堅果杏仁 vs 南北杏
植物奶選擇眾多,杏仁奶是熱門選擇之一,如想自製杏仁奶,購買杏仁時要認清是哪一種杏仁,我們常吃到的杏仁有三種:南杏、北杏及堅果杏仁,製作杏仁奶最常用為啡色皮的堅果杏仁 (almond),又名巴旦杏,是扁桃或巴旦杏的種子,顆粒較大,屬性平和,有潤肺及潤腸功效,多作為堅果零食或食材之用。
而中式甜品的杏仁茶、杏仁豆腐、杏仁霜,則以南杏 (sweet almond) 及北杏 (bitter almond) 製成,南杏及北杏取自杏 (apricot) 果樹的種子,所以又叫 apricot kernel。南杏性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用;而北杏主要為入藥用途,有袪痰止咳、平喘及潤腸的功效,治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。北杏帶有小毒,必須經過處理及烹煮才能食用。如煲湯時使用南北杏,比例至少為一比一。
堅果杏仁 — 又名巴旦杏,是扁桃或巴旦杏的種子,比南北杏較大得多。屬性平和,有潤肺及潤腸的功效,多作為堅果零食或食材之用。
南杏 — 產於南方,又稱甜杏仁,杏仁茶多用南杏。外觀上較北杏大。性平,有潤肺、潤腸通便功效,尤其適合肺氣虛弱人士飲用。感冒未清者、容易反覆腹瀉者都不適合飲用。
北杏 — 盛產於北方,又稱苦杏仁,主要為入藥用途。味苦,有少毒。有袪痰止咳、平喘及潤腸的功效;治外感咳嗽、氣喘的功效較強,亦能紓緩便秘症狀。因帶有少許毒性,切忌服用生或未經處理的北杏。

Almond vs sweet/bitter almond
There are many different types of plant based milk, and almond milk is one of them. If we wish to make our own almond milk, make sure we understand the different types of almonds.
There are three common types of almonds: sweet almond, bitter almond, and almond. Almond, which has a coffee-colored skin, is commonly used in making almond milk. This kind of almond, also known as badam in Persian, is the seed of Amygdalus communis. It is larger and mild in nature. It can also moisten the lungs and the intestines. People would use it in cooking or consume it as a snack.
On the other hand, sweet almond and bitter almond are the main ingredients used to make Chinese almond tea, almond tofu, and almond powder. These two almonds came from the apricot tree, hence they are also called apricot kernels. Sweet almonds are mild in nature, can moisten the lungs and intestines. Hence, it is suitable for individuals with weak lungs qi to consume.
Bitter almond is used as Chinese Medicine, as it can clear phlegm, relieve cough and asthma, and moisten the intestines. Hence, individuals would consume them to relieve cough, asthma, and constipation. Bitter almonds are slightly poisonous, hence, they must be processed and cooked properly beforehand. When making soup with both sweet and bitter almonds, make sure the two ingredients have an equal ratio.
Almonds - also known as baadaam, and they are much larger than sweet and bitter almonds. They are mild in nature, and can moisten the lungs and bowels. Typically almonds are eaten as snacks or used as a cooking ingredient.
Sweet almonds - produced in the south and usually used in almond tea. They look larger than bitter almonds. They are mild in nature and can moisten the lungs and bowels, and relieve constipation. They are especially suitable for those with weak lung qi. They are not suitable for those recovering from a cold or flu, or those prone to diarrhea.
Bitter almonds - produced in the north and mainly used medicinally. They taste bitter and naturally contain small amounts of toxins. They can relieve phlegm, cough and wheezing as well as moisten the bowels. They are effective to treat external coughs and help to relieve constipation as well. Due to the toxins, do not eat them raw or unprocessed.

春天的天氣就是濕,濕邪正是中醫理論中六淫(風、寒、暑、濕、燥、火)之一,如體內聚積太多濕氣未能排出,就會造成「濕重」。 「因於濕,首如裹」,「濕重」令人感到頭重重、頭暈胸悶;濕氣擅長侵犯皮膚,輕則多面油,重則濕疹反覆發作;濕氣擅長侵犯腸胃,令人出現食慾差,胃脘脹滿、腹脹肚瀉等症狀;濕氣擅長侵犯身體下部,引起腳氣、白帶增多、下身水腫等問題。如何得知自己是否濕重?看看你身體是否有以下濕重十大訊號:
☐ 體型肥胖 — 實際上是水腫,尤其下半身水腫,肌肉鬆軟
☐ 舌苔濕潤黏膩 — 有如豆腐壓碎後薄薄一層又難以刮掉
☐ 容易疲倦 — 身體猶如被濕毛巾裹着一樣,睡足6-8小時仍疲倦不堪
☐ 多汗又多油 — 汗比較黏,容易出面油
☐ 怕冷又怕熱 — 對溫度非常敏感
☐ 痰多 — 嘴裡有黏黏的感覺
☐ 食慾差 — 吃一點點就有飽滯感覺,容易腹脹
☐ 睡眠質素差 — 睡覺時亦容易流口水

Ten signs of dampness in the body
The weather during spring is highly humid, and dampness is one of the six pathogenic factors in Chinese Medicine (wind, cold, summer heat, dampness, dryness, and fire). If we fail to get rid of the dampness, then it would accumulate in our body.
The accumulated dampness in the body can cause a heavy feeling in the head, dizziness, and tightness in the chest. The dampness can also affect the skin, causing the skin to be oily or even have regular eczema outbreaks. It can also attack the intestines and stomach, causing individuals to develop appetite loss, abdominal bloating, and diarrhea. At the same time, it can severely affect the lower half of the body, causing one to have the athlete's foot, excessive vaginal discharge, and water retention problem in the lower half of the body.
In order to find out if there is excessive dampness in your body, look for these ten signs:
☐ Rounded body shape - prone to edema, especially in the lower body. Loose muscles
☐ Damp and sticky tongue coating - similar to crushed tofu. A thin layer that is difficult to brush off
☐ Fatigue - the body feels so tired like it's wrapped by a wet towel. Feel tired even after 6-8 hours of adequate sleep.
☐ Excessive sweat and oil - sweat is sticky and easy to have facial oil
☐ Afraid of cold and heat - very sensitive to temperature
☐ Excessive phlegm - sticky feeling in mouth
☐ Poor appetite - feel full after eating little. Abdominal bloating
☐ Poor sleep quality - prone to drooling in your sleep
☐ Loose stool - stool does not form shape, soft, loose or watery
☐ Ladies will have vaginal discharge - white or thick with heavy odor
If your body exhibits 3 signs and above, then it has been affected by the pathogenic factor of dampness. Don’t forget to strengthen the spleen to eliminate dampness, in order to prevent the condition from worsening. Eat your meals at a regular schedule, and avoid raw, cold, fried, heavily seasoned, greasy, thick, sweet, and overly nourishing food.
Consume ingredients such as barley, Chinese yam, black-eyed pea, and poria, exercise regularly to sweat it out, and drink a cup of rice water a day. All these can strengthen the spleen and get rid of dampness from the body.

Effects: Suitable for the whole family to enhance physical wellbeing, especially those with a weak digestive system or with a phlegm and dampness body type.

永康錄的招牌是麻油雞腿湯,麻油的部分非常濃郁,湯頭不會太油,湯裡面的雞肉是台灣在地養殖,而且都是有機的,雞肉的肉質非常軟嫩好吃!
永康錄的滷味很特別,像是十全豆干是用十種草本植物做成,另外他們的飯跟麵線也加入了滴雞精雞跟醃黃瓜!
我也試了滴雞精,這款滴雞精是用自由放養的雞製作而成,熬煮十五個小時,不加其他添加物,滴雞精有助於解決精神疲勞跟改善情绪. 我覺得可以當作一個很好的聖誕禮物送給我父母!
很開心可以來到永康錄雞湯嘗試吃,我已經覺得更有活力了!以前想要吃德國菜或是日本的拉 麵時我常常去永康街,但發現了這家永康錄雞湯後,不但比較便宜也非常健康,接下來的挑戰就是要戒掉美味的瑞典的巧克力… 哈哈哈! 對於在台灣想要吃得更健康,你們還有什麼建議呢!😊😊

One of my goals for this year is to eat healthy, but if you watch my videos you know that lately I have been eating a lot of chocolate and junk food from Sweden… I have even started to get pimples! I went to Yongkang Role (永康錄雞湯) to try to get my healthy lifestyle back ☺.
Their specialty is Taiwanese Sesame Oil Chicken Soup (麻油雞腿湯). The sesame oil is really rich and the soup is still not greasy. The chicken is very tender aswell, the taste is great and the meat is not dry. The chicken is organic and origins from Taiwan.
Some of the side dishes are really interesting. For example the tofu skin (十全豆干) is made with 10 different kinds of herbs! Another interesting thing is that even the rice (滴雞精雞油拌飯) and noodles (滴雞精雞油麵線) are dripped with chicken essence oil, and is served with pickled cucumber.
I also tried their Chicken Essence (滴雞精), which is made from free ranged chicken, and is slow cooked for 15 hours without additives. Chicken Essence is good to combat mental fatigue and improves the mood. I am thinking of sending this to my parents for christmas!
I was happy to try out Yongkang Role chicken soup and in the evening I already felt more energetic! Actually I often go to yongkang street when I want to have German food or Japanese ramen, but this place is more healthy+cheaper! My challenge now is to stay away from delicious Swedish chocolate and stick to this healthier lifestyle… hahaha. What is your advice to help me eat more healthy in Taiwan? ☺

番茄豆腐海鮮湯泡飯
TOMATO TOFU SEAFOOD SOUP WITH RICE
$50 30 min
我們通常將剩下的隔夜飯作炒飯,而這菜式是善用隔夜飯的另一個好方法,而且健康又美味。
材料
橄欖油 1茶匙
番茄 4隻 (切開4份和去籽)
魚湯 400毫升
軟豆腐 100克 (瀝乾、切丁)
白米飯 1大碗
魚柳 50 克(切片)
蝦 10隻(連殼)
烚蛋 2隻(按個人喜好)
調味料
調味雞汁 2茶匙
白砂糖 1 茶匙
白胡椒 少許
做法
1.(8517)下油,用猛火燒熱平底鑊,調至中火,快炒番茄約五分鐘。
2.(8583)轉用猛火,倒入魚湯,煮至沸騰,上蓋,慢火煮10分鐘,隔去番茄皮。
(8712)加豆腐與飯,煮約3分鐘,加入其他材料和調味料,用猛火煮約3分鐘,進食時可依喜好加入烚蛋。
貼士
如已選用優質的魚湯,可不用海鮮。
煮魚湯時保留番茄皮,可令魚湯更美味。
TOMATO TOFU SEAFOOD SOUP WITH RICE
$50 30 min
We often have leftover rice and usually just fry it the next day. This is a very good way to recycle it and more healthy than frying.
INGREDIENTS
1 tbsp olive oiil
4 tomatoes (quartered and deseeded)
400 ml fish broth
100 g soft tofu (drained and diced)
1 large bowl of cooked rice
50 g fish fillet (diced largely)
10 pc small prawns (shelled)
2 poached eggs (optional)
seasoning
2 tsp c. c. stock
1 tsp white sugar
Pinch of white pepper
STEPS
Heat oil in deep saucepan over high fire. Saute tomatoes for 5 min with medium fire.
Switch fire to high, pour in fish broth. Bring to boil, cover, lower heat and simmer for 10 min. Discard tomato skin.
Add tofu and rice. Cook for 3 min. Add rest of ingredients and seasoning. Cook over high fire and cook for another 3 min. Serve hot with poached egg if desired.
TIPS
If you use good quality fish broth, it is good enough without the seafood. Tomato skin adds flavour.
