Hokkaido Sea Urchin with Sicilian made Spaghetti 🍝, a smear of fresh Wasabi. A close comparison to be made is with Luca Fantin's @luca.fantin version at Bvlgari Tokyo, one of my favorite Restaurants in the World.. His version has more Urchin & Tomato based flavor 🍅. The one here is equally as Great, but with a more pronounced Urchin & Olive oil fragrant accent and served warmer instead.. Both of these Italian Chefs have their own definitions & characteristics in their dishes, but when it comes to the Micro-details, you can tell they are Perfectionists.. Appreciated & Grazie..

With new Chef Angelo Agliano on board this was a highly anticipated meal for me, especially knowing he worked at Joël Robuchon Monaco, and then helped Robuchon in HK to substantiate achieve Michelin 3 🌟 as Executive Chef there. Interestingly as a Sicilian native, he is trained well in both French & Italian cooking techniques, hence he can simultaneously run his well received Happy Valley restaurant "Locanda dell' Angelo", which is also recognized by the Michelin Guide ..
