白色食材補肺益氣
不少女生都追求美白肌膚,但面色長期偏白不一定是好事,從中醫角度來看,面色白多見於虛證或寒證病人,白色對應肺,面色發白多代表著肺氣虛弱,不能抵抗外邪入侵,容易反覆感冒、患上鼻敏感或氣管敏感,在流感肆虐的季節亦特別容易「中招」。
想強健肺氣,宜適量食用補肺益氣的食材,例如淮山、百合、雪耳、白扁豆等白色食物,因為中醫理論認為「白入肺」,白色食物入肺經,有潤肺補肺的功效,在秋冬時效果尤其明顯。
淮山 — 性平,有健脾養胃、補肺生津的功效,其含有的可溶性纖維,有助消化及控制飯後血糖升高。
百合 — 性平,能補中益氣,潤肺止咳,能紓緩氣虛型咳嗽、氣管敏感等、精神衰弱、心神恍惚、睡眠不安寧等症狀。注意感冒咳嗽、脾胃虛寒容易腹瀉者不宜進食。
雪耳 — 性平,具滋陰潤肺、益氣養胃、強心補腦功效,適合肺熱津傷或肺氣虛弱、燥咳無痰、痰中帶血、氣喘氣短、咽喉乾燥、聲音嘶啞、病後體虛人士食用。
白扁豆 — 性平,具健脾益氣、消暑化濕功效,因脾虛有濕而食少腹瀉人士尤其適合,亦適合氣虛及痰濕體質人士服用。惟注意容易便秘人士不宜多服。

White ingredients nourish the lungs and strengthen the qi
Many women want to have a fair complexion, but having an anemic-looking face is not necessarily a good sign. From the perspective of Chinese Medicine, an individual with a pale face normally experiences asthenia or chills.
A pale face could mean that the qi in the lungs is weak, and the internal organ is incapable of protecting the body from pathogenic factors. Hence, such individuals might catch a cold and develop nasal or even respiratory allergies more easily, especially during the flu season.
To strengthen the lung, one should consume white-colored ingredients such as Chinese yam, lily bulb, snow fungus, hyacinth bean. This is in accordance with a theory of Chinese Medicine—white ingredients are good for the lungs, as they can moisten and nourish the respiratory organ. Consuming these ingredients during fall and winter would be especially beneficial for the lungs.
Chinese yam - mild in nature. Can strengthen the spleen and stomach, nourish the lungs, and induce salivation. Besides, its smooth and thick fluid contains protein that can reduce blood sugar levels.
Lily bulbs - mild in nature. Can replenish vital energy and qi, moisture the lungs to relieve coughing. Relieves qi deficiency related coughing and respiratory allergies, mental weakness, absent-mindedness, and poor sleep. Not suitable for those with cough and flu, asthenic cold spleen and stomach, and those prone to diarrhea.
Snow fungus - mild in nature, can nourish yin and moisten the lungs, nourish qi and stomach, strengthen the heart and mind. It is suitable for those with hot lungs or asthenic lung qi, dry cough without phlegm, phlegm with blood stain, shortness of breath, dry and sore throat, coarse voice, and weakness post illness.
Hyacinth bean - mild in nature, strengthens the spleen and replenishes qi, suitable for those with diarrhea after eating a little due to asthenic weak spleen with dampness. It is also suitable for those with qi deficiency and phlegm and dampness body type. Note that those are prone to diarrhea should eat less.

很多人認為面色紅潤代表氣血好,不過從中醫角度來看,面色偏紅可能與熱證有關,如果身體出現手心潮熱、多汗、口渴、小便短黃、大便乾結等症狀,就代表身體有熱,熱可來自虛火或實火,長期熬夜、產後、更年期人士易有虛火,症狀為兩顴潮紅,因為體內陰氣不足,需要滋陰,宜適量進食有滋陰功效的食物例如雪耳、百合、雪梨、石斛、麥冬、蜂蜜等改善症狀。
實火是指陽氣超出正常水平,過量進補、多吃燒烤、火鍋、煎炸、辛辣食物都容易導致熱氣,症狀為滿面通紅、口乾、口臭、生暗瘡、小便黃等,需要清熱,除了適量飲用涼茶,亦可適量進食有清熱功效的食材例如冬瓜、青瓜、西瓜、火龍果、奇異果等。

What do flushed cheeks mean?
Many people think having flushed cheeks means they have a good blood and qi circulation, but from the perspective of Chinese Medicine, it can also be a heat-related symptom. If a person has warm and sweaty palms, hard and dry stools, sweats profusely, feels thirty regularly, and experiences a decreased output of urine that is yellowish, this means heat has already accumulated in the person’s body.
There are two categories of heat: asthenic heat and excessive heat. People who sleep late, women who have just given birth, and those with menopause tend to have asthenic heat, and having flushed cheeks is one of the symptoms. This is due to the lack of the yin energy. Hence, individuals with this condition need to nourish the yin and consume ingredients such as snow fungus, lily bulb, snow pear, dendrobium, radix ophiopogonis, and honey.
On the other hand, excessive heat refers to the accumulation of the yang energy. Heat would accumulate in a person’s body when he or she consumes grilled, fried, and spicy foods excessively. Likewise, symptoms may be flushed cheeks, dry mouth, bad breath, acnes, and urine in yellow color. To eliminate heat from the body, consume an appropriate amount of herbal tea and ingredients such as winter gourd, cucumber, watermelon, dragon fruit, and kiwi.

雪耳:滋陰潤肺、益氣養胃
百合:清心除煩、潤肺止咳
雪耳百合素菜煲
材料:雪耳1朵、鮮百合1個、冬菇4隻、紅蘿蔔1/2根、粟米仔4條、鮮枝竹2條、薑3片、蒜2瓣
調味料:素蠔油1湯匙、生抽1茶匙、糖1茶匙、麻油1茶匙、粟粉1-2茶匙
做法:
1. 所有材料洗淨,雪耳泡水至軟身瀝乾,把底部剪掉後切件;新鮮百合剝開;冬菇泡水至軟身,去蒂後切半,浸冬菇水留起;紅蘿蔔去皮切片;粟米仔切段;蒜切片備用。
2. 鑊中燒熱少許油,加入薑片、蒜片爆香,加入餘下材料炒勻,加入浸冬菇水,再加入適量清水以武火煮滾,加入素蠔油、生抽及糖,用小火炆煮約10分鐘至食材軟腍。
3. 加入麻油炒勻,粟粉加入適量水份成粟粉芡,加入鍋中煮至醬汁稍為濃稠即成。

Snow fungus: Nourishes yin and moistens lungs, nourishes qi and stomach
Lily bulb: clears the heart and relieves irritability, moistens the lungs to relieve coughing
Stewed vegetables with snow fungus and lily bulb
Ingredients: 1 snow fungus, 1 fresh lily bulb, 4 Shitake mushrooms, 1/2 carrot, 4 baby corns, 2 fresh bean curd sticks, 3 slices of ginger, 2 cloves of garlic
Seasoning: 1 tablespoon vegetarian oyster sauce, 1 teaspoon light soy sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, 1-2 teaspoons cornstarch
Preparation:
1. Rinse all the ingredients, soak the snow fungus in water until softened and drain, cut off the bottom and cut into pieces; peel off the fresh lily; soak the Shitake mushrooms in water until softened, remove the stalks and cut in half, reserve the soaked water; slice the peeled carrot into pieces; cut the baby corns into sections; slice garlic for later use.
2. Add some oil into a heating wok, add ginger slices and garlic slices and saute, add the remaining ingredients and stir well, add the soaked mushroom water, then add an appropriate amount of water to bring to a boil, add the vegetarian oyster sauce, light soy sauce and sugar, simmer for about 10 minutes until the ingredients soften.
3. Add sesame oil and stir well. Add the appropriate amount of water to the cornstarch to make a slurry. Add the slurry to the pot and cook until the sauce is slightly thick. Ready to serve.

This Nyonya Chap Chye is a classic from the Peranakan cuisine. Peranakan food is touted to be a blend of South East Asian culinary cultures - often hitting the spice, sweet and tang notes deliciously.
Chap Chye loosely translates to mixed vegetables, which is very accurate in this case. Fresh vegetables tossed with crispy beancurd strips and broth-soaked tang hoon (glass noodles) is a flavour explosion in your mouth you won't want to miss!

材料:
紅豆250克
白蓮子1兩
百合1兩
冰糖適量
處理:
1. 紅豆,清水浸2小時。
2. 蓮子及百合,清水浸2小時。
3. 紅豆已浸了2小時,煲滾水出一出水,同時放蓮子百合。
4. 倒去水分,擎乾水。
5. 用碗量水放入煲,一個人一碗百合露。
6. 加入冰糖。
7. 水滾,冰糖已溶解,放紅豆、蓮子及百合落煲。
8. 煲滾後,收慢火,煲10分鐘。
9. 煲了10分鐘,熄火,焗20分鐘。
10. 過了20分鐘,再滾起糖水,熄火,完成。
Lilly sweet soup with lotus seeds and red bean:
Ingredients:
Red bean 250g
White lotus seeds 1 tael
Lilly 1 tael
Rock sugar appropriate amount
Preparation:
1. Soak red bean with tap water for 2 hours.
2. Soak lotus seeds and lilly with tap water for 2 hours.
3. Red bean has been soaked for 2 hours, boil up a pot of water, soak for 1 minute, put lotus seeds and lilly at the same time.
4. Pour away water. Hang dry.
5. One bowl for one person. One dessert for one person. Put correct amount of water in pot.
6. Put rock sugar.
7. Water has been boiled up. Rock sugar has been melted. Put red bean, lotus seed and Lilly into pot.
8. Turn to low flame after boils up. Boil 10 minutes more.
9. Have already boiled for 10 minutes. Turn off fire, leave it for 20 minutes.
10. Boil up sweet soup again after 20 minutes. Turn off fire. Serve.
