吃那麼多美食,來道甜品吧「檸檬卡士達布丁」(Lemon Pudding)
蛋黃-4顆
蛋白-4顆
砂糖-1/2杯(原食譜:砂糖-1杯)
奶油-1湯匙,加熱融化備用
檸檬汁-1/3杯
檸檬皮(lemon zest)-1湯匙,刨細絲
麵粉-1/2杯
牛奶-1.5杯
鹽-1/4茶匙
烤箱預熱180度,放一個大烤盤,裡面加水,等一下隔水烘烤。再準備八寸派盤
1)拿一個大碗,檸檬汁,檸檬皮,蛋黃,奶油拌勻備用
2)砂糖,麵粉,鹽拌勻
3)拌入一半麵粉,一半牛奶,拌勻,再倒入另一半麵粉,還有另一半牛奶,拌勻,倒入派盤
4)蛋白打發至類似刮鬍泡那麼稠,全部倒入派盤,從旁邊把底部的槳「折」進來幾次,上面覆蓋一些槳
5)派盤放大烤盤裡面,隔水烘烤45分鐘
6)時間到拿起來,休息1小時冷卻後再盛盤。
這道甜品試吃後有著濃濃的檸檬香味。砂糖減半所以甜而不膩,很柔軟,很綿密細緻的口感。老婆也說這個比外面買的好吃😋

「Pudding」這個詞中文翻譯是「布丁」,但是其實跟我們台灣常見的布丁差別很大。要真正解釋pudding我們先從台灣人很熟悉的「粿」開始。大家都知道「粿」有甜有鹹,什麼料都可以加。菜頭粿,紅龜粿,碗粿... 其實歐洲的布丁就是他們的「粿」,也是有甜有鹹,五花八門,而且很多做法跟我們的粿很像,他們用麵粉,我們用米漿。在國外如果跟人家說要吃pudding,他們給你的料理可能會讓你傻眼。如果要吃類似統一布丁那種布丁,應該叫做「Flan」是西班牙料理(念起來像混在一起的「福爛」)....好像小弟這道甜點也不太像布丁,反而類似沒有派皮的檸檬卡士達派...啊隨便啦,反正Pudding文化就是最早的混搭風😅

Thyme, Butter Seared Sirloin Steak With Red Wine Balsamic Vinegar Sauce
Thyme...... A sprig
Garlic..... 2 Cloves
Butter......2 Tbsp
Onion ....... 2 small cloves
Carrot ..... 3Pcs
Tenderstem Broccoli ....... 2 Pcs
Sea Salt and Black Pepper
Capers..... 1/2 tsp
Lemon Zest ..... Few
Onion (sliced) .... 1/3 Pcs
Red Wine ...... 1/3 Cup
Balsamic Vinegar ..... 1 Tbsp
Method:
1. Take out the steak from the fridge and put in room temperature for 30 minutes before cooking.
2. Season the steak with sea salt and black pepper on both sides just before cooking.
3. Heat up the pan to smoking hot before adding oil.
4. Add the steak to the pan and leave it to cook for 1 to 1.5 minutes depends on the thickness of steak.
5. Flip the steak. Add thyme, garlic and butter. Cook for another 1 to 1.5 minutes. Keep basting the melted butter over the steak.
6. Keep flipping the steak every 30 seconds until the way you want it to be served. Remember keep basting during the process.
7. Take out the steak and cover with foil loosely for 8-10 minutes then sliced and plate.
Veggies Side:
1. Heat up the pan and add oil in.
2. Add carrot, onion and tenderstem broccoli into the pan, seasoning with sea salt and black pepper. Stir fry and mix well. Add capers and lemon zest to finish.
Red wine balsamic Sauce:
1. Use the same pan that seared the steak, heat it up and add oil in.
2. Add sliced onion, stir fry until coloring around the edges.
3. Add red wine and balsamic vinegar, reduce and thicken the sauce.

Ingredients A:
Red Wine ------------------------------------------------ 600 ml
Fresh Squeezed Orange Jucie --------------- 1.5 pcs
Fresh Squeezed Lemon Jucie ---------------- 1.5 pcs
Segmented Orange and Lemon flesh ------ 0.5 pcs each
Orange and Lemon Zest ------------------------- 0.5 pcs each
Brown Sugar ------------------------------------------ 0.5 cup
Star Anise ---------------------------------------------- 2 pcs
Cinnamon ---------------------------------------------- 2 pcs
Cloves --------------------------------------------------- 6 pcs
Cardamon --------------------------------------------- 4 pcs
Ingredients B:
Nutmeg -------------------------------------------------- A pinch
Method:
1. Crush the Cardamon before use.
2. Put Ingredients A into a saucepan and cook under medium low heat until it just comes to boil. .
3. Turn off the heat and add Ingredients B. Put the cover on for 10 minutes to encourage the flavors to infuse.

Makes a 7-inch tart
Ingredients:
For Lemon Curd
250ml Water
100g Sugar
30g Corn Starch
Juice and Zest of 1.5 Lemons
3 Egg Yolks
25g Unsalted Butter
1/8tsp Salt
For the Tart Crust
120g Digestive Biscuit/Graham Cracker Crumbs
50g Unsalted Butter, melted
For Italian Meringue Topping
4 Egg Whites, cold
150g White Sugar
