Ingredients :
2 cloves Garlic, chopped
1 Onion, sliced
2 Bird's Eye Chillies, chopped
5 Cherry Tomatoes, quartered
A handful of Dried Small Prawns
5 Lettuce Leaves
1 stalk French Bean, raw
1/4 Green Capsicum
1 Australian Avocado, cut into chunks
2 tbsp Fish Sauce
1/2 Fresh Lemon Juice
Method :
1) In a bowl, add the chunks of Australian Avocado, garlic, onion, French beans, cherry tomatoes, capsicum, dried small prawns, fish sauce and lemon juice. Mix well.
2) Top the avocado kerabu salad with the bird's eye chillies before serving.
3) You can enjoy it on its own or wrap it with a lettuce leaf to give it a refreshing, crunchy bite.

How to make French Strawberry & Blueberry Galette
French Style Strawberry & Blueberry Galette Recipe
☞ Yield: Serve 3~4
✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S
📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g
✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!

For this video, we went down to Ho Ho Chimek where they assembled a beautiful Bossam platter for me to devour. Ho Ho Chimek is an authentic Korean restaurant located in East Village that specialises in Korean Fried Chicken while also offering a host of other delectable Korean cuisine. For this challenge, I was offered a secret menu Bossam (Korean Pork Belly) option, together with Kimchi Fried Rice and Jajangmyeon Noodles, that were assembled beautifully onto my giant plate.
Bossam is a unique Korean style of eating involving boiled pork belly served with a number of condiments that you then wrap up in a lettuce leaf into a neat little package. For myself, I was given kimchi, garlic, Bibimbap sauce and spring onions. On its own, the pork was reminiscent of char siew, but slightly fattier and sweeter. Eaten with all the condiments in a wrap, the flavours truly complemented one another with the kimchi and garlic tempering the cloying flavour of the pork together with the satisfying crunch of the lettuce.
The Kimchi Fried Rice was topped with fried eggs and had the distinct tangy flavour from the kimchi juice added. It was specked with kimchi and chicken luncheon meat, with the meat adding a needed savoury dimension with each bite. The Jajangmyeon noodles, a noodle dish topped with a thick black bean sauce and bits of pork, was not overpowering in the slightest as is common for poorly done Jajangmyeon, with the unique black bean flavour and juicy chunks of pork.
This was an enjoyable challenge with a good bit of variety, although the unctuous pork became rather overwhelming towards the end especially with my refusal to eat it as a wrap. I also tried their famous Korean Fried Chicken which was extremely crispy and flavourful on the outside, while juicy inside. The soy-garlic marinade really shone through. Additionally, the Bossam is apparently not publicised because it is very difficult for the owner’s mother to create, although it is one of their best offerings.
Do visit Ho Ho Chimek to get your Korean cravings satisfied! They will be offering a slightly smaller version of this platter for $68 from this Friday onwards, with the addition of Tofu Stew, and aptly named “OPPA Zermatt’s Platter”.

包み焼きチーズハンバーグ
2人分
材料:
■ハンバーグ
合挽き肉 250g
玉ねぎ(みじん切り) 1/2個
卵 1個
パン粉 大さじ3
牛乳 大さじ1
ナツメグ 小さじ1/2
塩 小さじ1/2
コショウ 少々
■きのこデミグラスソース
しめじ 100g
ケチャップ 大さじ3
ウスターソース 大さじ3
赤ワイン 大さじ2
砂糖 小さじ1
バター 10g
スライスチーズ(とろけるタイプ) 2枚
ブロッコリー(小房) 適量
にんじん(輪切り) 適量
パセリ(みじん切り) 適量
作り方:
1. ハンバーグを作る。フライパンにサラダ油(小さじ1・分量外)を引いて中火で熱し、玉ねぎを加えて炒める。玉ねぎがしんなりして透き通ったらバットなどに取り出して冷ます。パン粉は牛乳に浸してふやかしておく。
2. ボウルに合挽き肉、塩、コショウを入れて、粘り気が出るまでよく練り混ぜる。
3. (1)、卵、ナツメグを加えてさらにこね、2等分する。両手でキャッチボールをするようにして空気を抜き、楕円形に成形する。
4. フライパンにサラダ油(大さじ1・分量外)を引いて中火で熱し、中央にくぼみを作った(3) を並べて焼く。焼き色が付いたらうら返し、蓋をしめて5分ほど蒸し焼きにする。ふっくらとしたらバットなどに取り出す。
5. そのままのフライパンにバターを入れて火にかけ、しめじを加えて炒める。しんなりしたら、ケチャップ、ウスターソース、赤ワイン、砂糖を加えて、とろみが着くまで中火で煮詰める。
6. アルミホイルを広げて(4)をのせ、(5)をかける。スライスチーズをのせて、空気が入らないようにしっかりと包んだら、200℃のトースターで10~15分焼く。
7. アルミホイルを開いてパセリを散らし、茹でたブロッコリーとにんじんを添えたら、完成!

Grilled Japanese meatballs with cheese
Servings:2
INGREDIENTS
■Meatballs
250grams ground beef & pork
1/2 onion (chopped)
1 egg
3 tablespoons panko breadcrumbs
1 tablespoon milk
1/2 teaspoon nutmeg
1/2 teaspoon salt
A pinch of pepper
■Demi-glace sauce with mushrooms
100grams shimeji mushroom
3 tablespoons ketchup
3 tablespoons worcestershire sauce
2 tablespoons red wine
1 teaspoon sugar
10grams butter
2 cheese slices
Some broccoli
Some carrot (sliced)
Some parsley (chopped)
PREPARATION
1. To make meatballs, heat 1 teaspoon of vegetable oil in a pan over medium heat, add onion to stir until it soften. Transfer onion to a plate and cool. Soak panko breadcrumbs in milk.
2. Mix ground beef & pork, salt, and pepper in a bowl until combined.
3. Add sautéed onion, milk-soaked panko breadcrumbs (1), egg and nutmeg, then knead well. Form two big meatballs. Make sure you toss the meatballs to release air and finger-dent in the middle (so it won't explode).
4. Heat 1 tablespoon of vegetable oil over medium heat and grill meatballs. Turn them when they are golden, bake for 5 minutes with lid, then take them out.
5. Put butter and shimeji mushrooms into the same pan to stir. Once its soften, add ketchup, worcestershire sauce, red wine and sugar to simmer over medium heat until thicken.
6. Place meatballs (4) on a foil and spoon sauce (5) over them. Put cheese slices on top, wrap them tight. Bake 10 to 15 minutes in a toaster oven (200℃).
7. Open the foil-wrap, sprinkle parsley and place boiled broccolis and carrots on the side.
8. Enjoy!
