordering the same dish over and over again. Heeeee. If you're a fan of instant ramen noodles, I think you will enjoy this recipe.

500g of chicken thigh meat
2 stalks of spring onion - smashed lightly & tied into a knot
2 tablespoons of light soy sauce
1 tablespoon of Chinese rice wine (can be replaced with ginger juice)
2 cloves of garlic - smashed
1.5 tablespoons of oyster sauce
A few dashes of white pepper
Some plain flour
Instant ramen noodle sauce

1 teaspoon of sugar
1 teaspoon of chicken stock powder
