Hey everyone! How was your weekend? :D
I'm in SG for a few days and gosh, I do miss SG.
My last trip was in April, and I used to visit every month until recently when things are just bad so I couldn't travel much.
Anyways, now that I'm back, the most important itinerary was to visit my favourite dessert shop - Mad About Sucre.
This dessert, simply named "APPLE" was amazing.
French Apple, Portuguese Port Wine, light chocolate, almond = SGD15.90.
Not cheap, but worth it! :)
This gorgeous dessert reminds me of the deadly apple from Snow White - glistening, promising but hmmm.. with an aura of peril. 🤩
The “skin” color is 100% pure color extracted from cooking French apples 🍎 (the skin) for 2 days!
The cross section revealed layers of apple mousse, almond cream and real apple bits.
Overall it tasted like apple almond ice cream.
I absolute loved it! I’ve always adored the desserts here and this is my top pick now at Mad About Sucre! <3

Hello friends! Today we're going to share with you how to make the classic chocolate milkshake with real sugar and high quality bittersweet chocolate.
Milkshake is a classic nostalgic and ultimate in retro comfort food. They became a common part of youth popular culture and a symbol of the youth. They are calorie-rich drinks but super yummy.
Actually it’s easy to make at home. In this video, the copycat recipe is from Shake Shack, which is the most famous restaurant in the United States. Their burgers get all the praise, but the shakes are really good, too. Especially the chocolate milkshake (black and white shake). Good news is you don’t need to visit the restaurant, if you have this classic Shake Shack easy chocolate milkshake recipe on hand.
In this recipe, the fudge sauce is the secret of the perfect taste. Always use real sugar and high quality bittersweet chocolate to make it. The fudge sauce is similar to French chocolate ganache. There's so many uses for this, like to use it as topping for ice cream, or drizzle for cake. Also we prepare another delicious Oreo milkshake for kids. Since now is summer.

How to make blueberry pancakes
☞ Servings : 2 glasses, each 250ml
📍 Ingredients
☞ For the hot fudge sauce
heavy cream 40g
whole milk 83g
granulated sugar 10g
70% bittersweet chocolate 65g
unsalted butter 15g
☞ For the chocolate milkshake
fudge sauce 125g
whole milk 140g
vanilla ice cream 250g
☞ For the Oreo milkshake (1 glass, about 240ml)
oreo cookie 3
whole milk 80g
vanilla ice cream 125g
📍 Instructions
☞ For the hot fudge sauce
1. Add milk and heavy cream and sugar into the saucepan over medium-low heat, bring it to a simmer, then add butter to mix until melted. Remove the pan from heat.
2. Add the bittersweet chocolate into the saucepan and stir often, the chocolate is melting into the cream and butter.
3. Then pour into a pot or a container to let it cool down.
☞ For the chocolate milkshake
1. Throw the vanilla ice cream, milk and fudge sauce into a blender and purée until smooth.
2. Serve with straws in a tall glass. Top with heavy cream and shave a little chocolate Cheers.
☞ For the Oreo milkshake
1. Throw the Oreo cookies, ice cream and milk into a blender and purée until smooth.
2. Serve with straws in a tall glass.

We made a yule log that looks like a real log! All you need to do is bake and roll.
This can be made very easily, but it looks plain after it's done, so try decorating it with Christmas decorations.
For a crispier texture, we recommend leaving it to sit until the following day.
* Recipe *
1. Divide 120g of bitter chocolate and dissolve in hot water.
2. Separate 4 eggs into egg white and yolk.
3. Add 25g of sugar to the egg whites and whisk with a hand mixer to make a hard meringue.
4. Add 25g of sugar to the yolk and mix until it's whitish. You can use the hand mixer you used in step 3 as it is.
5. Put the results of step 4 into step 1, and mix with a rubber spatula.
6. Add 10g of almond powder and mix.
7. Add 1/3 of the results of 3 to 6, and mix well. Add the rest and mix, avoiding popping the bubbles.
8. Pour it into a square top plate measuring 30cm with an oven sheet and make sure it's level.
9. Bake for 23 minutes in an oven preheated to 160 degrees.
10. Leave it on the top plate without anything on top, and let it cool.
11. When the result of step 10 has cooled completely, place in a rolling mat and turn it upside down gently. Remove the sheet.
12. Apply 200ml of whipped cream. Apply 3cm at the end of the side that will get rolled, and 1cm on the other 3 sides. It is better to add more at the front and less at the end.
13. Roll it.
14. Let it cool down in the refrigerator for about an hour. Cut the sides off a 500ml plastic bottle, insert it, let it cool down and it'll come out round.
15. All done! Sprinkle powdered sugar to your liking.
Warm a knife with hot water, wipe away the moisture and cut it cleanly.
Don't forget to wipe off the cream from the knife every time you cut!
Make this and you won't have to buy a Christmas Cake this year!
焼いて巻くだけでできる、本物の丸太みたいなブッシュドノエルを作りました。
作り方もシンプルですが、できあがりも素朴なので、ピックなどでクリスマスらしい飾り付けをしてみてください。
小麦粉を使わないロールケーキ、カサッとした食感を楽しむには当日が、しっとりがお好みなら翌日がオススメです。
*レシピ*
1.ビターチョコレート 120gを割り、湯煎で溶かす。
2.卵 4個を卵白と卵黄に分ける。
3.卵白に砂糖 25gを入れハンドミキサーで泡立て、かたいメレンゲを作る。
4.卵黄に砂糖 25gを入れ、白っぽくなるまで混ぜる。3で使ったハンドミキサーをそのまま使って大丈夫です。
5.4に1を入れゴムベラで混ぜる。
6.アーモンドプードル 10gも入れ混ぜる。
7.6に3の1/3の量を加えよく混ぜる。残りも加え泡をつぶさないように混ぜる。
8.オーブンシートを敷いた30センチ角の天板に流し入れ、平にならす。
9.160度に予熱したオーブンで23分焼く。
10.なにも被せないで、天板のまま冷ます。
11.10が完全に冷めたら、マキス代わりのオーブンシートをのせ、そっとひっくり返す。シートを剥がす。
12.固めに泡立てた 生クリーム 200mlを塗る。巻き終わりは3センチ、ほか3辺は1センチ残して塗る。手前は厚め、巻き終わりは薄めを意識して塗ると良い。
13.くるくると巻く。
14.冷蔵庫で1時間ほど冷やす。500mlのペットボトルを切って作った台に入れて冷やすと丸く形よく仕上がる。
15.でけた。お好みで粉糖を振りかける。
ナイフを湯で温め、水分を拭きとったナイフで切り分けるとキレイに切れます。切り分ける都度、ナイフについたクリームをキレイに拭き取ることも忘れずに!
今年のクリスマスケーキは買わなくていいかも。(買うけど)

なんちゃってソフトクリームを作りました。久しぶりのなんちゃってシリーズです。
チョコレートムースをアイスに見立てました。
溶けないし、ひょっとしたらチョコやアイスより濃厚で美味しいかも!?
*レシピ*(3ソフトクリーム分)
1.大きなボウルでチョコレート 100gを湯煎で溶かす。
2.お好みの洋酒(ダークラム)大さじ 1を少しずつ加え混ぜる。
3.卵黄 1個を加え混ぜる。
4.別のボウルで卵白 1個分にグラニュー糖 30gを少しずつ加え かたいメレンゲを作る。
5.別のボウルで生クリーム 100gを8分立てにする。
6.5に4を加え混ぜる。
7.3に6の1/3を加え混ぜる。
8.残りも加え混ぜる。
9.絞り袋に入れ、3時間ほど冷蔵庫で冷やす。
10.絞り袋の口を3.5センチ切り落とす。
12.器やアイスクリームコーンに絞り出す。
11.でけた。お好みでナッツや砕いたクッキーをトッピングしてもよい。100円ショップ・セリアで買ったアイスコーン型の器かわいい。それにしても これ おいしい。
It's been awhile since we've done anything from our "trick recipe" series, so we made some faux soft serve ice cream!
This soft serve is made from chocolate mousse. It won't melt, it's thicker and it may be even more delicious than the real thing!
* Recipe * (serves 3)
1. In a large bowl, melt 100g of chocolate in a hot water bath.
2. Add 1 tablespoon of your favorite alcohol (such as dark rum) little by little, and mix.
3. Add 1 egg yolk and mix.
4. In a separate bowl, add 30g of granulated sugar to the white of one egg, and make a hard meringue.
5. In a separate bowl, add 100g of fresh cream and leave it be for 8 minutes.
6. Add step 5 to step 4, and mix.
7. Add 1/3 of steps 6 to step 3 and mix.
8. Add the rest and mix.
9. Place in a squeeze bag and let it cool in the refrigerator for about 3 hours.
10. Cut off the mouth of the squeeze bag by about 3.5 cm.
12. Squeeze into a bowl or ice cream cone.
11. It's ready! You can top it with nuts or crushed cookies, to your liking. You can also buy a cute ice cone container at Celia's 100 yen shop. Anyway, this is delicious.
