今次Son姐煮的這道韓式牛肋骨,做法一點都不複雜,廚藝新手也可輕易做到。Son姐教煮餸,就當然不只示範,還私人醒大家煮食知識及貼士。韓國糖漿有分哪兩種?清真牛肉跟一般牛肉有甚麼分別?Son姐一一為你解答!
說起這道韓式牛肋骨,Son姐話背後原來有一段古。「最初煮這道菜的原因是因為小兒子,小時候他比較挑食,但只要是牛肉,怎樣煮他都吃,所以他特別愛這個牛肋骨。」女強人亦有溫柔的一面,Son姐希望透過食物,去傳遞關心及愛。不用複雜的步驟,簡單的一道菜,已是傳遞心意的最佳方法。大家不妨跟Son姐學嘢,整這道韓式牛肋骨給你至親的人吧!
韓式牛肋骨
材料:
新鮮牛肋骨 4斤
中洋葱 2個
日本京葱 1條
白蘿蔔 2條
甘筍 數條
蒜頭 1個
薑 1大塊
月桂葉 數片
大紅棗 數個
韓國梨 1個
調味:
韓國湯用豉油 2杯
日式豉油 1/2杯
味醂 半杯
韓式糖漿 1/4杯
步驟:
.京葱切尾,尾段洗淨切成葱花,葱頭切段;薑切厚片,蒜頭去皮備用。
.韓國梨、甘筍、洋葱切塊備用;白蘿蔔刨皮,切塊備用。
.牛肋骨洗淨,汆水(中火煮約20分鐘)後再啤水。
注意:需凍水落牛肋骨。
.牛肋骨加入調味、月桂葉、紅棗、蒜頭、京葱、薑、梨、甘筍及洋葱。
.加水,水量蓋過牛肉即可。
.開中細火炆煮,滾起後落白蘿蔔。炆約30至45分鐘後,熄火焗至煲身回復常溫。可用筷子拮牛肋骨看其熟透與否,有彈性不散開即可。
注意:如使用不鏽鋼鍋,炆焗的程序需重複2至3次。
.上碟,撒上葱花作裝飾。
Korean Braised Beef Ribs
Ingredients:
Fresh beef ribs 4 Catty
Medium onions 2 pcs
Japanese leek 1 pc
Radish 2 pcs
Carrots Several pcs
Garlic 1 pc
Ginger 1 large pc
Bay leaf Several pcs
Large dried dates Several pcs
Korean pear 1 pc
Seasonings:
Korean soup soy sauce 2 cups
Japanese soy sauce ½ cup
Mirin ½ cup
Korean sugar syrup ¼ cup
Steps:
1. Remove ends from leek, julienne the stem (white part), and chop the leek top (green part); Cut ginger into thick slices. Peel garlic cloves and set aside.
2. Cut Korean pear, carrots, and onions into pieces and set aside. Peel radish, cut into pieces and set aside.
3. Wash beef ribs, and blanch (approximately 20 minutes in medium heat), drain and clean.
Note: Add beef ribs in cold water to boil.
4. Combine beef ribs, seasoning ingredients, bay leaf, dates, garlic cloves, leek, ginger, pear, carrots and onion into pot.
5. Add water to pot until beef ribs are just covered.
6. Cover and cook in medium-low heat, once water start to boil, add radish. Cover and cook for 30 to 45 minutes, then turn off the heat and let cool to room temperature. To check whether the beef ribs are cooked through, use chopsticks and poke the beef ribs to make sure the meat is tender and well cooked.
Note: If using stainless steel pots, repeat step 6 two to three times.
7. Plate and garnish with chopped leek.

#曼食慢语 昨天正式入伏了,热腾腾的饭菜实在让人提不起食欲啊!记得之前我去冲绳吃到的拌冷面吗,当时就想着回来找时间做做看。记得好几年前一个吉林的朋友也给我做过好吃的汤冷面。当时这位老铁是直接拎出一个掉漆的铁桶来煮面,用涮拖把那种塑料桶给面条过冷水,还说她家从小都是这样操作的…我我我…虽然不信但还是吃光光了
▋Ingredients
【煮牛肉】
牛腱子 1块(200克)
洋葱 1/4个
姜一小块
八角1个
桂皮1小块
香叶2片
陈皮1大勺
盐适量
【拌面酱】
去皮苹果 1/2个
蒜2瓣
白洋葱1/4个
酱油1大勺
韩式辣椒粉1大勺
韩式辣酱3大勺
雪碧100毫升
白醋50毫升
香油2大勺
【冷面配料】
冷面400克
白萝卜100克
番茄1/2个
小黄瓜1根
梨1个
鸡蛋2个
韩式泡菜丝150克
熟白芝麻适量
葱丝适量
【冷面汤】
煮牛肉的高汤200毫升
糖1大勺
酱油1小勺
白醋1小勺
韩国泡菜汤1大勺
梨3片
盐适量
[Boiled beef]
200g beef shin
1/4 onion
small piece of ginger
1 star anise
1 cinnamon stick
2 bay leaves
1 tbsp dried citrus peel
salt
[Noodle sauce]
half peeled apple
2 cloves garlic
1/4 white onion
1 tbsp soy sauce
1 tbsp Korean chili powder
3 tbsp Korean chilli paste
100ml sprite
50ml white vinegar
2 tbsp sesame oil
[Ingredients with noodle]
400g cold noodles
100g daikon radish
1/2 tomato
1 small cucumber
1 pear
2 eggs
150g kimchi
toasted white sesame
green onion
[Cold noodles broth]
200ml beef broth
1 tbsp sugar
1 tsp soy sauce
1 tsp rice vinegar
1 tbsp kimchi juice
3 slices pear
salt

* INGREDIENTS
A. Traditional Korean Kimchi
1 kg napa cabbage
water & table salt (50 g salt/ liter water)
10 - 15 g dried shrimps or dried anchovies
15 g sticky rice flour
3 -4 spring onions
100 g carrots
200 g radish
30 g apple or pear (about 1/4 small apple)
30 g onion (about 1/4 small onion)
10 g (2 - 3 big cloves) garlic
10 g ( 2 - 3 big slices) ginger
3 - 4 tbsp (40 - 60 ml) fish sauce
1 - 2 tbsp (14 - 28 g) sugar
2 - 3 tbsp Korean chili flakes
0.5 - 1 tbsp (10 - 15 ml) apple cider vinegar (optional)
B. Vegan & Easy Kimchi
1 kg napa cabbage
water & table salt (50 g salt/ liter water)
3 -4 spring onions
100 g carrots
200 g radish
30 g apple or pear (about 1/4 small apple)
30 g onion (about 1/4 small onion)
10 g (2 - 3 big cloves) garlic
10 g ( 2 - 3 big slices) ginger
1 - 1.5 tbsp Gochujang (Korean hot pepper paste)
1 - 2 tbsp honey/ corn syrup/ sugar
1 - 1.5 tbsp chili flakes to taste
1 tbsp apple cider vinegar
1 - 2 tsp table salt
* TIPS FOR SUCCESS:
- Submerging cabbage in salted water makes kimchi crunchy and accelerates the fermentation procedure.
- If you don't have glutinous or sticky rice flour, you can use about 2 tbsp cooked rice. Soak this rice in warm broth (from shrimps/ anchovies) until the rice is very soft. Then cook until you can easily blend the rice with the liquid.
- Korean chili flakes can be substituted by a mixture of cayenne powder (for spicy taste) and paprika powder (for a vivid red color)
- As Gochujang is already fermented, using 1/2 - 1 tbsp Gochujang in Kimchi paste will boost the fermentation process of kimchi.
- For an easy but not vegan option, you can follow the vegan method but use fish sauce instead of table salt
