It always has everything to do with the people. Places can be magnificent, but people defines the place. It was an amazing journey to Sabtang, meeting one of the most resilient tribes in the world, reconnecting with the purest and simplest definition of life and contentment. People live such easy and non complicated life and it makes me feel like this chase for happiness is over rated. They reminded me the strength of root and identity, and how far a strong solid core can lead you into the future. I felt safe and supported in the hands of the native Ivatans. Taking a walk with them into the wilderness was like venturing into Jurassic Park with the most composed and chill rangers, just so darn freaking cool. Sabtang is easily 20 years or way more behind modern civilisation, but that doesn’t take the pride away from the people. You see beautiful plants decorating each and every households, or on each sides of the roads leading up to their barangays, defining their attitudes towards life — we may be the poorest on paper, but that doesn’t make life less beautiful. And guess what, f*ck money, they don’t even have a market. They grow and eat their own crops and they jump into the sea whenever they need fish on the dining table. Yeah of course they have grocery stores too, and unfair to them because they live on a geographically deserted island the prices are almost 3X the price we usually pay in the city. They even have a grocery store called the honesty store, where you go in take anything you need and leave the money on the table. God is their eyes they say. When once a typhoon that was supposed to hit them turned towards Manila causing huge number of casualties, they said with broken hearts and in utmost sincerity that “it should’ve just hit us, we are more prepared for it”. I love making fried chicken. I love eating fried chicken. I was craving fried chicken while making Thai food and thought, "why not make a Thai style fried chicken?" Rachel and I loved eating fried chicken off the streets of Bangkok, so I decided to give it a shot. This was my first attempt and it was a success, as I stuck to the basics of marinating and deep frying. For this recipe, I marinated the chicken in Tom Yum paste to give it that sweet, sour and spicy flavor. It worked perfectly as the meat absorbed all the flavors and the crispy skin and batter on the outside gave it the tasty deep fried crunch. I hope you enjoy this recipe!
Ingredients 食材:
Marinade ingredients:
Tom Yum Paste (sold in a jar at City Super) (冬蔭功醬)
1 cup of hot water (熱水)
Main ingredient:
Chicken drumsticks and thighs(雞腿肉)
Deep frying ingredients:
3 cups of white flour (麵粉)
3 tablespoons of garlic powder (蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
1 tablespoon of Cayenne powder or chili powder (辣椒粉)
2 tablespoons of onion powder (洋蔥粉)
1 tablespoon of white pepper (白胡椒)
3 teaspoons of salt (鹽巴)
1 cup of milk (牛奶)
1 tablespoon of white vinegar (白醋)
Peanut oil for deep frying (花生油)
Finishing Ingredients:
Thai Sauce Ingredients (食材):

1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Spicy Red Chilis (小辣椒) - minced
3 Limes (檸檬) - halved and squeezed for juice, seeds removed
Toppings:
1/4 cup deep fried shallots (炸紅蔥頭)
1/4 cup deep fried garlic (炸大蒜)
STEP 1
Make marinade. Add in 4-5 tablespoons of Tom Yum Paste into a bowl. Because the paste is thick, slowly add in boiling hot water to dissolve the paste into a thicker fluid. If you add too much, it will get too watery and reduce the flavor of the paste. Stir until even.

Marinade the chicken by adding in the marinade sauce. Turn the chicken so that it is evenly coated.

Once coated, put the chicken into a ziplock bag and put into the refrigerator overnight to seal in the flavors. When ready to fry, be sure to let the chicken rest on the table until it reaches room temperature. You don’t want to deep fry a cold chicken leg or it will definitely be raw inside.

Make the deep frying mix by adding about 3 cups of flour into a large mixing bowl. Stir evenly.

Make buttermilk mix. Add in 1 cup of milk and 1 tablespoon of white vinegar into a large bowl. Whisk together and let it sit for 5-10 minutes.

Now we are ready to deep fry. Start by heating a pot of peanut oil. Peanut oil has a higher heat and smoke point, and it tastes great and is healthier than many other oils.

[TIP] Not mentioned in the video, but a good tip to fry the chicken faster and more evenly, is to take a chopstick and poke 15-20 times into the chicken meat before you soak it into the milk vinegar.
STEP 8
Add and coat the marinaded chicken into the milk vinegar mix. Then remove and place the chicken into the deep fry flour mix. Coat generously and evenly so the entire chicken is covered in the flour mix.

Carefully add the chicken into the hot oil. Be careful as the oil can pop and burn you. Lower the heat so that you can slowly fry the chicken without burning the outside. If your pot is big enough, you can deep fry more than one drumstick at a time.

STEP 10
Deep fry for about 10 minutes and then measure the meat temperature. If the chicken is over 80 degrees Celcius, then remove and rest on some paper towels to absorb the oils. If you don’t have a thermometer, use a chopstick and stick it in the thickest part of the meat. If the chopstick goes in and out easily, then it is ready.

Saikyo Yaki is a very popular traditional Japanese grilled fish marinated in Saikyo Miso (sweet white Miso) made in Kyoto. After marinating the fish fillets (black cod, salmon, sea bass, Japanese spanish mackerel, etc...) overnight, Miso soaks into the fish, tenderizes, and gives absolutely delicious, sweet and rich flavor! Perfect dish to go with white rice :)
Saikyo Miso (white Miso) is usually available at a local Japanese grocery store. You can substitute the Saikyo Miso with regular miso, but it may become saltier.
If you get a chance to go to Kyoto, I recommend trying out 九重味噌 (Kokonoemiso)! Their Saikyo Miso is amazingly good :)

Saikyo Yaki (Grilled White Miso-Marinated Fish)
Difficulty: Easy
Time: overnight
Number of servings: 4
Ingredients:
4 fish fillets (black cod, salmon, sea bass, Japanese spanish mackerel, etc...)
salt
A
* 300g (10.5oz.) Saikyo white Miso
* 3 tbsp. Sake
* 3 tbsp. Mirin (sweet Sake)
Directions:
1. Sprinkle salt on both sides of the fillets of your choice. Set aside for about 30 minutes. By salting the fish fillets, the fishy smell and excess moisture can be removed, so do not skip this step.
2. Mix A very well.
3. In a shallow container, spread half of the Miso marinade. Place surgical gauze over the marinade. Pat dry the fish with paper towel. Lay the fish fillets so that they don't overlap, then press them lightly to set in place. Fold the other half of the gauze over the fish to enclose them. Spread the remaining marinade over the gauze. Cover with the lid or plastic wrap. Let them marinate in the fridge for overnight to 2 days (2 days max is enough as the fish will get too salty). *By using gauze, you don't have to rinse off the marinade before cooking. Excess marinade on the fish may burn easily.
4. If you didn't use gauze, remove the marinade completely. Cook the fish until golden brown on both sides.
oven: 220C (428F) for about 15 min
toaster oven: 1000w for about 8 min
fish grill: low heat for 5 min on both sides
*you can reuse the marinade 2-3 times. pork, chicken, and/or shiitake mushrooms are also good.

【楊桃美食網】煎魚不破皮的秘訣 how to pan-fry fish without breaking the skin
1.把魚表面的水分用紙巾擦乾,再把鍋子燒熱(感覺有熱氣從鍋子冒起)加入三大匙的沙拉油,晃動鍋子讓油均勻在整個鍋子上。
2.在鍋子上灑鹽,大約一層薄薄的即可,灑鹽之後比較不會沾鍋。
3.開小火把魚放入鍋中,這時不要移動魚會破,等到煎到魚皮表面焦焦的才能移動,慢慢移動鍋子讓魚能全部沾到油。
4.先煎魚的中部再煎魚的頭部與尾部,讓魚均勻受熱即可。
TIP:為何要灑鹽,因為魚的表皮是蛋白質與鹽接觸遇熱會快速凝固而不容易沾鍋,且鹽再油中不會溶化會在鍋子形成一層膜。
5.等整條魚都煎過頭、中、尾部位後,就可慢慢移動魚身,確認有無沾鍋,若無即可慢慢翻身,依照之前煎魚的方法即可,等魚煎好後起鍋裝盤就完成。
1. Pat the surface of the fish with a paper towel to get rid of the moisture, heat up the pan (until it feels like there is steam rising from the pan), then add 3 tablespoons of cooking oil. Shake the pan to coat the bottom of the pan evenly with the oil.
2. Sprinkle a thin layer of salt on the bottom of the pan, the salt will help with preventing the fish from sticking to the pan.
3. Turn to low heat and place the fish in the pan, don't move the fish yet at this stage. Pan-fry until the skin of the fish is crisp, tilt the pan around gently to make sure the fish is covered with oil.
4. First fry the middle section of the fish, then move on to the head and tail sections. Make sure the fish is heated up evenly.
Tip: Why sprinkle salt first? The skin of the fish is made up of protein, together with the salt, it hardens when it comes into contact with heat so it won't stick to the pan as easily. Also, salt does not melt in oil so it forms a layer over the bottom of the pan.
5. Once all the sections of the fish (middle, head, tail) have been pan-fried, slowly lift up the fish to see if it sticks to the pan, if not, slowly flip it to the other side. Pan-fry in the same way, once the fish is cooked, lift it from the pan and place it on a plate to serve.
