This is the second week of what i eat in a week! Attempting intermittent fasting again. It was quite difficult for the first few days but it gets easier!
Really happy that I lost a kg in a week. It's mostly water weight since I get bloated from water so easily. I don't really restrict myself too much, of course I ate a lot less sugar since I came back. I was really packing it on when i was overseas lol. I still really enjoy my healthy meals. They are DELICIOUS, except for that black bean whatever bean yucky spaghetti.

Tofu Mushroom Soba
Serves 2 - ie 2 portions
200g Tofu
Mushrooms (as much or as little as you like) I just bought a pack of mushrooms. There's 3 different types in mine.

Fry the tofu separately.
Cook the mushrooms with some garlic. Add some miso paste and soy sauce and mix it well. Then add the cooked soba noodles! (I use frozen soba noodles, so I just cook them in hot water, drained them and add to the mix.)

1 Red Bell Pepper (Capsicum)
2 Eggs
1 Egg White
A handful of Spinach
Salt and Pepper

To make the sashimi, chop up the fish, add a teaspoon of sesame oil, two tablespoons of low sodium soy sauce, sesame seeds, 1-2 Tablespoons of Rice Wine Vinegar, a bit of green onions!
Now just put everything together, add some ginger if you like to! I love this dish soooo much!

✿ Beef Lasagne Recipe (For 2-3 people) ✿
Ingredients:
- Mozarella Cheese (I used the one pre shredded in the pack)
- Cheddar Cheese (I used a block of cheddar cheese that I grated myself)
- Parmesan cheese (to serve and to sprinkle into meat sauce)
- 1 Can of Peeled Tomatoes, chopped/diced
- 1 and a half tbsp of Tomato Paste
- 3-4 cherry tomatoes, chopped/diced
- 250g-300g minced beef, seasoned with salt and pepper
- 1 tpsb of coriander leaves, roughly chopped
- 1 large white onion, chopped/diced
- Lasagne sheets
- 1/2 tsp dried rosemary
- 1/2 tsp ground oregano
- 1 tbsp chopped garlic
- Olive oil
- Salt and pepper
Steps:
1. Preheat oven to 180 degrees celcius
2. Put some olive oil into your pot. Make sure you put your stove in medium heat.
3. Saute chopped garlic.
4. Once the aroma has risen, add in chopped white onion. Saute for around 3 minutes. There should be enough oil to cover all the onions and the heat should not burn the onion.
4. Once the aroma of the onion has risen, add in minced meat. Use your wooden spoon or ladle to break the minced meat apart so that they will not clump together as they're cooking.
5. After the minced meat is cooked (it should not be red anymore), add in chopped/diced canned tomatoes. Add in the juice from the same can of tomatoes.
6. Add in tomato paste. Stir well and let it simmer.
7. Add in chopped cherry tomatoes and stir well.
8. Add in coriander leaves
9. Add in Rosemary and oregano
10. Add salt and pepper to taste and sprinkle some parmesan cheese. Let the meat sauce simmer
11. Switch off the heat and prepare to layer your lasagne.
Assembling the Lasagne:
****I recommend using a narrower and deeper dish so that you can maximise your meat sauce and add more lasagne layers.
1. Put a layer of meat sauce in your dish
2. Sprinkle cheddar and mozzarella cheese (Amount is up to you!)
3. Take lasagne sheets and layer it on top of cheese.
4. Repeat and end off with a layer of meat sauce at the top- and sprinkle loads and loads of cheese!
5. Bake in the oven for 30mins-45mins, until the cheese bubbles or until the cheese turns golden brown.

Saikyo Yaki is a very popular traditional Japanese grilled fish marinated in Saikyo Miso (sweet white Miso) made in Kyoto. After marinating the fish fillets (black cod, salmon, sea bass, Japanese spanish mackerel, etc...) overnight, Miso soaks into the fish, tenderizes, and gives absolutely delicious, sweet and rich flavor! Perfect dish to go with white rice :)
Saikyo Miso (white Miso) is usually available at a local Japanese grocery store. You can substitute the Saikyo Miso with regular miso, but it may become saltier.
If you get a chance to go to Kyoto, I recommend trying out 九重味噌 (Kokonoemiso)! Their Saikyo Miso is amazingly good :)

---------------------------------
Saikyo Yaki (Grilled White Miso-Marinated Fish)
Difficulty: Easy
Time: overnight
Number of servings: 4
Ingredients:
4 fish fillets (black cod, salmon, sea bass, Japanese spanish mackerel, etc...)
salt
A
* 300g (10.5oz.) Saikyo white Miso
* 3 tbsp. Sake
* 3 tbsp. Mirin (sweet Sake)
Directions:
1. Sprinkle salt on both sides of the fillets of your choice. Set aside for about 30 minutes. By salting the fish fillets, the fishy smell and excess moisture can be removed, so do not skip this step.
2. Mix A very well.
3. In a shallow container, spread half of the Miso marinade. Place surgical gauze over the marinade. Pat dry the fish with paper towel. Lay the fish fillets so that they don't overlap, then press them lightly to set in place. Fold the other half of the gauze over the fish to enclose them. Spread the remaining marinade over the gauze. Cover with the lid or plastic wrap. Let them marinate in the fridge for overnight to 2 days (2 days max is enough as the fish will get too salty). *By using gauze, you don't have to rinse off the marinade before cooking. Excess marinade on the fish may burn easily.
4. If you didn't use gauze, remove the marinade completely. Cook the fish until golden brown on both sides.
oven: 220C (428F) for about 15 min
toaster oven: 1000w for about 8 min
fish grill: low heat for 5 min on both sides
*you can reuse the marinade 2-3 times. pork, chicken, and/or shiitake mushrooms are also good.
