正是夏天,芒果滿街都是,逛一趟市場都能聞到飄散在街道上的芒果香氣🥭
不知要做什麼還是不自覺買了兩斤回來,後來想到芒果🥭,想到米飯🍚,接著又想到椰奶 🥥
於是,做一個 #芒果椰奶米布丁 的念頭就出來了
嘗試了幾次之後找到了黃金的配方
煮熟米飯1公斤
鮮奶 800公克
奶油 100公克
二砂糖 150公克
好的鹽巴 10公克
香草精 5公克
煮滾之後慢慢收乾,狀態跟很稀的燉飯差不多,煮好之後攤平倒在平盤上封上保鮮膜進冰箱冷卻約一小時(記得要平!)
接著切芒果丁,跟萊姆皮萊姆汁與少許五香粉混合
再來把一整罐 #小磨坊 的椰奶與削下來的芒果皮煮滾後,過濾取出的椰奶進冰箱冷卻
最後把冷卻好的米布丁與椰奶混合,接著加入100公克打發的鮮奶油即可與切丁的芒果一起擺盤🤙🏿🤙🏿🤙🏿

Back here in Taiwan 🇹🇼 the quality of mango is amazingly nice, the fragrance of it is very unique from other fruits. And the sweet and sour taste of it is balanced and the texture is soft and it just melts in your mouth.
Anyway it really is sth that we Taiwanese expect on a hot summer day, we put it on shaved ice with condensed milk, make fruit tea out of it, layered cake with it and loads of cream.
Now I’m running a Onigiri 🍙 shop in Taipei and I was wondering wht kinda dessert can I make with rice. And the idea of this coconut milk rice pudding with mango popped right in to my mind.
I diced up the mango and mix it with lime zest & juice, and the secret is to put a sprinkle of 5 spice to give it that nice aroma. Rice is from the east part of Taiwan, short grain and stored in fridge for over an year. The. Simply boil with sugar/salt/vanilla/butter and cook just like risotto but a bit runny.
Then out in a tray and cooled to core temp at around 8-10 (easier to combine with whipped cream and coconut milk).
The skin and pit of mango I don’t waste, I boil with coconut milk to extract the mango flavor and then just combine cooled rice and mango together.
Simple but full of details, defoly worth a try 🤙🏿🤙🏿🤙🏿

For Sahur the best food to eat are the ones that can provide sustainable energy.
a combination of slow and fast acting carb with slow acting protein will be awesome. Eg. Mango n milk juice with oats.

Milk - great source of protein. contain casein which is a type of slow digesting protein. really good to prevent muscle loss in absence of food (while fasting)
Mango - very high fructose content. Fructose, unlike other types of sugar.. takes more time to be digested. so ur body will get slow release of energy
Oats - complex carbs and fibre. fibre is awesome to make u feel full longer n helps with ur digestive track health. the complex carbs in it will also help with giving steady energy
this is also why the traditional Sahur meal of milk n dates work like a charm. Milk - protein/casein
dates - high fructose

Also don't forget to work out this Ramadan. Best time wld be after a light meal of juice during iftar after Marghrib prayer.
after workout immediately follow with recovery protein shake with some carbs in it.. then moving on to ur Ishak prayer n Tarawih..

This Thai Style Mango Crispy Chicken is not exactly what you'll find in Thailand but we can assure you that it's really yummy. Remember to make the sauce and the salad really cold before spreading them over the air fried crispy chicken then serve. This crispy chicken recipe is really yummy and very easy to prepare. If you do not have an airfryer, you can also deep-fry the chicken as usual over the stove. You can also try baking the chicken in an oven. You can use the same temperature but adjust the baking time accordingly. If you're using an oven, remember to preheat the oven for at least 20 mins before baking.

Air Fried Thai Style Mango Crispy Chicken
ingredients
Serve 2 - 3 pax
————
Marinated chicken - marinate for at least 30 minutes
————
1 boneless chicken thigh (~220g)
1 teaspoon salt
A few dashes of white pepper
1 tablespoon ginger juice
1/2 egg white
1 tablespoon cornflour
Before you airfry the chicken, coat it generously with some cornflour.
Rest it for 10 minutes first then brush or spray some oil on the chicken before you air fry it.
Air fry the chicken at 180C (356F) for 20 minutes first. Then flip the chicken to the other side and air fry for another 20 minutes at 200C (392F).
Once the chicken is done, rest it for a while before cutting it up. This will help to lock the juice of the chicken.
Sauce

80g mango (puree)
1.5 tablespoons tomato ketchup
1 tablespoon sweet chilli sauce
1/4 salt
1 tablespoon vinegar or apple cider
1 red chilli (deseeded and julienned)
1/4 Japanese cucumber (deseeded and julienned) You can also use regular cucumber.
1/2 green or ripe mango (julienned)

Virgin Mojito Of 3 Types Recipes
✎ Ingredients
☞ For the Virgin Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes, 35g, cut into wedges
brown sugar 20g
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
☞ For the Mango Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes juice, 10g
brown sugar 10g
mango puree 50g
fresh mango, QS (optional)
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
☞ For the Pineapple Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes juice, 10g
brown sugar 10g
fresh pineapple 50g
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
Instructions
☞ For the Virgin Mojito
1. Put 20g of brown sugar, 50g of lime wedges in a tall cocktail glass.
2. Slapping mint leaves between hands, and rub the mint leaves around the rim of the glass and drop them in, then gentle mashed with a muddler, to release the mint oils and lime juice. The mint leaves should not be shredded.
3. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
4. Garnish with lime or mint, serve and enjoy.
☞ For the Mango mojito
1. Put mango cubes in a food processor or blender until smooth.
2. Add 1 tbsp or 10g of brown sugar, 10g of lime juice, and mint leaves in a tall cocktail glass, then gentle mashed with a muddler, to release the mint oils and lime juice.
3. Pour 50g of mango puree and several mango cubes.
4. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
5. Garnish with mango, and serve.
☞ For the Pineapple Mojito
1. Rimming a glass. Wet the rim with a piece of pineapple. Put salt on plate, then dip the rim in salt.
2. Add 1 tbsp or 10g of brown sugar, 10g of lime juice, mint leaves and 50g of pineapple slices in a tall cocktail glass, then gentle muddle the pineapple and mint leaves.
3. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
4. Garnish with pineapple, and serve.

Pavlova is a dessert popular in New Zealand and Australia, it was named after the Russian ballerina, Anna Pavlova, on one of her tours to Australia and New Zealand in the 1920s. It’s a meringue-based dessert with a crisp crust and chewy, soft inside, usually topped with whipped cream and seasonal fruit, it tastes light and delicious, always a good idea for summer time.

Mango Kiwi Pavlova Recipe
☞ Yield: serves 4
✎ Ingredients
☞ For the meringue
egg whites 2, (68-69g), room temperature
granulated sugar 110g
cornstarch 3g
fresh lemon juice 2g
vanilla extract 2g
☞ For the cream and fruits
whipping cream 200ml, very cold
mascarpone cheese 50g
mango cubes
kiwi cubes
✎Instructions
☞ For the meringue
1. Preheat oven to 170°C
2. Separate egg yolks from egg whites, transfer the white into a larger bowl.
3. Add lemon juice, use a hand mixer to beat the egg whites on medium speed for 1 minute. Then gradually add 3 batches of sugar and beat 30 second each time, until all the sugar has been added.
4. Beat on medium high speed for 5 minutes, then rub a little meringue between fingers, if you feel any sugar granules, then keep beating until sugar dissolves.
5. Add vanilla extract and corn starch, and beat until stiff peak.
6. Spread the meringue into a circle about 13~15cm, you create a crater by making the siders a little higher than the middle, you can shape the pavlova as you like, even use fork or spatula to create vertical furrows on the side.
7. Once the pavlova is shaped, immediately place it in the oven, and reduce the oven heat to 110°C, bake for 65 minutes. Do Not OPEN THE OVEN while baking.
8. Once baked, allow the pavlova stay in the oven as it completely cool and dry.
☞ For the topping
1. Place the chilled whipping cream and mascarpone in a large bowl, whisk on medium speed, mix until you have stiff peaks, but the cream is still smooth, don't over beating.
2. In a medium bowl, add mango cubes and kiwi cubes into it, mix well.
☞ For assemble
Spread the mascarpone cream on top of the pavlova, and top it with the prepared fruits. Serve immediately.
